How To Make French Onion Soup

There are five steps to making this soup. Heres a brief rundown.

  • Caramelize the onions: youll cook the onions in butter low and slow, stirring occasionally for a good 40-45 minutes, adding in salt and a little bit of sugar
  • Deglaze the pot: pour in the red wine to deglaze the pot, scraping up any brown bits.
  • Simmer with the other ingredients: stir in the stock, Worcestershire, and seasonings. Gently simmer for about 20 minutes, stirring occasionally. Discard the herbs, stir in the vinegar, taste and adjust any flavors, if necessary.
  • Toast the bread: while the soup is simmering, prep the bread. Traditionally, the bread is basted with olive oil and toasted in the oven until golden.
  • Ladle soup into bowls and broil: place oven-safe bowls or crocks on a sturdy baking sheet. Ladle soup into each bowl, top with the toasted bread and cheese, then place under the broiler for a couple minutes until the cheese is melted, bubbly, and golden.
  • As the cheese softens, it will fall over the sides of the bowls and form a luscious crusty seal. To die!

Choosing Onions For French Onion Soup

Classic French Onion Soup (with sweet caramelized onions)

    Serious Eats / Daniel Gritzer

One of the first things I wanted to figure out was whether the choice of onion itself mattered much for French onion soup. To find out, I caramelized four different varieties to a rich golden brown: sweet onions , red onions, yellow onions, and shallots.*

*Okay, technically not an onion, but a close enough relative to make it worth trying out.

Here are my tasting notes on the caramelized onions:

    • Sweet onion: mellow and sweet, with a brightness right at the end.
    • Red onion: deeper flavor, with a slightly bitter edge and less sweetness.
    • Yellow onion: lots of bright flavor, very mild bitterness, and a sweetness backing it up.
    • Shallot: really good balance of sweetness, with both bright flavors and deep, rich ones, and just a hint of bitterness.

It’s possible that different samples of each of these onion types might have produced different results, but what’s key is that the variation exists in the first place: Some onions will be more bitter, some more sweet, some brighter, some deeper and more complex. Much like with my fresh tomato sauce recipe, mixing them together produced the most well-rounded and complex flavor of all.

    Serious Eats / Daniel Gritzer

** Red onions take on a bit of a dull gray color compared with the other types when browned, but this doesn’t bother me much once they’re simmered in the broth.

If not, inexpensive yellow onions are probably your best bet.

    Ingredients For French Onion Soup

This recipe calls for simple ingredients found at any grocery store.

    • Yellow Onions. Sweet, yellow onions are best for caramelizing as they take on a sweet, mellow flavor after being cooked down. Do not use white or red onions for this recipe.
    • Salt: Do not skip the salt! The salt brings out the sweetness of the onions as they cook.
    • Sugar: This is added at the beginning of the dish to offset the bitterness of the onions. It can be left out but the flavor may be impacted.
    • Wine and Brandy: These two give this soup tremendous flavor and mouthfeel. The wine creates a rich broth while the brandy packs a punch after every taste.
    • French Bread: A crusty French baguette is essential to sop up the delicious broth! Serve in the soup as well as on the side.

There are five basic steps for making an amazing batch of French onion soup:

  • Caramelize the onions. Plan on about 30-45 minutes for deep caramelization. After caramelizing the onions, the recipe moves quicker. Be careful not to over cook the onions which will result in a bitter taste. Feel free to occasionally taste-test during the cooking process.
  • Deglaze the pot with red wine. Red wine is an excellent tool for deglazing the pan. You may omit this ingredient if you are opposed, but please note that the flavor will not be as deep.
  • Simmer with the stock and seasonings to meld the flavors together.
  • Toast the bread to be used as giant croutons in the soup bowls.
  • Serve the soup and broil. The finishing touch of toasted bread and broiled cheese is really what takes the presentation over the top. Ladle soup servings into individual ramekins or oven-safe bowls, add the cheese, then broil for 3-5 minutes or until desired browning is reached. Keep a close eye on the oven!

    Slow Cooker Caramelized Onions

    Yes. You. Can!!!

I first learned of this from a reader then found this recipe on TheKitchn. Terrifically convenient and totally hands off, just throw the onions in, drizzle with butter or oil then leave on low for 10 hours.

This will get you 75% of the way there. The onions are browned a bit but lack the same intensity of flavour you get from caramelising on the stove.

So you do still need to cook the onions on the stove for 10 15 minutes to achieve the same true flavour. And while one may wonder whats the point, theres a big difference between cooking down onions for almost an hour on the stove vs 10 minutes.

Plus, no having to man-handle a gigantic mound of onions in a pot thats too small .

How To Make The Best French Onion Soup

There are two essential components of a good French onion soup.

The first is the stock. Your soup will only be as good as the stock you are using. This soup traditionally is made with beef stock, though sometimes a good beef stock can be hard to come by and expensive to make.

If you use boxed stock, taste it first! If you don’t like the taste, don’t use it.

    Simply Recipes / Elise Bauer

The second most important element is to properly caramelize the onions. Caramelizing the amount of onions needed in this recipe will take at least 40 minutes. Caramelizing is a chemical process that occurs when the sugars in the onions reach a certain temperature.

This only happens after a long cooking time . The more caramelized, the deeper the color of the onions and the more flavor you’ll get from them.

Can You Freeze French Onion Soup

Yes you can freeze French Onion Soup, yet without the cheese and croutons in it. Simply add the soup to freezer safe containers or freezer size bags, and freeze for up to 3 months.

To Reheat: Allow to thaw fully and then reheat in the oven with cheese and croutons.

To Store: Store your leftovers in an airtight container and refrigerate for up to 5 days. Enjoy the next day!

In short, this real simple onion soup recipe is the perfect saltiness and spice. Gooey cheese and a fantastic taste. Every spoonful leaves you wanting more!

My kids, who wouldnt go near an onion if you paid them , ate about half a bowl each. Colour me impressed!

Plus, its a really easy recipe since theres limited ingredients to chop etc. The first time I made this, was certainly not my last.

This is my go-to soup when I need a bowl, no matter the time of year.

The only problem was waiting for the onion mixture to simmer, the house smelled incredible and I almost didnt wait the full 30 minutes!

Yet, for a good tasting soup, you must its a simple french onion soup, but as with any cooking, the wait is small but intense.

Totally worth it though, its my favourite soup and Im sure itll be yours as well.

    The Original Onion Soup

One google search later and you will find at least one hundred recipes claiming to be the original or most authentic. Onion soup, at its very essence, is nothing more than onions and water boiled together. Period, done, finished, everything added from that point on is pure opinion.

Caramelizing the onions brings out sugars, and makes a more luxurious silky and sweet soup, adding flour gently thickens and provides the body. Some will argue about whether adding water or stock is more authentic, I say who cares, add chicken or beef stock if you are so inclined, or be like your ancestors and simply use water.

Some people add white wine, red wine or even sherry wine which adds a bit more complexity to the final flavor. I have seen multiple recipes advising milk and dairy products. The late, great chef Escoffier advised using small amounts of bechamel mixed with pureed onions to spread on the toasts before sprinkling them with grated cheese.

And her soul at peace. She cradles a whole world of bohemianism, of merrymaking, of fatigue and encroaching soberness in her sturdy matrons arms. She consoles, in those small hours, our sickness of heart and disillusions. Robert Courtine

Onion soup exudes my free spirit approach to perfect cooking deeply rooted in the classics but without the constraints of rules and boundaries. Allow the moment to embrace you, let passion dictate your next moves, what is already in your cupboard will more than likely decide the final outcome.
