I used to love the idea of french onion soup but all those onions sent a chill up my spine. The broth is just so flavorful and delicious, the toasted baguette on top is justwell, its bread. Im DOWN for bread. Top anything with cheese and Ill try my best to love it. But onions? It took me a long time to really appreciate the texture of cooked onions.

Canned coconut milk is my favorite way to make dairy free recipes creamy. Its thick and if youre not using too much you wont get a strong coconut flavor. There really is no coconut taste in this soup.

    Progresso makes a variety of canned soups that the company says are gluten free, and you can view the most up-to-date list of gluten-free selections on the companys website.

    Please note that according to the Progresso website, many of its soups are certified gluten free and the brand says it is a proud partner of the Celiac Disease Foundation.

    However, I have read many Progresso soup can labels and have not found one certified gluten free claim or mark. I reached out to Progresso for comment and will update this article when/if I hear back from the company.

    I’ve been thinking about developing this recipe ever since.

    I love using this gluten free condensed cream of chicken souprecipe in my gluten free tater tot casserole and gluten free green bean casserole.

    You can make any flavor that you want by sautéing chopped mushrooms, celery, or cooked chicken in the butter before adding the rice flour.

    French Onion Soup Recipe Notes

    • Caramelizing onions is a chemical thing. It happens when the natural sugar in the onions reaches a certain temperature. This takes a while, which is why you need to be patient and stir occasionally, not constantly, or they wont brown. While the sugar in the beginning is optional , the salt is a must. Dont skip it.
    • You can make this vegetarian by replacing the beef and chicken stock with vegetable stock and use vegan Worcestershire.
    • The red wine not only deglazes the pan, but it cooks off and deepens the flavor of this soup. Having said that, if you are completely opposed to using it, you can skip it, but note that the soup will not be as tasty.
    • If you dont have oven-safe bowls , you can skip the broiling part, make cheese toasts on a baking sheet and top the soup with those, or even use croutons.

    How To Make Dairy Free Cream Of Mushroom Soup

    The secret to making a dairy free cream of mushroom soup is using coconut cream instead of heavy cream. And to make it gluten-free, wheat flour is replace with either arrowroot powder or glucomannan as the thickener.

    To start, melt the butter flavored coconut oil in a large saucepan or skillet. The mushrooms and onions are added next and sautéed for 5-7 minutes, until onions are translucent.

    Garlic is then added and cooked for another minute or two. The chicken broth is stirred in next and then the mixture is brought to a boil.

    Once boiling, the arrowroot powder is whisked in. Then the soup is allowed to simmer until the liquid is reduced by about half.

    When reduced, about of the mixture is processed in a blender until smooth. That mixture is then placed back into the pot, continually whisking in coconut cream until smooth.

    Finally, the gluten free cream of mushroom soup is brought back to temperature and served or used in a recipe as needed.
