How To Cut Bok Choy For Cooking

Bok Choy and Chicken Soup

Halves or quarters:

  • If using baby bok choy, slice it in half lengthwise.
  • If using regular/medium size bok choy, slice it in half lengthwise then quarter it.

Cut into leaves:

  • Trim off the root end, the stalks will separate from the leaves. Use your hands to peel the layer and make further cuts if needed to separate bok choy into leaves. Youll have several individual layers of bok choy that are shaped like spoons

Diced or strips

  • Trim off the root end, then separate the bok choy into leaves.
  • For strips, stack a few leaves into a small pile and cut crosswise to separate the leaves from the stalks. Then, further chop them into small strips and thin shreds.
  • To dice into small chunks, slice the leaves lengthwise then dice them crosswise for diced leaves and stalks.

To wash and clean the bok choy

  • Wash and clean the bok choy by plunging it into a bowl of water several times until theres no dirt left in the bowl. If the bok choy stalks and leaves are intact, gently separate the stalks between the layers to rinse out the dirt. Drain and pat dry before cooking.

Best Ways To Cook Bok Choy

While there are many recipes with bok choy, my favorite ways are to stir-fry or saute it. Use a large skillet with a wide open surface and get your pan hot before adding the vegetable. If you arent sure how to properly preheat a skillet, read my how to stir-fry in stainless steel pan.

If halve or quarter the bok choy, place it cut side down in the pan to sear for 2 to 3 minutes before stirring. I have a perfect recipe to show you how to cook bok choy in stir-fry.

For diced and chopped bok choy, saute the stalks first for about 2 minutes before adding the leaves. Season with coarse salt, a drizzle of toasted sesame oil, and a splash of soy sauce are all you need for a perfectly cooked bok choy.

How To Wash Bok Choy

The dirt tends to hide between the stalks so its important that we get cleaning and chopping bok choy right! How to wash bok choy depends on the sizes and cuts. In general, you should cut the bok choy first then wash and clean.

  • Halved and quartered bok choy, plunge them into a big bowl of water, and gently separate the stalks between the layers to rinse out the dirt.
  • Chopped and diced bok choy, rinse in a bowl of water a few times until you dont see any dirt left in the bottom of the bowl.

    What If I Don’t Have Leftover Chicken

    That’s one of the best parts of this recipe is that it’s easy to adapt to what you have available. If you don’t have leftover chicken, you can easy grab a rotisserie chicken and shred it or cook a chicken breast yourself and shred it up. I love to make this after Thanksgiving as well, with the leftover turkey shredded up.

    Storing Asian Chicken Soup

    CHICKEN AND BOK CHOY NOODLE SOUP

    For storing: This soup keeps for up to 4 days in an airtight container in the refrigerator.

    Freezing this soup: This soup freezes very well! I do not recommend freezing or refrigerating it with the noodles as they will get mushy. Freeze in airtight containers and store for up to 3 months. When youre ready to eat, defrost the night before in the refrigerator. You can also heat in the microwave or on the stove directly from frozen.

    What You Need To Make Asian Chicken Soup:

    Youll need a few pantry/fridge staples to make Asian Chicken Soup. You probably already have them on hand!

    Youll need:

    I often crave soup but dont always have hours to spend over the stove. I love that this healthy chicken soup can be made in the crockpot or instant pot to save time and energy!

    I also included stove top instructions for you in the recipe so you can make it on the stove if youd like!

    My favorite way to make it is in my instant pot. It is completely finished in under 30 minutes, and I think it really locks in all the flavor due to the pressure cooking!

    Asian Chicken Noodle Soup

    Combine fresh Asian greens with and noodles to create this winter warming soup.

    • 450g fresh thin hokkien noodles
    • 1 tbsp peanut oil
    • 3cm piece ginger, peeled, finely chopped
    • 2 garlic cloves, crushed
    • 2 small red chillies, deseeded, finely chopped
    • 6 cups Massel chicken style liquid stock
    • 500g fillets, trimmed
    • 2 tbsp light soy sauce
    • 1 tsp sesame oil
    • 4 green onions, thinly sliced diagonally
    • 1 bunch baby bok choy, chopped
    • Green onions, finely shredded, to serve
    • Select all ingredients
    • Step 2 Heat peanut oil in a large saucepan over medium-high heat. Add ginger , garlic and 1 small chilli. Cook for 30 seconds. Add 2 cups stock. Cover. Bring to the boil. Reduce heat to medium-low. Add chicken . Cook for 5 minutes or until just cooked through. Transfer chicken to a chopping board. Slice crossways into strips.
    • Step 3 Add remaining 4 cups stock, soy sauce , sesame oil and sugar to soup. Cover. Increase heat to medium-high and bring to the boil. Add green onion and bok choy . Cook for 1 minute or until leaves just wilt.

    Can You Freeze Bok Choy Soup

    Yes, it freezes well. Up to 3 months max though, you do not want a freezer burnt soup.

    I have plenty of soup of other soups on this site that would help anyone to feel better. One of which is my Vegetable Egg drop soup.It is absolutely delicious and healthy for you as well.

    Note: You can add egg noodles during the last 7 minutes of cooking if desired. And more chicken stock if your wanting more broth to the soup. Add more garlic and onion for more of an antibacterial boost.

  • Can I freeze this soup? Yes and no. Yes, you may absolutely freeze the broth. However, I do not recommend freezing this soup with the vegetables or the noodles. Fortunately, the vegetables and noodles in this bok choy soup take only minutes to heat together.
  • Do I pre-cook the noodles? No no no no nooooo. Rice noodles cook super fast. Add the noodles to the broth just a few minutes before you are ready to eat.
  • Does this bok choy soup taste good leftover? Similar to freezing, this soup can be eaten leftover but tastes best fresh- unless, of course, you make a big batch of broth and keep the vegetables and noodles separate.
  • Storing & Freezing Tips

    • In the fridge. This healthy Asian chicken soup can be stored in an airtight container in the refrigerator for about 3-4 days. Simply reheat in the microwave or on the stovetop.

    I will prepare this on the stove top in a large batch and eat it all day long.

    You can make this soup with chicken breasts, or you can also pick up a Rotisserie chicken and shred the chicken off the bird and boil the carcass to get the benefits from a bone broth soup.

    For this soup, I just used the breasts however both methods are good to fight off a cold.

    Keep in mind if you are using a whole bird, you wont need any extra chicken stock since you will be making a bone broth from the bird.

    If you are using chicken breasts then you will definitely want to use chicken stock. I believe this soup can prevent colds and the flu and heal the body, because every time I prepare this soup I feel so much better the next day.

    Now, I do not know about you but whenever I travel I tend to catch a cold!

    How To Choose Bok Choy

    Choose bok choy with bright green leaves that arent wilted. The stalks should be crisp and firm with no bruising spots. The stalks could come in milk-white color or pale green, depending on the types of bok choy.

    I prefer to store them in the refrigerators crisp drawer. Place a piece of dry paper towel in the bag and loosely closed it, leaving a small open gap to allow the vegetable to breathe. It should be good for up to 4 to 5 days.

    How Do I Make Sous Vide Chicken

    If you are feeling extra fancy and really want to go all out, then using the sous vide method to cook the chicken is next level culinary genius. It sounds like it is incredible complicated but realistically, it’s just cooking the chicken in a bag inside of a pot of water. This method is great for when you’re not quite sure when you want to eat because it will cook the chicken up to the temperature that you set, without overcooking it!

  • Start by filling a large pot with water and attaching the sous vide circulator. Put the temperature to 145 degrees and set the cooking time for 2 hours.
  • As soon as the water heats up, prep the chicken breasts by adding on the oil and salt and pepper.
  • Once done, put the chicken breasts into a plastic bag and remove as much air as possible to seal.
  • As soon as the water reaches the temperature, put in the sealed bag. Adjust the sous vide timer to 2 hours.
  • After the 2 hours have passed for the chicken, remove them from the water and get rid of any liquid in the plastic bag. Put the chicken onto a plate and pat dry with clean paper napkins.
  • Once the chicken cools, shred or chop it up.
  • It’s as simple as that!

    How To Make Healthy Asian Soup:

    You can make this soup in the instant pot or crockpot. Here is how to make it in on the stovetop, although making it in the instant pot or in the crockpot is very similar!

  • Heat olive oil in a pot. Pan sear chicken thighs and remove from pan and set aside on a plate.
  • Add onion, garlic, carrots and ginger to the pot. Sauté until fragrant and onions are translucent, about 5 minutes.
  • While veggies cook chop chicken thighs into small pieces and add the cooked chopped chicken back to the pot.
  • Add chicken broth, rice wine vinegar, coconut aminos and red pepper flakes. Stir and bring to a boil. Once boiling, reduce heat and simmer for 20 minutes.
  • In a separate pot cook your noodles per package directions
  • When ready to eat, stir in chopped bok choy to the soup pot. Allow it to wilt for 2-3 minutes in the soup.
  • Add noodles to your bowl, cover with soup + enjoy!
