How To Make Dehydrated Minestrone
There is no set rule about what goes into a minestrone soup, but for this recipe, we included some of the more classic vegetables: zucchini, carrots, onions, celery, and diced tomatoes. For the carrots, the thinner you slice them, the faster they will de/rehydrate. For the tomatoes, we recommend rubbing a light coat of neutral oil on the tray to prevent their juices from sticking. In addition to the vegetables, we included white beans for protein and texture. The smaller the bean, the better.
Run the dehydrator for 8-12 hours until everything is dry. We simply let it go overnight as these ingredients cant be over dehydrated.
When the vegetables and beans are done, divide in half and place them into separate resealable containers. Each container will be one serving. From there, add in the elbow pasta, spices, and vegetable bouillon cube. We added in a tablespoon red pepper flakes which we felt was perfect for us, but if youre sensitive to spice reduce down to a pinch or leave out entirely.
At the campsite, boil the mix in 2 cups of water and then simmer for roughly 8-10 minutes. If you want your minestrone a little soupier you can use more water. Or if you want it thicker you can simmer it down a little longer.

Storing The Batches Of Dehydrated Soup Mix
When you have the ingredients gathered and are ready to assemble them, consider vacuum sealing the batch ingredients in bags. This way you can combine any separately-bagged items with the original batch and place them all in another bag, preferably vacuum sealed too, assuring that everything is there together. I like to store these bags in the freezer to extend the shelf life of the dried foods even further.
How To Prepare Dehydrated Soup Mixes
Recipes for your homemade soups can be pre-made with dried veggies and dried meats and stored in your pantry so that you can rehydrate and prepare the soup later. Remember that dried foods are much more compact than the rehydrated ones, so measure carefully!
Any dried vegetable that normally goes into soup is great in reconstituted soup. I especially love dehydrated carrots, zucchini and other squashes, okra, and onions, to name just a few possible ingredients and dont forget to add a few dried beans . I have no experience with drying potatoes but would love to learn if you know anything about dehydrating and using them. Tomatoes? They dry great and I especially love ground up tomato powder in homemade soups. In fact, I used to keep a jar of it by the stove to add dried powdered tomatoes to many dishes while they cooked.
Dont forget that you can also add dried noodles to the mix!
If you have any dried meat, biltong or jerky, dont store it in the same package as your veggies. Keep it separate, and attach it to the prepared vegetable package so it is right there when youre ready to cook.
Try adding powdered milk for a creamy soup season it with salt, pepper, herbs, and spices, and add it right to your soup mix!
The shelf life of your soup mix will be limited by the shortest usability period of any ingredient. A good idea is to separately package any of these materials so if they go bad, you can still use the rest of the mix.

This can help your beans cook faster, but were using a slow cooker here so were not really concerned about speeding up the cooking process. In addition, in order to soak your beans, you need to plan way in advance so that the beans can soak for hours. Start with a good vegetable or chicken stock , and add diced vegetables and small-bite pasta or rice. If you have leftover chicken breast, steak, or meatballs, just pop them in to simmer.
To freeze dry soup, pour cooked soup on the freeze drying trays and process. Break the freeze dried soup into small chunks and store in an airtight container until youre ready to use. How Do You Make Ham And Bean Soup
This recipe starts with a bag of dried beans. I use a bag of bean soup mix which comes with a bunch of different varieties of beans and peas mixed together. You can also use a bag of white beans if you prefer. The beans go into the crock pot, along with some veggies, diced ham and seasonings. The soup cooks for at least 4 hours on high, or 8 hours on low. At this point, more seasonings get added to the soup, then let it simmer for another 20 minutes before eating. Add a sprinkle of parsley and enjoy!

Cooking Potato-Leek Soup
Peel and chunk potatoes, and add to a large soup pot with salt and pepper, bay leaves, and thyme. Add enough chicken or vegetable broth to cover potatoes by half an inch. Bring to a boil, and then reduce heat to a simmer. Retain the rest of the broth.Cut 6 to 8 layers from a leek and wash thoroughly. Remove tips if dried out, but otherwise use both the dark green and lighter parts of the leek. Slice lengthwise into thinner strips and then across into small pieces.Add leeks and minced garlic to a frying pan coated with 2 teaspoons of cooking oil, and cook over medium heat. While the leeks are cooking, add broth to the pan ¼ cup at a time to keep the leeks from burning. By adding broth, no additional oil is needed.When the leeks are soft after about 10 minutes, add to the soup pot with the potatoes, and simmer for an additional 10 minutes. Remove from heat, and let it cool.Remove bay leaves, and run the soup through a blender until smooth. This may take 2 to 3 loads an extra pot will be helpful to hold the soup as it comes out of the blender.If serving immediately, thin soup with half-and-half and broth to desired consistency, and reheat soup.

Thermos Cooking: Add boiled water to ingredients in thermos. Wait 20 minutes, up to several hours. Use a ½ cup extra boiled water for longer soak times soup thickens.
