It is so easy to make a bowl of good chicken soup from scratch. You don’t need many ingredients. Just add chicken, broth, carrots, onion, garlic, and celery to a pot. You can add noodles to make chicken noodle soup, or add rice. We usually make chicken and rice soup because gluten free noodles tend to get pretty mushy. You can use brown or white rice in this soup recipe.

How To Spice Up Chicken Noodle Soup

Chicken soup is a perfect canvas for different seasonings you can combine with cooked chicken. I tend to keep it simple to allow the pure flavor to shine.

Heres what I use in this soup:

  • Turmeric: I use this golden spice to add a beautiful, appetizing color to the soup, but since theres a pretty small amount you wont really taste it. You can leave it out if you dont have it.
  • Lemon: A few slices of fresh lemon juice adds some zing to the broth so good!
  • Parmesan rind: This is totally optional. Im one of those people who starts to get anxious when there isnt a hunk of Parmesan in the fridge, and I always save the rinds. They are perfect to use in soups and sauces, adding a layer of umami flavor.
  • Dill The grassy, fresh taste of dill screams homemade chicken soup like no other herb. If you dont like it, try using parsley or basil instead. A tablespoon of chopped fresh thyme leaves would be good too!

How Do You Thicken Up Soup

Personally for chicken soup, I prefer a clear broth but if you’d like it thicker, you’re welcome to adjust it to your liking. There are a few ways to thicken soup:

  • add a potato and mash it
  • remove some of the soup solids, puree them in a blender and add them back to the soup
  • add cream while the soup is simmering
  • mix some cornstarch with some liquid from the soup, make sure there are no lumps, and whisk it in

How To Make The Best Chicken And Rice Soup


To make my grandma’s chicken and rice soup, whole canned chickens are the best. But since we no longer raise and butcher chickens that we can, I have had to master another way to get the rich flavors from a canned whole chicken. The quickest and fastest way to make the chicken is in the Instant Pot. It shreds easily and is hot and ready for the soup. Leftover rotisserie chicken or baked chicken also great for this chicken soup recipe.

After the chicken has been cooked in the Instant Pot, remove it from the IP and remove it from the bone and chop into bite-sized pieces. Reserve the juices in the bottom of the Instant Pot for the soup as well. Then start sauteing the onions and celery in a Dutch oven in butter.

When the onions begin to soften, add the rice to the pot and continue to saute for another minute or two. If you are using Better Than Bouillon and water instead of broth, add it to the rice and vegetables. Stir to coat the rice and vegetables. Pour the reserved juices from the Instant Pot into the Dutch oven. Stir into the rice and add an additional 4-5 cups of water.

Continue to simmer until the rice is cooked. I like it when it starts to look like it is exploding. You by no means have to cook until this point, just until the rice is softened. Add more water to make it is soupy or stew-like as you wish.

Season with salt and pepper to your flavor preference as well. Be sure to stir on occasion to be sure rice doesn’t stick to the bottom of the pot or in the edges.

How To Make The Best Homemade Chicken Soup Recipe From Scratch Overview

Old fashioned chicken soup is quite easy to make!

You can find detailed instructions in the recipe at the bottom of the page, but first, here is a little breakdown of how it’s made:

First a homeamde stock is made my boiling the chicken in a large soup pot along with some salt. After boiling for a while, the whole chicken is removed and allowed to cool for a little bit before removing the meat and leg bones.

Next, the meat, leg bones, veggies, garlic and herbs are added to the pot with the homemade stock and cooked for a few hours. Season with more salt as necessary, remove the bones and bay leaves and serve.

I typically like to use egg noodles in my chicken soup. However, you can use any type of pasta noodle that you like. Some other popular options are:

  • Small shell pasta

If you are using a rice or grain, you will want to cook it separately before adding it to the soup. This is because they can take much longer to cook than pasta noodles.

I usually add the cooked noodles right before serving so they don’t get mushy. However, if you are looking for a shortcut, you can add noodles to the soup earlier in the cooking process. Just be sure to keep an eye on them and add more broth if needed.

If you do decide to cook your noodles right in the pot, please be mindful that the texture of the noodles may become soggier when you have your leftovers. As always I recommend cooking your noodles separately in order to avoid this!

The warm, soothing aroma of chicken broth simmering in the kitchen is a universal comfort, whether your family background links you to steamy bowls of ramen or classic matzo ball soup. And when winter arrives, along with its chilly temperatures and flu season, chicken soup is always welcome.

I dont know if its only the memories of my grandmothers chicken soup, loaded with her tender hand-cut egg noodles, but when I need some TLC, I turn to chicken noodle soup or other clear, flavourful broths made by simmering bones, savoury vegetables and aromatics to slowly extract all of their inherent goodness.

I always make my own bone broth when weve roasted a whole chicken or turkey. Theres usually a container or two in the freezer in case of emergency, from a low- energy day to a full-blown flu.

Though I rarely take the time to roll out homemade egg noodles like my grandmother did, I always seek out the best facsimile a bag of imported dried Polish or Hungarian egg noodles.

Once the chicken is almost falling apart you remove it from the water and onto a cookie sheet or large plate. Then you can remove the meat from the chicken and place it back into the pot with the chicken stock.

3. As you cook the chicken soup, you may need to keep adding water to the pot as it evaporates with the steam.

4. The most important thing to remember when making a homemade chicken soup from scratch is to put those chicken leg bones back into your stock pot as you cook the soup with the rest of the veggies and meat. Before serving remove the chicken bones.

The leg bones in the stockpot are absolutely essential in making your soup taste like a proper and amazing soup, so please don’t forget them!

5.Don’t be afraid to make adjustments to the recipe and make it your own! I find it fun to try adding different types of veggies into the stock pot as the soup simmers for the afternoon.
