Yes, this soup can be frozen for up to 3 months in a freezer safe, air tight container. Again, I would wait to add the noodles if you are going to freeze this soup as they will soak up the broth.

When ready to serve, defrost the soup out in the refrigerator, reheat on the stovetop and add in the dried noodles to cook to your preference.

  • Make it creamy Add in a cup of heavy cream or whole milk into the soup for the last 5-10 minutes of the cook time to make a creamy chicken noodle soup.
  • Add more veggies This soup is a great way to get in some of those healthy veggies. You can add in your favorite type. Stirring in fresh spinach or kale toward the end of the cook time is an easy way to add in my nutritional vegetables to this recipe.
  • Add a little bit of lemon If you love lemon, add a small amount of lemon juice right before serving to give this soup a delicious and sweet lemon flavor.
  • Use Potatoes or Rice If you dont love noodles or maybe your family cannot have gluten, this soup is delicious with diced up potatoes or cooked rice stirred into it instead of the noodles.

How To Make Homemade Chicken Noodle Soup:

Make Homemade Chicken Stock ahead of time using a rotisserie chicken, or choose a good brand of store-bought chicken stock.

Sauté veggies. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add garlic and cook for another 30 seconds.

Add chicken stock or broth. Season the broth with salt , pepper, and a tiny pinch of rosemary, sage and crushed red pepper. I may add another small spoonful of better than bullion chicken or chicken bouillon powder as well, if needed, to taste.

Add noodles and boil. Once boiling, add noodles and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them! Remove the soup pot from heat as soon as the noodles are just barely tender, as they will continue to cook off of the heat.

Add chicken. Add chicken meat from the rotisserie chicken. Taste the broth again and add more seasonings, if needed.

Serve. I love to serve this healthy soup with this easy No Knead Bread or homemade rolls!

First, you can choose to make this on the stove, in the crockpot, or in the instant pot. I love the stove or crockpot, but all three options are great!

For the stove, just cook up the vegetables and add lots of herbs. My favorite combo is thyme, sage, and rosemary. Then add a splash of sherry and lots of chicken broth.

  • Cook the Chicken: In a large soup pot, combine water, Chicken Broth, and salt. Bring to a boil then add chicken thighs and cook uncovered 20 minutes.
