Easy Three-Ingredient Tomato Soup Recipe – How to Make Homemade Tomato Soup

Step 1. Roast the tomatoes

Roasting fresh tomatoes will dramatically deepen their flavor. It will caramelize them which brings out a wonderful rich sweetness in the soup. Simply slice your tomatoes in half and place them on a baking or roasting pan/sheet with the sliced side down. Roast at 400 degrees in the oven for about 45 minutes. Use whatever tomatoes you want here. Plum, Roma, beefsteak, heirloom tomatoes, and different types of vine tomatoes are all great to use. Youll notice I didnt core the tomatoes ahead of time. No big deal. I scooped the cores out afterward. Youll also see some garlic cloves in there which make a great addition. If youre using other veggies in your basic tomato soup you can roast them with the tomatoes too.

Step 2: Saute an onion in olive oil and add tomatoes and chicken broth

Simply dice a sweet onion and saute it in a stockpot for about 5 minutes or until the onion turns translucent. Then add your tomatoes , other veggies from the roasting pan, your chicken broth, and a little tomato paste. Raise the heat to a gentle simmer and cook it all together for about 10 more minutes.

Step 3. Puree with an immersion blender until smooth

You can use a regular blender too but thats a lot more work, time, and potential for burning yourself . If you dont have one yet, Id HIGHLY recommend this basic immersion blender, especially if you make a lot of soups.

What You Need For Roasted Tomato Soup

You dont need much to make this creamy Roasted Tomato Soup just 8 simple, budget-friendly ingredients! Ripe, juicy tomatoes, red bell pepper, garlic, onion, olive oil, vegetable broth, creamy oat milk, and Italian herbs come together to create the most drool-worthy everyday soup.

Youll achieve the most desirable flavor by using local tomatoes, if possible. Tomato soup is normally made with ripe plum tomatoes like Roma or San Marzano, as they are more fleshy and have less juice and seeds in them. For an even sweeter soup, go with cherry tomatoes. I also like to add a small amount of red bell pepper to round out the flavor profile of the tomatoes

The secret to bringing out the best flavors in this soup is to roast the tomatoes and veggies beforehand this adds an extra depth of flavor. Lastly, I like to top my bowl with a few fresh basil leaves and a drizzle of extra virgin olive oilSO good! Croutons are also a great idea, and of course, you can never go wrong with the classic vegan grilled cheese sandwich on the side!

How To Can Tomato Soup Step By Step

Ill walk you through the process here in photos because it really helps, especially if youre new to canning. At the bottom of the post, youll also find a printable and detailed recipe card. The recipe card also contains water bath canning instructions if you dont want to pressure can this soup.

Rinse all your awesome tomatoes and cut them in half. If you have big ol hunkers, then cut them into smaller chunks. Add a strainer/colander to a large bowl.

Wash and clean your jars. For canning soup, I recommend quart-sized regular mouth jars. It is no longer necessary to sterilize jars before canning but you should make sure they are preheated enough to not crack when placed in hot water.

You can put them in a clean dishwasher and run them through a quick wash cycle, or place them in a large pan with some water in a low heat oven until you need them. Ive even just put hot tap water in them before and left them on the counter.

Wash your lids with hot soapy water and place them in a clean bowl for now.

Add the tomatoes to a pot of boiling water and parboil them until you see the skins start to come off one of the tomatoes . You can read a more in-depth tutorial on How to Blanch and Peel Tomatoes.

Use a slotted spoon and remove the tomatoes and place in the strainer.

Run the tomatoes through a food mill to remove the seeds and skins. If my tomatoes are particularly watery, I will strain them a bit through a mesh strainer.

How Do You Thicken Up Tomato Soup

The best way to thicken tomato soup is to cook it longer and wait as the tomato juices evaporate and reduce into a nice thick soup. This doesnt take too long if youre using canned tomatoes like we are.

The other best way is to add in a little bit of cream at the end. It gives your soup that luxurious, rich texture we all love.

Since this is a tomato-based soup, it is important to offset the acidity with some key ingredients. We use a combination of cream, parmesan, and a little sugar to balance the soup.

  • Butter use unsalted butter to sautee onions
  • Yellow onion it seems like a ton of onion but it dissapears into the soup adding a balanced sweetness
  • Garlic youll need 1 Tbsp minced from about 3 cloves
  • Crushed tomatoes with their juice, preferably San Marzano tomatoes
  • Chicken stock for the best flavor use homemade chicken broth
  • Basil chop and add 1/4 cup fresh basil, plus more to serve. Basil leaves are easily bruised so chop by stacking a bunch of leaves then roll them into a log and cut into thin strips.
  • Sugar Its just 1 Tbsp, but necessary to combat the tomato acidity.
  • Black pepper start with 1/2 tsp and add more to taste
  • Whipping cream adds a creaminess to the soup and offsets acidity.
  • Parmesan cheese adds saltiness to the soup and balances acidity. Adding parmesan adds enough salt and I usually dont add more.

If you don’t have fresh tomatoes, you can use canned tomatoes insteadjust swap in two large 28-ounce cans or three 15-ounce cans.

Rach likes to pair this soup with a grilled cheese sandwich, and she’s made two to celebrate warm weather:

  • 5 to 6 large tomatoes
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • 2 medium or 1 large Vidalia onion, chopped
  • Salt and pepper
  • 1 large leafy stem basil, plus torn leaves, for topping
