Mistake : Adding Pasta And Grains Too Early

Poor Man’s Soup!! – How to make Delicious Soup on a BUDGET! – The Wolfe Pit

This is related to the first mistake and can result in mushy and overcooked pasta and grains.

An easy way to prevent this is to cook pasta and grains separately, then scoop them into the soup when ready to eat.

This strategy works well, particularly if there lots of leftover soup; it prevents the pasta from sitting in broth for too long and getting soggy.

While its trickier to cook grains in the soup, its doable! Remember to add more liquid into the pot.

Then, add the grains with just enough time to cook. Keep in mind this is different depending on the grain.

Barley or wild rice can take;up to an hour. Brown rice can go in with about 25 minutes remaining, and pasta only needs about 10 minutes.

Taste Adjust And Garnish

Soups almost done taste it and add more salt if needed.

Perhaps youll notice that your grains soaked up too much liquid, and you may need to top off the pot with broth or water.

For vegetable-only soups, this is when you decide to puree .

Another option: Take out half of the soup, puree it, then pour back into the pot. This way, your soup is a little thicker, but you still get the texture of the chopped vegetables.

Creamy, pureed soups are easy to eat and best made with seasonal vegetables, like;Spicy Butternut Squash Soup;for the Fall and;Melon Mint Soup;for the summer.

Finally, if the soup is to your liking, sneak in a fresh squeeze of lemon and get ready to get your sip on!

How To Make Veggie Soup The Recipe:

First you will need to chop onions and garlic. In a large pan pour six table spoons of olive oil. When the oil is hot put the onions and garlic in it. Add spices and stir. Fry on a medium heat for about ten minutes. Then add tomato paste, two table spoons. Pour 1,5 litre of water and add your favourite veggies. Stir and mix everything together. After youve done that, leave it on high heat to boil more then half hour. After that taste the soup if needs more salt or more water. Stir and leave to boil again for 10 minutes on medium heat. Instead of water you can use vegetable stock or besides water you can add a vegetable cube for more taste.

We like to keep it plain and simple to get the taste of the veggies instead of salt. Also you can add many different foods in the soup. For more fulfilling taste add rice or pasta in the middle, or lentils at the beginning of boiling.

What Kind Of Vegetable Any Kind

Nearly any vegetable will make tasty soup, Sweet potato, zucchini, squash, turnip, tomato, celery, mushrooms, onions, leeks, cabbage, kale, chard, potatoes, rutabaga, celeriac, cauliflower, broccoli the list goes on.

The only caveat is that you need to like the flavor of the vegetable. You can tone down turnips bitterness with cream or yogurt, and you can offset cabbages aroma with creamy white beans or tart lemon, but you cant entirely erase the taste of a vegetable in soup, so dont put something in that you really dont like.

Also, nearly any texture of vegetable will work, from tender greens to hard squash, but the cooking time will change. A big pot of chard will cook down quickly, while butternut squash will need more time.

Key Steps For Vegetable Soup

  • Dice up the vegetables: Cut about a pound of vegetables into a medium dice about an inch across or smaller if youre using a hard, dense vegetable, like potato or winter squash.
  • Cook hard vegetables until softened: Sauté the chopped vegetables in a little olive oil or butter, keeping the heat to low and letting the veggies really cook and develop flavor. Brown the vegetables if you want to. After the vegetables have softened and developed some fragrance and flavor, add about 4 cups of stock, cover, and simmer.
  • Simmer the soup until tender: Simmer for about an hour or until all the vegetables are soft. Purée the soup in a blender or with an immersion blender for a creamy soup, if you like.

    The Aromatics And Seasonings

Now that youve chosen your soup, youll want to start building its foundation. Choose a cooking fat based on the cuisine that inspired your choice: butter for a French soup, olive oil for an Italian one. And use the same thinking to select an aromatic base of chopped vegetables, whether versatile garlic and onions, classic mirepoix, Italian soffritto, or Southeast Asian shallots and ginger. Then, select your seasonings, sticking to three or fewer to keep from muddying flavors.

      Onions and Garlic

    • For a basic aromatic foundation, heat 4 tablespoons of a neutral-tasting oil, like grapeseed or peanut, or olive oil in a soup pot over medium heat. Add 2 diced medium yellow onions and a generous pinch of salt. Stirring occasionally, cook until the onions are tender and the meat is just starting to brown. Add 3 cloves thinly sliced garlic and cook for another 20 seconds, just until the garlic gives off a savory aroma.

For a Mexican tortilla soup or pozole, crumble 1 tablespoon dried oregano into a base of onions and garlic. Add 1/4 cup basic pepper paste or canned chipotle peppers in adobo sauce and 1 cup chopped tomatoes.

For an Indian soup, turn a simple onion and garlic base into the foundation for an Indian soup by stirring 1 teaspoon cumin seed in with the garlic. Sizzle together for 20 seconds, then add 1/2 teaspoon turmeric powder.
