Dried lentils are best for lentil soup. You can use most types of lentils for this recipe brown, green, red or yellow, though it will affect the colour of the soup. Ive used green lentils, pictured below.

The only type of lentil I do not recommend is Puy Lentils because they hold their shape and dont soften like other lentils.

Can you used canned cooked lentils?

Yes you sure can, and directions are provided in the recipe notes. But its better made with dried lentils because of the texture in the soup, theres only 10 minutes difference in cook time and its more economical!

Change The Soups Consistency

If you find that the soup is too thick, you can add a little water to it. Be sure to add some salt and pepper for extra seasoning.

For a thicker soup, you can put the soup into a blender and spin it a couple of times. You can do that with just some of the soup or all of it, depending on how thick you want the soup to be.

The Best Lentil Soup Recipe

We chose French green lentils, also known as Le Puy, grown in a region of central France, for this recipe. They are small and darkalmost purple in appearanceand hold their shape during cooking. They also take longer to cook than other varieties.

If you cant find French lentils, you can substitute almost any other variety. You will need to adjust the water and cooking time to achieve the consistency you want, but this is an eyeball it situationits not hard!

Green lentils are our first substitution choice. They are large and flat, and stay fairly firm when cooked. Just cook the soup long enough to soften the lentilscheck it every 10 minutes or so after the 20-minute mark.

Brown, yellow, and red lentils are a good next choice. They tend to cook quickly and dont hold their shape particularly well. If you substitute Puy lentils with any of these, watch them closely. They can easily turn to mush, and you want some shape and texture for this soup.

Do I Use Fresh Or Canned Lentils

It’s really up to you and the amount of time you have available. I prefer to use dried lentils when making soups. I will soak and rinse them off before adding them to my lentil soup. Just keep in mind that some lentils varieties take longer to cook than others.

Canned lentils also work really well. The main issue with canned lentils in my opinion is the added sodium. It will sometimes make the soup too salty so just be mindful of that.

How To Make French Lentil Soup

Begin with the prep. I like to chop the bacon, onions, and celery very fine, so they arent too discernible in the finished soup. However, I keep the carrots a bit larger so they dont disappear.

To make the bacon easy to dice, wrap the slices you need in plastic wrap and put them in the freezer for about 15 minutes. They will be a bit stiffer when you remove them and much easier easier to cut.

Cook the bacon over medium heat until crisp. Dont be tempted to discard the bacon fat before you add the vegetables to the pot youll need to cook the vegetables and it also adds flavor.

Add the olive oil, onions, celery, carrots, and garlic.

Cook until the onions are soft and translucent, about 5 minutes.

Add the tomatoes, chicken broth, lentils, thyme, bay leaves, salt and pepper.

Bring to a boil.

Reduce the heat and simmer, partially covered, until the lentils are tender but not mushy, 45 to 50 minutes .

Using an immersion blender, purée the soup a little bit at a time until the broth is slightly thickened. Go easy if you purée the soup too much, it will get too thick and youll lose the integrity of the lentils. If you dont have an immersion blender, simply transfer a few cups of the soup to a standard blender and purée, then return the blended soup to the pot.

Season to taste and adjust the consistency if necessary .

Ladle the soup into bowls and garnish with fresh parsley.

How To Make Lentil Soup:

I have included detailed instructions in the full recipe below for how to make this lentil soup in either an Instant Pot, Crock-Pot or on the stovetop. But here is a quick overview:

  • Sauté the veggies. I recommend taking an extra few minutes to sauté the onion, carrots and garlic before adding them to the rest of the soup to bring out their best flavors. But if you are in a hurry, you can just add these ingredients in with Step 2 below.
  • Simmer. Stir in the vegetable stock, lentils, corn, cumin, curry powder, cayenne and saffron until combined. Cover and cook until the lentils are tender.
  • Blend . Using either a hand blender or traditional blender, puree the soup until it reaches your desired consistency.

  • Sauté the onion and celery in coconut oil . This releases the flavors and adds a lovely warmth to your final product.
  • Sauté the garlic and ginger, stirring constantly so the garlic doesn’t burn . Use fresh minced garlic for the best results.
  • Add spices and tomatoes, namely turmeric, cumin and the fire roasted tomatoes. Stir quickly to combine so that the spices don’t stick to the bottom.
  • Add vegetable stock and lentils and give the soup a few stirs to cover the lentils. Now all you need to do is allow the soup to simmer until the lentils are soft .

    Step 1: Cook onions and carrots in a large pot until they begin to soften and are starting to smell sweet. If you have them in the fridge, celery or fennel would be lovely added to the pot, too.

    Step 2: Stir in garlic, cumin, coriander, and turmeric. I only cook the aromatics for 30 seconds or so. This short time allows the garlic and spices to warm up, which I think helps them release even more flavor to the soup.

    Step 3: Rinse and pick through the lentils. I add the lentils dry to the pot, but before doing that, I make sure to rinse them under running water. I also quickly look through them to make sure anything that isnt a lentil is removed .

    Step 4: Add the lentils and broth. With almost all the soup ingredients in the pot, I bring the soup to a simmer and cook, partially covered, until the lentils are soft. This takes 30 to 40 minutes.
