A typical Japanese miso soup bowl holds about 200 ml of liquid. Miso varies in saltiness depends on types and brands but as a general rule, we add 1 tablespoon of miso per one miso soup bowl .

Whenever you add tofu in the miso soup, you ALWAYS put miso first, then tofu. That way, you dont accidentally break the fragile silken tofu when dissolving the miso paste in the soup.

    Miso soup is a simple dish, but it does require a bit of prep before you turn the stove on. Once you gather your ingredients white miso, vegetable broth, scallions, shiitake mushrooms, extra firm tofu, soy sauce, and powdered ginger the first thing to do is press the tofu. Put it in a bowl or plate, cover it in paper towels, and put heavy objects on top.

    “Since tofu is packed in water, I like to drain and press it so that it is firmer in the soup. If you don’t press it, it will be a little soggy,” Hahn explains. She also clarifies that there are “some tofu brands that are not packed in water,” such as the kind labeled “super firm” at Trader Joe’s, which don’t need pressing.

    While you wait for the tofu to press, slice up the scallions and prepare the mushrooms by removing their stems and giving them a good chop. “I like using shiitake mushrooms for this because they have a more intense flavor than other mushrooms and are very hardy,” Hahn says. “But you can definitely use any other type of mushrooms!”

    How To Keep The Dashi And Miso Soup

    Dashi can be stored up to one week in the refrigerator. You can also fill up the ice cube tray with dashi or in the freezer safe container and freeze it. It can be kept in the freezer up to one to two months.

    However, once you have added the miso and other ingredients, do not keep the miso soup for more than a day as it will lose its flavor. Make the miso soup fresh with the frozen dashi yield a better result.

    The Easiest Miso Soup Recipe Ever!

    This miso soup recipe is super simple to make! Heres what you need to do:

    First, make the dashi. Rinse the kombu, place it in a medium pot with the water, and gently simmer over low heat. Careful not to let it boil! If you do, the kombu flavor will become bitter. After 10 minutes, remove and discard the kombu.

    Meanwhile, rehydrate the wakame. Place it in a medium bowl, and cover it with warm water. Set it aside for 5 minutes. You wont believe how much it grows!

    Next, make the miso slurry. Ladle some of the hot dashi into a small bowl, add the miso paste, and whisk until smooth. This step is crucial for making a smooth, well-combined miso soup. If you skip it, and add the miso directly to the pot, your soup will be lumpy.

    Finally, add the miso mixture to the remaining dashi. Drain the wakame and add it to the soup, along with the green onions and tofu. Simmer the soup over very low heat for 1 to 2 minutes, just to warm it through. Again, dont let it boil! Because miso is a fermented food, its teeming with probiotics. Boiling miso kills these beneficial bacteria, so youll miss out on some of its health benefits.

    When the soup is warm, enjoy! I like to serve it with tamari to taste.
