To reheat it may take a fresh splash of cream to bring it back to a smoother consistency since the cream can separate a bit from the freeze/defrost process.

How To Make It
Saute the mushrooms. Add the butter to a skillet over medium heat and let it melt. Once the pan is hot add the mushrooms and cook for 10-15 minutes, until the mushrooms have cook down and released most of their excess moisture.
Season the mushrooms. Add the onion powder, garlic powder, salt, pepper, and chicken broth to the mushrooms. Stir with a wooden spoon to scrape the browned bits from the bottom of the pan. Cook for 5 minutes and then remove 1/3 of the mushrooms from the pan setting them to the side.
Add the heavy cream. Pour the heavy cream into the skillet and then use an immersion blender to puree the soup. Its ok to leave some mushroom bits but getting a good puree will help thicken the soup. Add the reserved mushrooms back to the soup.
Continue to cook for 15-20 minutes or until soup has thickened.

I used red palm oil in this keto soup recipe. Its another healthy saturated fat, my favorite saturated fat for roasted keto vegetables.
As I mentioned above, be sure to use grass-fed and finished ground beef in this keto recipe. The fats are highly nutritious. If youre eating conventional meat, there will be toxins in its fat.

I use half and half for my homemade mushroom soup, I find it is lighter than using heavy cream. But if you want you can also probably reach for evaporated milk. You could probably even use regular milk if you aren’t doing keto, it would just make the soup thinner, and just make sure to stir often so it doesn’t curdle during the cooking process.

Low Carb Mushroom Soup In The Instant Pot
Put the pressure cooker on the Sauté setting. Add the onion, celery, thyme and bay leaf and cook for a couple of minutes. Add the chopped mushrooms and garlic and cook for 5 minutes until tender and lightly browned. Stir regularly.
Pick out about ¼ cup of mushrooms and place to one side for the top.
Pour in the chicken broth. Put the lid on the Instant Pot and seal. Select manual and set the timer to 5 minutes. The pot will take a few minutes to come to pressure.
When the cook cycle has ended, allow the pot to sit for 10 minutes, Then turn the knob and do a quick release of the remaining steam.
Add the cream and proceed as per recipe.

How To Make Homemade Keto Cream Of Mushroom Soup
In a medium-sized pot melt the butter on medium heat. To that add all the ingredients through the celery salt. Let this saute for about 5 minutes, stir occasionally. Measure out your broth and add that slowly to the pot. Turn the heat up to medium-high and bring the soup to a boil. Then lower down to low and let the soup simmer for 15 minutes.

Next, add the cream cheese and heavy whipping cream to the soup. Add the sherry also. Bring the heat up to medium so the cream cheese can start to melt into the other ingredients. Stir to help combine. Once the cream cheese is smooth and the soup is warmed throughout, bring it back down to low and let simmer 5 minutes.

Finally, remove the pot from the stove. Using an immersion blender, blend for a few minutes until it is the consistency you like. I like mine mostly smooth with only a few larger bits of mushroom left. Doing this will bring the temperature of the soup down a bit and cool it off.
Return the pot to the stove to get it warmed back up to your desired temperature. To serve, ladle into bowls and top with fresh herbs if desired. ENJOY!

How To Make Cream Of Mushroom Soup
This mushroom soup is ready for you in about 35 minutes, most of that time is just the soup simmering on the stove.
Youll want to use a large soup pot for this recipe. I love these I use them for EVERYTHING! Melt your butter over medium high heat. Now add in your 6 cups of fresh mushrooms that are chopped up, chopped onions and minced garlic. Keep stirring until the onions are tender and translucent. This takes about 10 minutes.
Add chicken broth, heavy cream, cream cheese, thyme, salt and pepper. You can use boxed chicken broth or you can use bouillon cubes and water. I use bouillon because it saves me money. Stir so its all combined.
Bring the soup to a boil and then reduce heat and simmer for 25 minutes, stirring occasionally.
Now this is important. Remove half of the soup from the pot and place in a bowl. Careful, the soup is hot! With the soup remaining in the pot, use a immersion blender to blend until smooth. Now add the soup thats in the bowl back into the pot. Simmer for 10 more minutes.
Why do we use a immersion blender? We want the soup to be creamy and really have a mushroom taste to it. By using the immersion blender, were helping the soup achieve a high mushroom flavor and thicken up into a creamy soup. If you dont have a immersion blender, you can use a blender. But again, please be careful its hot!
Now the best part time to serve in bowls! Its Mushroom Soup Time! Totally optional, but I like a little dash of paprika on top!
