The thickness comes from blending all of the cannellini beans and half the garbanzo beans.

If you dont blend the beans, the finished product will be thinner and brothier, and youll have more of a soup on your hands.

Additionally, there are only 4 cups of broth used, which renders it thicker like a stew. For those who prefer it more soup-like, add an additional one or two cups of broth.

When the power went out at my friend Joys apartment during the Texas Winter Wipeout, one of the concerns she and her hubby faced was the inability to grind beans for their ritual daily coffee. In a quintessentially masculine approach, her darling husband realized he didnt need no stinking grinder a dishtowel and …a pizza roller? Too hard to control. How about a crab mallet? Yes, a crab mallet would do the trick. And it did. Sort of. The coffee was a little weaker than they were used to, but any port in a storm, as they say. The more memorable effect was the tiny bits of coffee dust that covered the floor and counters of the kitchen. Joy said it added a Turkish coffee bar ambience to the experience.

Substitution Ideas For Lemony Bean Stew

The great thing about soups and stews is that they tend to be highly flexible in terms of what ingredients you can include or omit.

For double white bean lemon stew, feel free to change the following:

  • As I mentioned, use all garbanzo, all cannellini beans, or use another type of white beans such as Great Northern.
  • If you dont have fresh rosemary and thyme, use dried.
  • For anyone who doesnt keep fresh marjoram on hand, omit it.
  • Dried parsley is fine in place of fresh although since its used as a garnish, if all you have is dried I suggest simply omitting it in that case.
  • Use 1 to 2 cups more broth to make it a brothier soup rather than stew.
  • Vegetable or chicken broth may be used. If youre keeping this plant-based, obviously use vegetable broth.
  • Shredded cooked rotisserie chicken is a great way to bump up the protein and satiety factors if you want to add it.
  • Previously cooked small shaped pasta such as elbows, wheels, ziti, or rotini add a comfort food touch. Note that they will tend to absorb the existing broth so add more broth if youre adding pasta.
  • Thawed and well drained frozen spinach may be used instead of kale.

What Are The Best Beans For Stew

For my version of double white bean lemon stew, I use both cannellini beans and garbanzo beans. However, if you want to use all of one type of bean and none of the other, thats fine.

You can also try another white bean such as Great Northern beans.

Definitely drain and rinse the beans before adding them.

Additionally, I prefer using low or no-salt added beans so I can better control the overall saltiness of the dish.

Lemony Spiced Turkey Stew With Greens

This quick and easy turkey stew recipe is wonderfully spiced and lemony. Its filled with butternut squash, greens and is hearty and nourishing. This is a versatile recipe that can be adapted to the vegetables is in your pantry and can be made vegan with white beans or paleo with ground turkey.

This turkey stew recipe is supremely adaptable and it doesnt need to simmer very long to meld the flavors.

The soup starts with a with a deeply flavored base of onion and carrots. Cumin, ginger, and garlic spike it with incredible flavor.

I use ground turkey, but whatever ground meat you have, chicken, pork or beef will work just fine.

If youre vegan, white beans or chickpeas can be used instead of the ground meat. If you want more variety you can mix and match with a little of each.

The butternut squash provides just the right amount of satisfying carbs. Sweet potatoes or white potatoes can be substituted if you prefer. If youre using beans, you can even leave out the butternut squash, there will be enough carbs.

Add in a bright green vegetable and this dinner almost cooks itself.

Any green vegetable can be used. Heartier greens like collards, kale or cabbage need longer to cook than delicate spinach or Swiss chard.

Add more broth if you like it thinner or maybe a thicker stew is what youre craving. Either way is good.

Finish the stew with lots of lemon to give it a lively zing.

How To Make Lemony White Bean Stew

This accidentally vegetarian stew recipe is a cinch to make! Follow these very straightforward steps:

Step 1: In a large Dutch oven, saute the onion in olive oil before adding the carrots, celery, and finally the garlic.

Step 2: Separately, in a high-speed blender blend the cannellini beans and half the garbanzos with the broth.

Step 3: Add this puree, the remaining garbanzo beans, thyme, rosemary, marjoram, salt, and pepper to the Dutch oven and simmer.

Step 4: Add the kale and allow it to wilt.

Step 5: Off the heat, add the lemon zest, lemon juice, taste the soup and make any necessary flavor adjustments before serving.

Notes On Turkey White Bean Soup With Kale:

  • I use a 93% lean ground turkey, but 90% or even 85% lean would be fine too. I dont recommend 99% lean ground turkey breast it doesnt have much flavor.
  • Also, depending on which store Im at, a package of ground turkey is either 1 pound or 1.3 pounds. Either one works here.
  • You can use regular diced tomatoes or fire-roasted diced tomatoes.
  • The recipe calls for cannellini beans, which I love for how soft and creamy they are, but you could substitute Great Northern beans or another favorite bean if you prefer.

Im all about the substitutions always cause I love for you guys to be able to adapt a recipe and make it your own but man, thats super important these days, isnt it?

One more tip: If you have a Parmesan cheese rind in your fridge or freezer, this is a great soup to throw it in for! Add it with the tomatoes, beans and broth so it can simmer away.

Also, I should mention that while I highly recommend the Parmesan cheese, you could certainly leave it out if you need this recipe to be dairy-free.

As is, this recipe is gluten-free and fairly low-carb too.

Its certainly hearty enough on its own, but you could serve this with some rolls, fresh bread or biscuits if you like. My Parmesan herb drop biscuits would be a great pairing.

Tips For The Best Double White Bean Lemon Stew

Double white bean lemon stew is so fast and easy to make but a couple final tips are:

  • If you dont want this to read like a creamy-textured soup or stew, skip blending the beans. And instead simply add both cans of beans whole.
  • I like to use lower, low, or no-salt added versions of both broth and beans so that I can better control the final salt level of the soup.
  • If you taste the soup at the end and it tastes at all flat or like its missing something, it likely needs more salt. Dont be afraid to add it. As a vegan and gluten-free soup, its especially important to properly salt it so its not boring. After all, thats why soups in restaurants taste so good is because theyre not afraid to salt them!
  • Always zest first, then juice, when it comes to lemons.
  • When youre zesting the lemon, be careful to take off just the yellow part. The white part of the peel underneath the yellow is more bitter and not appetizing so make sure not to zest down into the white layer. If you dont have a fancy zesting tool, the fine blade of a box grater will work just fine.
