Yes, you can. I personally like to saute the vegetables first before I prepare the soup. You dont need to do that if you like.

Add the liquids and all the other ingredients except the gnocchi, half and half, and spinach. Cook on low for three to four hours, adding the gnocchi in for the last hour of cooking.     How To Make Creamy Chicken Soup

    1. Cooking chicken.

    • Add canola oil to a large Dutch oven over medium heat to sear your chicken breasts. This is one of the best ways to add flavor to your soup. Searing locks moisture into the chicken as well as adding to the fond in the bottom of the pot.

    2. Saute the vegetables.

    • Let the chicken breasts rest a bit while you sauté the vegetables until just-softened. This also layers in the flavor to your soup base.
    • Dice chicken when vegetables are softened and add it to the pot as well.

    3. Add liquids.

    • Start pouring in stock and milk while scraping the bottom of the pan and slowly stirring.

    When adding your milk and broth to the pot, make sure to scrape up all the browned goodness off the bottom of the pot and mix.

    Remember, you were building up the flavor in the previous steps, and you dont want to leave any of that behind.

    • Add Parmesan rind to the soup.

    Parmesan rind should be cooked with the soup but when the soup is done, make sure to find it and discard.

    4. Add final ingredients, then serve!

    • If using packaged gnocchi, check gnocchi package instructions for exact cooking time, add gnocchi, heavy cream, and spinach and cook until gnocchi is done.

    I am an avid soup lover! It’s a whole meal in a bowl. Whenever we go to Olive Garden, I like to order the “soup, salad, and bread sticks” for my meal with the chicken gnocchi soup. My favorite!

    Unfortunately, we don’t live all that close to an Olive Garden, so we don’t get there much, so I decided to make my own Copycat Olive Garden Chicken Gnocchi soup! It’s pretty darn close, if you ask me. Maybe even better.

    This copycat Olive Garden chicken gnocchi soup is warm and creamy with juicy chicken, pillowy gnocchi, and fresh spinach.

    The secret ingredient in this recipe is thyme. It’s unexpected, but absolutely necessary. You can use fresh thyme or ground, just as long as it’s in there

    • You can lighten this soup up by using 2 cups of half-and-half and 2 cups of milk. To lighten up the recipe even further, you can also use just milk, and itll still taste great.

    • You can find gnocchi for this recipe in a couple of different places in the supermarket. My local store sells shelf-stable potato gnocchi where dry pasta is sold. Sometimes you can find them in the refrigerated section where ravioli or tortellini are sold.

    • Add broth and seasoning: Pour in broth, add rosemary, thyme, nutmeg and season with salt and pepper to taste.
    • If using raw chicken breasts add them now : Add in chicken breasts and bring soup to a boil, reduce heat to medium-low, cover and allow to simmer until chicken is cooked through , about 8 12 minutes.
    • Make roux: Meanwhile, while chicken is cooking, melt butter in medium saucepan over medium heat. Add flour, cook and stir constantly 1 minute.
    • Make béchamel sauce: While whisking vigorously pour in milk then continue to whisk vigorously to smooth any lumps. Season with salt and pepper to taste.While whisking constantly, cook until mixture thickens. Stir in cream, remove from heat.
    • Shredded chicken: Once chicken in soup has cooked through remove chicken from soup and allow chicken to rest 5 minutes then dice or shred into pieces .
    • Cook gnocchi: Add gnocchi to broth mixture, cover and simmer for recommend time directed on package, about 5 minutes.
    • Add white sauce to soup: Reduce soup mixture to low heat, stir milk mixture into broth mixture.
    • Stir in cooked chicken and spinach: Add in cooked chicken and spinach. Cook until spinach wilts, about 1 minute.
    • Finish with cheese if desired: Serve warm with Romano cheese if desired.
