Collagen is found in the ligaments, tendons, cartiledge, bone, skin, and marrow of animals.

Sounds weird, right?

Think about it from a human perspective

As we age, our joints tend to experience inflammation and get weaker. This is because our cartilage is weakening as it is attacked by our own antibodies.

When bone broth is made, those pieces of cartilage, bone, marrow, skin and others are simmered, breaking them down, letting the collagen make its way into the bone broth, ready for our body to use when we drink it.

Collagen has such huge benefits, that researchers at Penn State University did a study on it, where they supplemented athletes diets with collagen for 24 weeks. At the end of the study, the researchers found that the athletes reported improvement in joint comfort as well as other factors that impacted their athletic performance.

Only Quality Bones For Bone Broth

What we eat becomes what were made of our food is literally the building blocks of our physical body, from our cells to our bones and joints to our skin to our brains. With animals, its the same thing. So when you eat any animal product, youre eating what that animal eats. That means its equally important to use bones from organic, pasture-raised animals wherever possible to glean the powerful nutrition benefits from bone broth.

You can get your bones in a few ways:

  • Visit your local butcher, grocery store or farmers market and ask them for organic bones or the bones from pastured animals. Its often wise to call your butcher ahead and ask them to set bones aside. They are a hot commodity these days.
  • If you have roasted a chicken or turkey, save the carcass and use it to make bone broth. You can also save the bones if youve only eaten chicken thighs or legs.

How To Make It

Wondering how to make bone broth? There are a few important basics to consider when making good stock.

You can make bone broth with animal components alone, but studies show that the combination of animal products and vegetables seem to have synergistic effects, working together to be more beneficial than either alone.

Experts say that for a quality bone broth recipe, its important to use body parts that arent commonly found in the meat department of your grocery store things like chicken feet and neck.

You also want to buy animal products that you know are pasture-fed and free of antibiotics and hormones in order to truly unlock all the bone broth benefits.

For the classic bone broth recipe, Fallon describes the essentials as bones, fat, meat, vegetables and water. If youre making beef broth or lamb broth, you should brown any of the leftover meat or organ meat before putting it into a stock pot.

Beef bones dont need to be cooked beforehand. Fish and poultry are fine to put in a pot without browning first. Add a bit of apple cider vinegar to your pot to help draw the minerals from the bones.

Bone Broth Benefits: 6 Claims Backed By Science

Much has been written about bone broth benefits in recent years. Bone broth is a staple food in almost every cuisine on the planet with thousands of varieties of soups, stews and sauces that use it as a base. But its also been used medicinally too. Mothers and grandmothers all over the world have served up chicken soup in a myriad of forms as a remedy for common ailments. Healing systems like Chinese medicine value it to treat a wide variety of afflictions. A South American proverb goes so far as to say, Good broth will resurrect the dead. While I wouldnt go that far, I will say Ive experienced many bone broth benefits in myself and with nutritional therapy clients.

That said, when a food becomes trendy, so do exaggerated health claims. As much as I love bone broth, Ill be the first to admit that its not a cure-all. But its widespread use suggests theres something beneficial about it. What I want to do in this post is to summarize the most common anecdotal claims of bone broth benefits which also have some scientifically-backed evidence.

But first, lets start by clearing up a little confusion over the term bone broth.

    How To Store Bone Broth

You can store homemade bone broth in an airtight container for up to 5 days in the fridge and up to 6 months in the freezer. I like using mason jars because theyre cost-effective and BPA-free.

Some people prefer freezing their bone broth into ice cube trays so they only thaw enough at one time. If you choose this method, just be sure to use the cubes within 3-4 weeks.

Bone broth can also be found in shelf-stable cartons with a long shelf life in most stores and online.

I like to keep cartons of both beef and chicken bone broth in my pantry for those times when I cant make it from scratch.

When the stores have low-sodium versions, I prefer that. Otherwise, I simply cut back on the amount of salt from the ingredients list in whatever recipe Im using.

You can also purchase bone broth in powdered form from companies such as Bluebird Provisions.

    Bone Broth Promotes Weight Loss

While more studies of gut bacteria and weight loss need to be conducted, research has shown that obese people have more of a certain type of bacteria called Firmicutes and less of another type called Bacteroidetes in their digestive tracts. The higher proportion of Firmicutes is believed to lead to a higher amount of calories extracted from food. Therefore, a higher ratio of Firmicutes to Bacteriodetes has become one of the markers of obesity.Bone broth is a good source of L-glutamine, an essential amino acid necessary for the body and gut health. L-glutamine was found in studies to reduce the Firmicutes in the gut and, therefore, aid in weight loss.

Many studies have also looked at whether consuming soup before a meal promoted weight loss due to a lower amount of calories eaten during the meal itself. In a study published in the November 2007 issue of Appetite , researchers conducted the study again and went a step further to see if eating a meal with liquid would have the same effect as soup.

The finding was that ingesting soup did indeed reduce caloric intake at the next meal and that only soupnot food consumed with waterhad this beneficial effect.

Its Nutrients Have Been Shown To Improve Joint Health

Collagen is the main protein found in bones, tendons, and ligaments.

During the cooking process, collagen from bones and connective tissue is broken down into another protein called gelatin.

Gelatin contains important amino acids that support joint health.

It contains proline and glycine, which your body uses to build its own connective tissue. This includes tendons, which connect muscles to bones, and ligaments, which connect bones to each other (

Taking glycine before bed helped participants:

    • fall asleep faster
    • maintain a deeper sleep
    • wake up fewer times throughout the night

This study also found that glycine helped reduce daytime sleepiness and improve mental function and memory.

Therefore, drinking bone broth could have similar benefits.

    Summary

Glycine has been shown to promote sleep. Taking it before bed may help improve quality of sleep, mental function, and memory.

    Improves Skin Hair And Nails

Bone broth contains collagen and gelatin, both ingredients of the supplements intended to ensure glowingly beautiful skin appearance and also enhance the strength of human nails and hair.

As the main structural protein in human bodies, deficiency of collagen contributes to the aging of our skin. Scientific studies evidently support the theory that collagen and gelatin reduce the effects of old age by improving the appearance of nails and hair. These two compounds also minimize several other visual signs of aging.

Likewise, the results of some studies show that using dietary gelatin as a supplement to improve beauty is effective. Although research in this area remains inconclusive, preliminary results show that women found their skin appeared better and felt firmer after taking gelatin supplements for a while.
