Chicken noodle soup is traditionally made with wide egg noodles. When youre vegan, you cant have egg noodles.

However, a few brands out there make a wide egg noodle minus the egg.

Walmarts store brand has one, and it works great in this soup.

With that being said, you can use whatever noodles you would like.

Just make sure that the noodle will not fall apart easily after being left in the warm broth for an extended amount of time.

No one wants their noodles to disappear in their soup, or maybe you do- Im not judging.

How To Make Chickpea Noodle Soup

1. Sauté the veggies. Heat the olive oil in a large pot over medium-high heat, and saute the onion, carrots and celery until tender, about 8 minutes.

Add in the garlic, tamari , and thyme, and stir briefly for 1 more minute.

2. Simmer. Add the noodles, chickpeas, and water, then season with salt and pepper.

Bring the broth to a simmer, and let the soup cook until the noodles are tender, about 10 to 15 minutes.

3. Enjoy! Adjust any seasoning to taste, then serve warm right away. This soup tastes just as delicious as the version made with chicken, if not better!

This recipe is actually adapted from my popular Chicken & Vegetable Soup, which Ive been making for years with water, instead of broth, too.

How Do You Make Gluten Free Cream Of Chicken Soup

First, saute your chicken in the oil or butter.

Even if you uare using already cooked chicken, this will help to flavor your cream of chicken soup.

Add your gluten free flour to the oil and chicken to make a gluten free roux.

Stir the gluten free flour into the fat and cook until it starts to turn golden and smells slightly nutty.

Youre still making a blonde roux, and not cooking it to a dark brown color.

You want your gluten free roux to have lots of thickening power , while taking advantage of the flavor that you get from toasting the flour.

Cooking the flour keeps your cream of chicken soup from tasting like a floury paste.

Then add the broth and milk and bring it to a simmer.

Let it simmer until thickened,

It will thicken up even more as it cools.

Now your gluten free condensed cream of chicken soup is ready to use in all your favorite recipes!

Chop up the onions, celery and carrots. Add olive oil or butter to the bottom of your stockpot or sauce pan and turn it on over medium-high heat. Once hot, add the chopped veggies along with a sprinkle of salt and pepper. Saute them together until the onions become translucent, and the carrots and celery are just fork-tender . Stir occasionally.

Mince the garlic and fresh herbs nice and fine. Next, add the herbs and garlic along with your chopped leafy greens to the pot. We used a combo of cabbage and kale in this batch. Toss in the optional whole bay leaves and minced sage as well. Allow these to cook together for about five minutes, stirring on occasion. This is where the flavor and aroma of your no-chicken noodle soup starts to come to life!

  • 1/4 cupshredded vegan cheddar cheese
  • Blend the ingredients for the Easy Vegan Cream of Chicken Soup Base. In a large saucepan on medium heat, saute the diced onion in 2 tablespoons of vegan butter until slightly tender, about 4 minutes. Turn the heat to low, and add all the 2 tablespoons of all purpose flour. Continually stir for about 2 minutes to lightly cook the flour.

  • Pour in the blended cashew mixture, and continue to stir until thickened, about 4 to 5 minutes. Turn the heat off, add 1/4 cup of vegan butter, stir to combine, and set aside

  • In a large bowl, add the frozen hash browns, vegan yogurt or sour cream, vegan cheese, and thickened Cream of Chicken Soup Base. Stir well to combine, adding salt and pepper to taste.

  • Pour the sauced potatoes into a 9×13 baking dish, making sure to get everything out of the bowl.

  • Melt 2 tablespoon vegan butter, and toss with corn flakes, 1/4 cup of shredded vegan cheese, and a pinch of salt.

  • Top the potatoes with the corn flakes, and then cover with aluminum foil.

  • Bake at 350 degrees Fahrenheit for 45 minutes. Remove the foil and allow to bake for 15 more minutes, or until the corn flakes are lightly browned and crispy.

  • Serve warm, or at room temperature.

  • This dish can be made in advance. Just assemble the casserole, cover, and refrigerate. Bake before serving.

  • *Be aware that some brands of corn flakes contain D3 which is derived from sheeps wool. Read the labels before purchasing.
