What Type Of Lentils Are Best For Lentil Soup

Dried lentils are best for lentil soup. You can use most types of lentils for this recipe brown, green, red or yellow, though it will affect the colour of the soup. Ive used green lentils, pictured below.

The only type of lentil I do not recommend is Puy Lentils because they hold their shape and dont soften like other lentils.

Can you used canned cooked lentils?

Yes you sure can, and directions are provided in the recipe notes. But its better made with dried lentils because of the texture in the soup, theres only 10 minutes difference in cook time and its more economical!

Dont Forget A Drizzle Before Serving

This is the last opportunity to add any more flavor to the soup a drizzle, dollop, or stir-in can change the whole dynamic. If you want a soup thats extra creamy, stir in crème fraîche, sour cream, or Greek yogurt. A spoonful of pesto adds herbs, garlic, cheese, and sometimes a nutty element. Even a dash of balsamic vinegar can add a sweet and tart moment.

Condensed soup doesnt have to be boring! Easily dress up a can of tomato soup with ingredients you have in your pantry.

Today, Im presenting you with a recipe that was truly born out of my college-student status . As with many American children, I have been eating grilled cheese sandwiches and tomato soup since I could handle solid food. Its convenient, easy, filling, and delicious.

But sometimes, it can be a bit boring. Lets face it, its simply a can of tomato puree and milk or water, depending on your preference. After a year of to-go Campbells cups of soup, I decided that I could no longer consume this boring tomato stuff as is, so I gave it a serious makeover.

Start by combining one can of tomato soup with a can full of milk, as you usually would. Were not using water here. I usually use 1% milk, but if you arent calorie conscious and have it on hand, of course it would be even better with half and half or heavy cream.

Now heres the fun part: add garlic powder, onion powder, cayenne pepper, Italian seasoning, salt, and pepper. Taste and adjust. Let simmer for 10 minutes or so to release all that flavor.

Pour into bowls and top with a little bit of parmesan cheese and some fresh basil. Ta da! You are no longer eating boring old tomato soup.

Easy Ways To Dress Up A Can Of Tomato Soup

We always seem to have a few extra cans of tomato soup kicking around our cabinets. While nothing is better than a hot bowl of the stuff with a grilled cheese sandwich, our recent Tomato Soup Taste Test left us thinking that when the grilled cheese is missing, that store-bought soup needs a little…help. Here are 12 creative add-ins to doctor up a classic.

  • Add a can of diced tomatoes, a bit of cream, and torn fresh basil leaves.

  • Swirl some red wine vinegar into the soup and serve with a stack of mozzarella and fresh basil leaves on a toasted baguette.

  • Add a drizzle of pesto and finish with toasted pine nuts and croutons.

  • Add a teaspoon or two of Thai red curry paste and some cooked rice, then top with cooked shrimp.

  • Rub a slice of bread with raw garlic, top with Gruyere, broil until cheese melts and bread is toasted, then float on your soup.

  • Add a teaspoon or two of sherry to the soup, then pour it over cooked farro, top with baby spinach, and crumble in goat cheese.

  • Sautee some chopped bacon and onions and set a little bacon aside. Pour the soup into the saute pan, add some cream, then pour soup into a bowl and garnish with reserved bacon.

  • Sautee bell peppers and onions, add the soup and a big squeeze of sriracha. Top with a fried egg and serve with crusty bread.

  • Sautee onions, garlic, and slivered kale until tender. Add to the soup with a big squeeze of lemon. Top with shaved Parmesan.

    How To Make Lentil Soup From Scratch

    • Sauté your onion, garlic, carrots and celery over over low heat for almost 10 minutes. Take your time here the lower the heat, the longer you take, the more these will transform to create an incredible flavour base for the soup!

    • Add everything else other than the lemon

    • Simmer 35 minutes until lentils are soft and

    • Finish with a dusting of zest and spritz of lemon.

    A hint of lemon earthiness from the zest and touch of freshness from the juice just jazzes up the soup and takes it to that next level!

    Youll find that the lentils mostly breakdown and naturally thicken the soup. But what I like to do to get a really luscious creamy texture is to give the soup a quick whizz with a blender stick to puree SOME but not all the lentils.

    That way you get the benefit of both worlds creamy soup with soft bits of lentils. YES!

    Add corn flour : This is an old method to increase density of any soup. In case of increasing thickness of your tomato soup it works greatly. I do prefer to add corn flour whenever I want to adjust thickness of such tomato-soup. It helps to maintain consistency in this tomato-soup and brings nice shine in soup also. But do not add corn flour directly to the soup. Take half cup of warm water and add flour to that warm and mix properly then add it to soup. This process helps to maintain consistency.

    Add boiled potatoes : This another easy method to increase thickness of any soup. Some people prefer it as it is always available in any household and easy to mix in any soup. You need to boil potatoes and mash it before adding to soup. Use hand blender to maintain consistency in your soup or just a manual masher if you are in hurry.

    Add tomato residual : In most cases we remove tomato residual from soup but after extracting its juice still it contains some nutrition value. So better you can blend it further and make smooth puree and add it to soup and boil for another few minutes.

    Use curd in tomato soup : If you prefer extra sour soup then you can thicken tomato soup by adding curd too. So take curd according to your need and blend properly in mixer grinder and add it to tomato-soup.

    Use Tomato Paste For Intensity

    For the most intense tomato flavor, include a couple tablespoons of tomato paste. To get the most out of it, add it to the pan when aromatics like onion and garlic are softened, but before adding the tomatoes. Let the paste cook, stirring frequently, for a few minutes, or until it starts to darken in color. Be sure to scrape the bottom of the pot with a wooden spoon once youve added the tomatoes and any liquid to get all the caramelized brown bits of flavor off the bottom and incorporated into the soup.

    Time for another Fashion Friday, and today were introducing our first Food Makeover. Sounds fun, eh?

    Today I wanted to throw out a few quick tips to help in the canned soup aisle namely, with the soup of the tomato variety.

    I am all for the straight up Campbells Tomato Soup, no frills involved, especially on a cold day. Of course, I need my handy grilled cheese to accompany. However, after visiting Zupas more times than I can count, I received a little inspiration when I came across their Tomato Basil Soup. I thought, hey, even when Im in a rush, I can pull these little tricks off to make my already good canned soup taste totally gourmet!

    Lets get started!

    1) Cream or Milk

    Campbells even clues you in on this one on the side of the can, it says that you can substitute the can of water for milk. Voila! Creamy goodness. However, you will notice that the soup may separate a little bit. A higher fat content in your dairy will help mitigate this. What Ive realized that I prefer is to go water, and then just add a couple tablespoons of heavy cream to give it a nice creamalicious finish

    2) Basil

    3) Orzo Pasta

    4) Sharp Cheddar

    5) More Tomato!

    How To Make Tomato Soup For Canning

    Creamy Slow Cooker Tomato Soup with Gnocchi

    Once you have a good recipe, made for putting in jars, the process is pretty straightforward:

    • cook vegetables until very soft
    • puree the vegetables
    • reduce the soup
    • can it!

    I used a high powered blender to puree our cooked tomatoes and onion. There were only a few small tomato bits left after blending so I didnt bother straining my soup.

    If you have a blender that doesnt sufficiently chop up tomato skins, you might want to strain the soup before seasoning and reducing it. Alternatively, use a food mill to puree the tomatoes and get rid of the skins.

    Tomato Basil Soup Serving Suggestions

    When youre ready to eat, garnish your tomato basil soup with fresh basil leaves. If you want to add something for crunch, pile on a few homemade croutons or roasted chickpeas. A drizzle of olive oil or some freshly grated Parmesan cheese would be delicious too.

    Enjoy the soup with homemade focaccia or good crusty bread for lunch, or pair it with a sandwich, salad, or pasta for a heartier meal.     The best part about this tomato basil soup recipe is how simple the ingredients are. Were using all fresh ingredients that still create an incredible flavor and texture. This tomato basil soup is wonderfully creamy without any cream or dairy ! Heres what youll need:

    • Fresh tomatoes: tomatoes helps them to sweetened and slightly caramelize leading to a sweet, rich tomato soup flavor.
    • Garlic: lets not forget about how delicious roasted garlic is. The sweet, lick-your-finger good flavor is essential to this recipe and its easy to roast right alongside the tomatoes.
    • Fresh basil: basil has a slightly sweet flavor and should be added to the recipe before serving, as too much heat can remove the flavor of it and sometimes turn it slightly bitter. This herb also helps to cut the acidity of the tomatoes.
    • Onions: this was one thing I did that was a little different was the addition of caramelized onions! The sweet onions are caramelized, then blended into the soup. AMAZING!
    • Additional soup add-ins: I like to use vegetarian broth, but feel free to use water if youd like. Youll also want some dried oregano and plenty of salt & pepper.

  • You can use fresh or canned tomatoes, I have used both with great results. If using fresh, start by dropping the scored tomatoes in boiling water to peel them easily.
  • Then, we develop some flavour by sauteeing some onions, just until translucent. The flavour should be mild no browning.
  • Add some flour and cook out the starch, then whisk in milk, tomatoes, baking soda and a bit of sugar. The baking soda keeps the acid from curdling the milk in addition to mellowing out the flavour. The sugar enhances the sweetness of the tomatoes.
  • Simmer 10 minutes or so, then puree with your blenderalternatively, an immersion or regular blender will also work. It couldnt be simpler or faster.
