Potatoes: You can use any type of potato, but we highly recommend using Yukon Gold potatoes. Theres no need to peel them, and when cooked, they are buttery and almost melt in your mouth. We use Yukon Gold potatoes to make mashed potatoes and these crispy roasted potatoes, too. If you cannot find them, baby red or white potatoes, as well as russet potatoes, will work.

Veggies: Sure this is potato soup, but we love to add a few cups of extra veggies. Onions are a must, carrots add color and some sweetness, and chopped celery add flavor and texture.

Butter and Flour: Its the combination of butter and flour that thickens the soup. We like to use unsalted butter for this and then adjust salt to taste when making the soup. That said, salted butter will work if that is all that you have. If you need the soup to be gluten-free, no problem! Weve added tips for omitting the flour in the recipe below.

Stock/Broth: For the most flavor, use a good quality chicken stock from the store or use homemade. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since it usually has more of a backbone, we like to buy boxed bone broth .

    • If you like a completely smooth, creamy potato soup you can fully puree it. I like this soup best when its partially pureed so that there are a few bite-size chunks of potato and a thick, creamy broth. Use an immersion blender to partially blend the soup or transfer half of it to a counter top blender. Alternatively, you can use a potato masher to mash some of the soft, cooked potatoes if you dont have a blender.
    • Potato soup is best when loaded with toppings. If youre looking for a baked potato soup that just means that you add classic baked potato toppings to your soup.     When I set out to make the best homemade potato soup recipe, I had high expectations. I wanted to create an easy potato soup made with simple ingredients that are easy to find. I wanted a creamy yet lighter potato soup that you could make with or without bacon.

    It took a few tries, but Im excited to report that this is the perfect cozy, comforting, yet healthier potato soup recipe. Its easy enough to make on a weeknight.

    Or, you can make it ahead on the weekend and serve it for lunches or dinners throughout the week. This soup reheats well and will last for 3-4 days in the refrigerator. I havent yet tried freezing this soup but I think it would freeze and defrost well.

    • Use the right potatoes. For loaded baked potato soup, Yukon gold works best because theyre less grainy and create a creamier texture.

  • After around five minutes, add tinned chopped tomatoes to the mixture, along with vegetable stock and tomato purée . Continue to heat the pan at a medium-low heat, adding salt to taste.
  • Wash and scrub your chosen potatoes in the sink while your tomato soup-base is cooking. Cut the potatoes into 3x3x3cm pieces . Add them into the tomato liquid with soaked green lentils .
  • Continue to cook the soup at a low heat. In order to make sure that the potato soup remains firm one , youll need to test the consistency of the potatoes every so often as they cook, as well as making adjustments to taste with pinches of spice and salt whenever you want.     • Cheese: for more flavoring use an Extra Sharp Cheddar, for a more mild flavoring use a Sharp Cheddar.

    How To Make Creamy Potato Soup

  • Peel and roughly chop the potatoes that you have decided are the best potatoes for soup. Place them in a sauce pan. Pour boiling water over them, making sure that they are all covered by hot liquid. Place the saucepan on your hob. After that bring the potatoes to the boil. Then then let them simmer at a medium heat until soft.
  • While your potatoes are boiling. youll need to get started on your soups base flavours.
  • Fry a diced white onion with crushed garlic cloves in an oil of your choice until golden.
  • Then add leek coins .
  • You can also to add chilli and salt to taste.
  • Allow the mixture to sweat for 5 minutes on a low-ish heat, and then pour in your single cream .
  • Sprinkling in nutritional yeast liberally, continue to heat the mixture for another five minutes, before removing from the cooking ring.
  • Once your potatoes are fully cooked, drain them, and combine them with the mixture of cream and vegetables. Use a hand-held food processor to cream the potatoes thoroughly, making sure that there are no lumps.
  • Depending on the viscosity of your soup, youll probably need to add some water to make the soup properly souplike: add as much as needed to make the mixture properly liquid. Continue to taste and season the food as you stir the water through on a high heat, before serving.
