Ground Beef

Onion – I use a yellow onion but you could use white onion or sweet Vidalia onion if wanted.

Beef Broth – Recipe has been tested with two cans reduced sodium beef broth + one can regular beef broth. If you use all 50% reduced-sodium beef broth you may need to add some additional salt at the end depending on preference. If you use all full salt beef broth then you may need to not add the additional ½ teaspoon later in the recipe.

Petite Diced Tomatoes

Spaghetti Sauce – Make sure it’s one that you love! I always use a more normal flavor of spaghetti sauce like tomato & basil or traditional.

Sliced Celery & Carrots – I like to use baby carrots for this recipe because there is no need to peel them and they are already small in size so all you have to do is slice them.

Kidney Beans – Dark or light kidney beans will work fine. I use light kidney beans cause that’s what I prefer.

Cannellini Beans

Ingredients: What Is In Pasta E Fagioli Soup

The traditional Italian recipe is usually made with beans and pasta, flavored with olive oil, garlic, onion and tomatoes. However, there are many regional versions of pasta e fagioli and some use greens like Tuscan kale , while others might include sausage, ground beef or bacon. The main difference between pasta fagioli vs minestrone is that the latter uses more vegetables and is soupier.

  • Beans: White beans such as cannellini or navy beans or larger white beans are typically used but some versions feature borlotti beans. Canned beans are used and we opted for two different sizes.
  • Pasta: Use a small variety of pasta such as elbow macaroni, ditalini, or ziti.
  • Vegetables: A traditional soup base of onions, carrots, celery and garlic gives this version plenty of flavor and also adds extra nutrients. Tuscan kale or cavolo nero is a great nutritious addition and can be replaced with regular curly kale, collard greens or Swiss chard.
  • Flavors: You can use any Italian/Mediterranean herbs here such as oregano, rosemary or thyme we used an Italian herb mix. Salt, pepper and a little chili, lemon juice and good olive oil also add a lot of flavor. Our little addition is roasted pickled red peppers, which are optional but add a little tang and sweetness these are not in the traditional version! Plus, a good handful of fresh parsley to finish the dish.
  • Liquids: All you need is vegetable stock , canned crushed tomatoes and extra water.

What Beans Can I Use In Pasta Fagioli

Cannellini beans are used in many traditional Italian dishes . The version served at Olive Garden, which is quite popular, is purportedly cooked with white and red kidney beans, although it is obviously a more Americanized version of the dish. Everything boils down to personal choice, along with the availability of ingredients at your local grocery store or in your own kitchen. Other beans that you may use in place of the kidney beans in this recipe are:

  • Navy beans, Great Northern beans, baby lima beans and chickpeas are some of the legumes that are commonly used in cooking.

Cook each step according to the original cook times specified in each stage of the recipe, as detailed in the following directions: . However, the following adjustments need be implemented: The beans and pasta should be omitted from this recipe. 2 pounds of ground turkey should be used in place of 1 pound. Remove one cup of the entire liquid from the recipe. To make the zucchini slices, cut two medium-sized zucchini in half lengthwise and quarter each slice lengthwise.

After that, turn off the heat source.

  • For starters, dont include any meat. Another 14.5-ounce can of beans that has been drained might be added. Additionally, veggie stock can be used for chicken stock. It would also be necessary to exclude the cheese in order to make it totally vegan.

  • Simmer the soup with a Parmesan rind for even more flavor in the pot. Remove the rind before serving.
  • Include extra fresh herbs, such as basil or oregano, for even more fresh Italian flavor.
  • Don’t overcook the noodles or they will become mushy in your soup. Add them to the pot just before you’re ready to serve.
  • The total cooking time for the pasta will depend on the size and shape that you choose. Ditalini typically needs about 10-15 minutes in the simmering broth, but keep an eye on it and turn off the heat when the pasta is just barely tender. It will continue to soften and plump up as it sits in the hot soup.
  • Taste and season as you go. The total amount of salt necessary will vary depending on the saltiness of your broth, and on personal preference. Add extra salt for more flavor, and feel free to increase the other herbs and seasonings as well.
  • Garnish each bowl with plenty of grated Parmesan cheese for the best flavor. Extra fresh parsley or other herbs are also a delicious finishing touch.
  • Is pasta fagioli soup healthy? Yes! This dish combines filling vegetables and protein in one bowl. Each cup of the soup has about 245 calories, 5 grams of fiber and 16 grams of protein.

If You Want To Freeze The Soup Or Store For More Than One Or Two Days Omit The Pasta Until Warming To Serve

When refrigerated for an extended period of time, ditalini will become mushy, just like any other pasta-based soup. The fact that leftovers may be kept for a day or two is not a significant problem. However, if you want to save the pasta for a longer period of time, we recommend cooking it separately and storing it in the refrigerator until ready to serve. While the soup is heating up, add the pre-cooked pasta to the pot and youre done! Your soup will have perfectly cooked al dente pasta in it.

Can I Make Pasta Fagioli With Dried Beans

Yes, it is possible! In fact, some chefs claim that the greatest pasta fagioli is cooked with dried beans rather than fresh. Heres how to go about it:

  • Using a half-pound of dried great northern beans, rinse and pick over them, then soak them overnight before using them. When its time to cook the beans, drain and rinse them thoroughly. Continue to follow the recipe exactly as instructed
  • Keep in mind that soaking the beans will make them more delicate, and you may need to add a little more water if they soak up too much water during the cooking process. Predict that the dry beans will take between 20 and 30 minutes to cook at the very least.

    How To Make Pasta Fagioli

This soup is really simple to prepare! And, owing to the canned beans, it cooks very quickly while still tasting like you spent all day simmering it.

  • Cook the sausage until it is done. Heat a tablespoon of olive oil in a Dutch oven, or a big deep pot, over medium heat until shimmering and fragrant. Cook the sausage, breaking it up into crumbs with a wooden spoon, until it is cooked through. It should take around 5 minutes to heat through completely. Afterwards, remove the cooked sausage to a platter and put it aside while you prepare the Aromatics and Tomato Paste. Then, in the same saucepan that you used to cook the sausage, heat the remaining tablespoon of olive oil until shimmering. Cook for 5 minutes, stirring occasionally, after which add the onions, celery, and carrots. Cook for 20 seconds, or until the garlic is aromatic and begins to become translucent, after which remove it from the heat. Add in the tomato paste and mix well. Season with salt and pepper, then add the other ingredients and combine well. Combine the drained and rinsed beans, diced tomatoes, tomato sauce, and broth in a large mixing bowl. Stir in the sugar, rosemary, herbs, and the cooked sausage with a wooden spoon until everything is well combined. Increase the heat to a high setting and bring the soup to a rolling boil. Once the water has come to a boil, add the pasta and decrease the heat to medium. Cook for 8 minutes, or until the pasta is al dente
  • Serve immediately.
