What Noodles Are Best For Chicken Noodle Soup

If you truly want a hearty chicken noodle soup, its a must to use those fat plump homemade noodles. My mom always made her own. Sadly to say, Ive never tried making them, so I purchase homestyle noodles from the freezer section at the grocery store.

Theyre thick, theyre chewy, the are already cooked and very reminiscent of homemade.

As far as dried noodles, if you can find Kluski noodles, thats also a very good choice. And specialty markets, and Amazon will have dried Amish noodles that also work very well.

Please try not to use dried thin egg noodles from the packaged pasta aisle at the market, they just dont have that same homemade comfort food feel. Theyre thin and the end result will have you feeling more like youre eating canned soup. With that said, they will work for this soup.

  • Brown the Chicken. Set a large 6-8 quart soup pot over medium heat. Add the oil. Place the chicken skin-side down in the pot. Brown the chicken skin.
  • Saute the Vegetables. Place the onions and garlic in the chicken fat. Stir and saute for several minutes. Then stir in the celery, carrots, and thyme and saute another minute or two.
  • Simmer the Soup. Add the chicken pieces, chicken broth, bay leaves, and turmeric to the pot. Cover and simmer.
  • Now the Noodles. Stir the egg noodles into the soup and simmer another minute or so, until the pasta is cooked.
  • Shred the Chicken. Pull out the chicken and place it on a cutting board. Shred the chicken with a fork, and stir the chicken back into the soup.

    • 1 ¾ Pints Water
    • 1 Chicken or Vegetable Stock Cube
    • 2 Skinless And Boneless Chicken Thighs
    • 2 Medium Sized Carrots
    • 4 Spring Onions
    • 10 Medium Sized Mushrooms
    • 2 Teaspoons Soy Sauce
    • 1 Teaspoon Ground Ginger
    • ½ Bag Rice Noodles
    • 1 Garlic Clove or 1 Teaspoon Garlic Puree
    • Pinch Chilli Flakes or Chilli Powder

    How To Make Homemade Chicken Noodle Soup:

    Make Homemade Chicken Stock ahead of time using a rotisserie chicken, or choose a good brand of store-bought chicken stock.

    Sauté veggies. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add garlic and cook for another 30 seconds.

    Add chicken stock or broth. Season the broth with salt , pepper, and a tiny pinch of rosemary, sage and crushed red pepper. I may add another small spoonful of better than bullion chicken or chicken bouillon powder as well, if needed, to taste.

    Add noodles and boil. Once boiling, add noodles and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them! Remove the soup pot from heat as soon as the noodles are just barely tender, as they will continue to cook off of the heat.

    Add chicken. Add chicken meat from the rotisserie chicken. Taste the broth again and add more seasonings, if needed.

    Serve. I love to serve this healthy soup with this easy No Knead Bread or homemade rolls!

    I Want Noodles In My Chicken Soup What Do I Need To Know

    There’s nothing more comforting than homemade chicken noodle soup! You can add the noodles to the pot in the last 10 minutes or so of cooking however, I usually like to cook my noodles separately and then add them to the serving bowls individually. There are a couple reason’s I do it this way:

  • It helps make sure the texture of the soup is at it’s yummiest if you need to store the leftovers in the fridge.
  • This recipe makes a lot of soup so I like to freeze some of the leftovers freezing noodles can alter their texture.
  • As for the types of noodles you can use in chicken soup any kind will work great! Personally, I prefer flat wide egg noodles, or spaghetti that’s been broken into pieces.

    • Low sodium-chicken broth if you have homemade chicken broth it will make the soup even better. I like to keep a couple bottles stocked in the freezer. Store bought does work great too though.
    • Fresh herbs thyme, rosemary, sage and parsley
    • Egg noodles this is the quick cooking kind used here not the old fashioned. You can however use old fashioned but youll need to increase the cook time .
    • Cooked rotisserie chicken you can buy this a day or two ahead and just store in the refrigerator.
    • Olive oil youll only need a little for sautéing. I dont recommend a different type of oil the flavor of olive oil is perfect in this soup.
    • Salt and pepper as always add to taste. Remember you can always add more salt later but you cant take it out once added so I like to start light.
    • Lemon this just brightens up the soup and it pairs amazingly well with chicken but if you dont prefer to have the the very light tang you can omit it.

    A big saucepan should be used to bring chicken stock, a garlic bulb, some peppercorns, and a bay leaf to a boil.Place the chicken, onions, celery, and carrots in the slow cooker, and stir to combine everything.pour in the chicken broth, then bring to a boil.The homemade chicken noodle soup that I make has a luscious relative in the form of this creamy soup.

    Begin by dicing one onion and mincing three cloves of garlic. Place them in a large pot with 2 Tbsp olive oil and sauté over medium heat until the onions are soft and transparent.

    While the onion and garlic are cooking, clean and slice 1/2 lb. carrots and 1/2 bunch celery . Add them to the pot. Continue to sauté the onions, carrots, and celery together. Youll only use half of a one-pound bag of carrots and half of a bunch of celery, but the rest doesnt need to go to waste. You can clean and slice the rest and freeze them to make another batch of soup later. I do it every time. It takes just a few more minutes and is super convenient later!

    Remove the skin from two split chicken breasts . Split chicken breasts come with bones and rib meat, both of which add a LOT of flavor to the broth. They will also sometimes be labeled bone-in chicken breast with rib meat.

    Add the chicken breasts to the pot along with 1 tsp dried basil, 1/2 tsp dried thyme, 1 Tbsp dried or fresh parsley, 1 bay leaf, and some freshly cracked black pepper.

    Add eight cups of water, cover, and bring up to a boil over high heat. As soon as it reaches a boil, reduce the heat to low and let simmer for one hour. Make sure that you dont turn the heat down so low that it stops simmering. It needs to simmer the whole time.

    After an hour, it will look something like this. Pull the chicken out of the pot

    Use two forks to pull the chicken from the bone and shred it into bite-sized pieces.

    • Dont skip ingredients . Together they all build the best tasting soup.
    • Be sure to simmer veggies long enough that they become tender. I like to test a few. No one wants a chicken soup with crunchy carrots.
    • Cook noodles until just tender. The broth mixture will be hot and it will continue to cook the noodles off heat.
    • Simmer the soup with some of the leftover rotisserie bones. If you arent used to cooking with bones it may seem strange but they actually add so much flavor. I like to add some to a cheesecloth and tie closed with kitchen twine then remove once finished cooking.
    • I know the soup doesnt simmer long but you still get a lot of flavor from the bones just in that short period of time especially if theres some browned skin on the chicken .
