    Even with the whole making-your-own broth part, this soup is so very weeknight dinner-worthy. The ingredient list is short and very little is needed to make this earthy magic happen. The depth of flavor achieved by just letting the mushroom, shallot, and garlic swim around together for a while in a little wine, broth, and cream bath while things thicken up into a silky little soup base is ah-may-zing.

    Crock Pot Creamed Chicken is tender, juicy and full of flavor. Cream cheese and cream of mushroom soup create a rich and creamy sauce for the boneless chicken breasts which cook up so tender, you dont even need a knife to cut them. A packet of Ranch seasoning mix provides plenty of flavor. I like to add in some fresh mushrooms to compliment the flavor of the mushroom soup. Serve over rice for an easy weeknight meal.

    The crock pot is my favorite way to cook chicken. It comes out tender and juicy every time which is really hard to accomplish when cooking boneless chicken breasts using other cooking methods.

    To make Creamy Crock Pot Chicken, I like to first cook the chicken with the ranch seasoning and just a bit of water. Since crock pot recipes tend to get watery and I like a thick and creamy sauce, after 3 hours I discard about half of the liquid. The chicken still has plenty of ranch flavor, but the sauce wont be so watered down.

    Then I add the mushrooms, cream cheese, and cream of mushroom soup and cook on LOW for another 1 to 1 /2 hours. The cream cheese gives the sauce so much richness and creaminess, and I dont know about you, but a packet of Ranch seasoning on just about anything tastes great to me.

    A packet of Italian Salad Dressing mix can be used instead of Ranch, and feel free to use cream of chicken soup instead of mushroom.

    I feel certain a can of cheddar soup would be delicious as well. Some cheese flavor is always good.

    Creamy Mushroom Soup Recipe

    Creamy mushroom soup that you can make ahead for convenience and for use in recipes.

    INGREDIENTS

  • 64 ounces of chicken or beef broth
  • 4 cloves garlic
  • INSTRUCTIONS

  • Melt the butter in a large pot on low heat. You will want to use a quite large pot because the mushrooms will take up a lot of space at first, but they will soon cook down.
  • While the butter is melting, chop up the onions. Chop into bite-sized pieces- smaller if your family doesnt like onion pieces. Toss them into the pot with the butter.
  • Chop up the garlic or use a garlic press and toss it in with the onions.
  • While the onions are cooking, chop up your mushrooms. If your family hates the texture of mushrooms, cut them small. Leave them bigger if you dont mind the texture. When the onions start to turn clear, toss in the mushrooms.
  • Cook down the mushrooms and onions until it begins to look like soup. This could take quite some time. Our mushrooms took about an hour to cook down to soup texture. Keep stirring and keep the heat low enough to prevent the butter from burning. You may need to add more butter if the mushrooms soak up all of the butter. Eventually, the mushrooms will release their moisture and the onions will be nearly invisible. When this happens, move on to the next step.
  • Add about 4 tablespoons of flour to the mushroom mixture. You can use less if you like a thinner soup. Mix the flour in and cook for about 5 minutes.

    The Best Way To Prep Fresh Mushrooms For Soup

    Classic Cream of Mushroom Soup

    Mushrooms are porous and absorb water if you rinse them too far in advance, but when you plan to cook them in a soup, you dont need to carefully remove debris one mushroom at a time!

    The fastest and easiest way to prep them is to swish them around in a large bowl of cool water. The dirt that clings to them should sink to the bottom of the bowl. Use your hands to transfer them to a layer of paper towels to drain. Do this just before you are going to make the soup.

    You can slice the mushrooms with a knife, but a food processor is the quickest way to get your soup going. You are going to purée the soup at the end of cooking, so perfectly sliced mushrooms are not a prerequisite!

    3. Next, heat a heavy saucepan or pan over low to medium-low heat. Melt 2 tablespoons of butter in the pan.

    4. When the butter has almost melted add bay leaf or tej patta . Keep the heat low and be careful to not burn the butter.

    5. Sauté until the bay leaf becomes fragrant, only for about 2 to 3 seconds.

    6. Add cup finely chopped onions and ½ teaspoon minced or finely chopped garlic .

    7. Mix and stir.

    Best Mushrooms For Creamy Mushroom Soup

    The flavor of mushrooms is very pronounced in this soup, and it all starts with fresh cremini mushrooms

    Cremini mushrooms are simply more mature white button mushrooms, with a brown color and firm texture with even more growing time they become meaty portobello capsbut all three are the same variety. Because they are more mature than white button mushrooms, they pack a lot more depth of flavor.

    A small amount of dried porcini mushrooms reconstituted in boiling water really helps intensify the mushroom flavor. The soaking water gets diluted and added to the soup and the drained mushrooms simmer in the vegetable broth. If you cant find dried mushrooms, just add another 8 ounces of fresh mushrooms to the mix.

    Alternative mushrooms: Cremini and dried porcini mushrooms are my favorites to use in this soup, but you could swap out white button mushrooms or portobellos for them. As mentioned above, if you want to skip the dried mushrooms, add about 8 ounces fresh mushrooms for that extra flavor boost and be sure to give them plenty of time on top of the stove to evaporate excess liquid and allow the mushrooms to turn a deep golden brown before adding the stock.
