The Best Vegetables To Use & Ingredient Notes
Onion: If you dont like or cant eat onions, feel free to skip them in this recipe.
Carrot: Whole, fresh, chopped carrots yield the best flavor for this soup. You can use baby carrots if thats what you have on hand. They are typically not as sweet, but will still work just fine.
Celery: Chopped fresh celery works best.
Potato: I like peeled Russet potatoes because they feel the most traditional, but waxy yellow, red or even sweet potatoes would also work well.
Green beans: Use fresh green beans, or frozen green beans that have been defrosted.
Fire roasted diced tomatoes: I like the smokey flavor of fire roasted tomatoes, but regular diced tomatoes will work well, too.
Tomato paste: Adds depth of flavor, so dont skip it! Freeze extra canned tomato paste for the next time you make this soup or any other recipe that calls for tomato paste.
Bay leaves: While not absolutely necessary, bay leaves add extra flavor to the broth.
Smoked paprika: Adds a nice smokey note to the finished soup. If you dont have smoked, sweet paprika can be substituted.
Garlic powder: Use 2 minced fresh garlic cloves instead of garlic powder if you prefer.
Vegetable stock: Substitute homemade, or chicken stock .
Corn kernels: Use fresh or frozen corn thats been defrosted.
Peas: Use fresh, or frozen peas that have been defrosted.
Kosher salt: Look for kosher salt with the regular iodized salt at the grocery store. It has a subtler flavor. Use less iodized salt if thats what you have on hand.

In this recipe were using simple hearty vegetables that can stand up to a longer cook time, such as carrots, potatoes, and celery.
Added to that list is flavorful diced tomatoes, tomato paste, and vegetable stock.
Just add everything to a crockpot, cover, and cook on high for 4-5 hours .
Then, add tender vegetables at the end, such as corn and peas, which dont need a long cook time.
Dont forget to taste for seasoning and add additional salt to taste!

Getting your kids to eat vegetables shouldnt have to be a fight. Instead of focusing on what my son doesnt like, I like to focus on the vegetables that he enjoys. Ever since he was a baby, my son liked to eat peas. This love of peas inspired my very first blog post: More Peas, Please opens in a new tab.
Four years later, he still enjoys peas. He also now likes carrots. And, like so many kids he also loves noodles. So, lets make a soup out of that! My son prefers cooked vegetables to raw, so making soup is the perfect solution.
For this simple soup all you need are 6 ingredients and about 12 minutes .
Method
Start by boiling the vegetable broth. While bringing it to a boil, chop the carrots into small round pieces. Next, finely chop the onion.
At the 2-minute mark, add the frozen peas and stir. When the timer beeps, the soup is ready. Ladle the soup into bowls and top it with a sprinkle of chopped fresh parsley. This soup serves 4.

Quick to put together and easy to make ahead , they also usually make large quantities which are perfect for leftovers. And in our house leftovers = lunch which means one less meal to think about!
I’m pretty sure easy soups and stews are go-to meals for you, too, which is why I’ve collected nine of our family’s tried-and-true recipes that you’d find regularly on our menus if you were to come to our house. They are all healthy and use real, whole food ingredients – though only seven or less – but their true staying power on our menus comes from the fact that they are all SO good!
For the purposes of this article, the definition of ingredients for these recipes includes only real foods but doesnt include spices, salt and pepper, or water, which tend to be standard in most recipes. Okay – ready to add some tasty recipes to your repertoire?
Healthy Cheesy Vegetable Soup
1. Heat water and bouillon in large pot over medium heat until dissolved.2. Add carrots, celery, onions and potatoes.
3. Bring to a low boil and cook 15 minutes.
4. Add broccoli and cauliflower.
5. Bring to a low boil and cook 15 minutes.
While everything is cooking, I like to make the sauce.
1. Mix flour, salt and pepper in small bowl.2. Melt butter in saucepan over medium heat.3. Add the flour, salt and pepper to the butter and mix until blended 4. Add the chicken broth, a little at a time and mix until blended 5. Add the milk, a little at a time and mix until blended.6. Bring to a low boil over medium-low heat until thickened
7. Once the sauce is thickened, remove from heat and add the sour cream and cheese.
8. Mix until the cheese is melted.
9. Add cheese sauce to the rest of the soup and stir until combined.
10. In a small bowl, combine cornstarch and water until dissolved. Mix into soup, stirring frequently, until thickened.
