How To Make The Best Homemade Tomato Soup & Grilled Cheese
- In a stockpot or large pot, add about a tablespoon of olive oil and sauté diced onion over medium/high heat. Once onions become transparent and fragrant add the butter and stir. Once butter has melted add flour and stir until the onions look evenly coated.
- Add minced garlic and fresh sprigs of thyme stir for about a minute until fragrant.
- Pour crushed tomatoes, diced tomatoes, tomato paste and chicken broth into the pot and stir. *I LOVE San Marzano tomatoes and really strongly recommend them for the tomatoes in this recipe.
- Add sea salt, bay leaves, dried basil and sugar
- Once soup begins to simmer, lower the heat and cover the pot . Let the soup simmer anywhere from 15 to 30 minutes occasionally stirring so nothing is left to burn at the bottom of the pot.
- Remove from heat then take out bay leaves and sprigs of thyme. From there add in the cream and season with a bit of salt and pepper to taste! When ready to serve grate Parmesan cheese on top-Enjoy!

Tips For Crunchy And Golden Grilled Cheese Sandwich
The perfect grilled cheese sandwich is when the outside has a golden, toasted, almost crispy crust that, when bitten in, results in softer bread and melted cheese in the middle. Here are some tips for making perfect grilled cheese sandwiches.
- For a nice, golden crust, sliced white bread is the best to use on grilled cheese sandwiches. My favorite Island toasts are the Portofino European Bakery, or the Island Bakery premium white bread.
- If youve baked your own white bread or purchased an unsliced loaf for a sandwich, cut it to the same thickness as the store-bought sliced white bread. If you cut too thickly, the cheese will take a long time to melt and youll overcook the bread.
- Cover and coat the bread with butter to ensure that the entire slice turns golden brown as it bakes. Some people really like the toast to be toasted with mayonnaise instead of butter. That mayonnaise makes the bread yellow when its baked, but Im old and still prefer butter.
- Cook the bread in a skillet or griddle over medium heat. Moderate heat will ensure that the outside of the bread slowly browns, while the cheese in the center has a chance to heat up and melt.

Is Grilled Cheese And Tomato Soup Good For You
You maybe wondering if grilled cheese and tomato soup is good for you. One of the reasons why I love this recipe is we use fresh ripe tomatoes. Tomatoes are packed with lycopene which is an antioxidant.
The reality is though, this is a grilled cheese sandwich. It is not a salad sandwich my friends. It has cheese and the soup has cream.
But the way I like to think about this is all foods in moderation!
If you were eating a grilled cheese sandwich with tomato soup every day it is probably not the best method to manage your weight. But if you switch it up with some salads and other lunch ideas thrown in there then you won’t feel that you are depriving yourself. Live a little I say!
Plus I have put all of the grilled cheese and tomato soup calories in the recipe card, so you can read all about it!

You will never believe what I am about to tell you. I am just now, in my mid-thirties, starting to fall in love with Grilled Cheese Sandwiches and Creamy Tomato Soup. I KNOW! Where have I been all my life, right? Well if youve been following my blog for some time you have, more than likely, read a blog post where I discuss my moms, not-so-great, cooking growing up. My mom was an okay cook, but as we got older she could careless and had nothing left to prove about her cooking abilities.
But when I was younger, I remember my mom making me and my younger brother BURNT Grilled Cheese Sandwiches and gross canned tomato soup. Now, before I get reported to the Campbells Soup police, there is nothing wrong with that or any brands canned creamed tomato soup, but I do believe you have to add a little salt and pepper in there. My mom added nothing. Just warned up the soup.

Keeping this in view, what are the benefits of doing squats with weights?
Heavy squats dont just pack muscle onto your legs, they benefit your entire upper body

- They strengthen your core.
- Build muscle all over your body.
- Ups your metabolism to burn more fat.

Also Know, are weighted squats bad for you? Squats, when performed correctly and with appropriate supervision, are not only safe, but may be a significant deterrent to knee injuries. It forces an unnatural range of motion, which can actually lead to knee and back injuries, and research has shown its far less effective than the free weight, barbell squat.
Likewise, people ask, what muscles do weighted squats work?
A barbell squat is a push-type, compound exercise which works primarily your quadriceps, but also trains your glutes, hamstrings, and calves, as well as muscles in your lower back.
How many weighted squats should I do?
If your end result is to improve the strength of your lower body, then you should train and do squats every two days, or three times a week. Your goal should be 3 sets between 4 and 8 reps. Take at least 3 minutes to rest and recover between the squat sets.

Tips For A Thick Tomato Soup
Let the soup simmer and reduce the water to thicken, but if you want a thicker result, mix 1-2 teaspoons of cornstarch with a few teaspoons of water and stir into soup. Leave on low heat until thickened.
Alternatively, you can add some cubed potatoes to the onions and let the onions cook completely. The mixed potatoes will thicken the soup without adding any thickeners.
- Always freeze before adding ice cream. Let the mixed soup cool to room temperature. Transfer to a freezer-safe jar, box, or bag and seal. Freeze for up to 4 months. Thaw completely before adding cream and reheating.
- This soup can be made 3 days in advance. Store chilled soup in the refrigerator and reheat over medium heat before serving.

Take the butter out of the fridge to come to room temperature. Halve, peel, and mince the onion. Mince or grate the garlic. Finely chop the basil leaves, reserving a few small leaves for garnish.
Heat 1 tablespoon butter in a large pot over medium heat. Add the onion and garlic to the pot and cook, tossing, 5-6 minutes, until soft and slightly caramelized. Season with salt and pepper.
Add the crushed tomatoes, stock concentrate, 2 teaspoons sugar, and 1 ½ cups water to the pot. Bring to a boil, then reduce to a simmer for 7-10 minutes. Season with salt and pepper.
While the tomato soup simmers, make the grilled cheese sandwiches. Divide the cheese between two slices of bread and top with the remaining two slices of bread to form sandwiches. Spread the outsides of both sandwiches with 1 tablespoon butter. Heat a large pan over low heat. Add the sandwiches to the pan and cook 3-4 minutes per side, until golden brown and cheese is melted.
Remove the soup from the heat. Stir in the sour cream. If you have a blender or food processor, transfer the soup to the blender and pulse until almost smooth. If you dont have a blender, the soup will be just as delicious!
Make the balsamic mixed greens: toss the mixed greens in a medium bowl with ½ tablespoon balsamic and a drizzle of olive oil. Season with salt and pepper.

Tips For A Gourmet Grilled Cheese
You can make any type of grilled cheese to go with this tomato soup. But our favorite is this gourmet grilled cheese! Just a few small tweaks take this classic sandwich from good to great. Heres what to know:
- Use sourdough bread or another type of artisan loaf or crusty bread. Great bread makes the sandwich!
- Combine shredded smoked gouda and cheddar cheese. The hint of smoky cheese makes this sandwich taste incredible! Shredded cheese is great for a grilled cheese, because it makes the gooiest, meltiest interior .
- Add a sweet element. Pairing sweet with the savory takes it to another level! Try tomato, fig or apricot jam, or a thinly sliced apple or pear.

How To Make The Perfect Grilled Cheese
Butter your bread! I have seen people use olive oil or a combination of oil and butter, but I love to keep it simple and delicious with a little salted butter. I like to spread a little bit of butter on the outside of each slice of bread and top it with a sprinkle of garlic salt. My favorite garlic salt comes from Sprouts. Its got little bits of dried parsley in it as well.
Use good cheese! You want to use a low moisture cheese that will melt properly. Dont go for pre-sliced cheese since it often has preservatives in it that will keep it from melting properly. I used a combination of thinly sliced smoked cheddar, monterey jack and shaved asiago cheese for this grilled cheese. The smoked cheddar really makes it extra amazing, but a regular, sharp cheddar will work great as well.
Dont burn it! Keep an eye on your grilled cheese. They burn quickly so I like to just take my spatula and lift a corner of the sandwich every once in a while to keep an eye on it. If it is cooking too fast, and your cheese isnt melting, turn down the heat. I find that medium heat on a skillet or grill pan is perfect.
Choose your bread wisely I will often make grilled cheese just on whatever bread I have on hand, but it is extra special when made on sourdough. Make sure you slice the bread thinly so it cooks evenly, and you get the right bread to cheese ratio.
Grilled Cheese Sandwiches And Rustic Tomato Basil Soup
I have this fear that Ill run out of recipes to share since this blog is all about the foods I cook at home. And normal people dont cook a new recipe every time they make something. For those who do, Im thinking they just havent found their favorites yet? Once I make something I love, rest assured itll be in the rotation for a very long time.
And I wouldnt ever put up a recipe that I didnt stand behind and love 100%. So yeah, I worry a bit that Ill run out of recipes one day to share with you all. I realize this little fear of mine is pretty irrational, considering I have an enormous and growing list of foods that I cant wait to post. Plus, I find a ton of inspiration all the time and get wonderfully random cravings for certain foods all the time. So maybe its just a case of the food blogger syndrome? Well see, but all I know is that Im loving sharing my recipes and thoughts with you guys and I will always appreciate beautiful ingredients and putting them together in a way that makes me happy. With that combo, I think were good.
So lets move on to the recipe of the day already, huh? Because when I started writing this post I thought Id mention it sooner, but thoughts happened. Sorry about that, guys.
Ive always thought Id love to make a really good homemade tomato soup, but I never actually got around to it.
Keep moving, Bita.
