Creamy chicken enchiladas made with campbells cream of chicken soup and yummy Kraft shredded cheese!
Looking for a creative way to use leftover chicken? These kicked-up, easy-to-prepare enchiladas come out of the oven hot and bubbly for a flavorful dish the whole family will love.

1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1/2 cup shredded Monterey Jack cheese
6 flour tortillas , warmed
1 small tomato, chopped
1 green onion, sliced
1 can Campbell’s® Condensed Cream of Chicken Soup

Steps:

  • Heat the oven to 350 degrees F. Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
  • Stir 1 cup soup mixture, chicken and cheese in a large bowl.
  • Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side down in an 11 x 7 x 2-inch baking dish. Pour the remaining soup mixture over the filled tortillas. Cover the baking dish.
  • Bake for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion.

Add 1 package of Cheese to Chicken and cook just enough to start melting. Get baking dish and pour half of enchallada sauce so it just cover the bottom of the dish. Take Chicken mixture and divide evenly in to your Tortilla shells. Fold over and place seam at bottom of the dish. Take the rest of the enchilada sauce and pour over the dish.

Preheat oven to 350 degrees. Shred poached chicken and set aside. Heat rest of ingredients in saucepan and set aside. Spray 9×13-inch pan with Pam. Heat corn tortilla. Place chicken and sauce down middle. Roll and place in pan. Pour remaining sauce over top of enchiladas and top with cheese.

This enchilada dish is sure to be a new family favorite. It’s simple to put together and perfect for leftovers – if you’re lucky enough to have any!

1 can Old El Paso red enchilada sauce
2 1/2 cups shredded deli rotisserie chicken
1 1/2 cups shredded Cheddar cheese
1 package cream cheese, cut into 1/2-inch cubes
1 package Old El Paso fajita seasoning mix or 2 tablespoons Old El Paso taco seasoning mix
10 Old El Paso flour tortillas for soft tacos & fajitas

Steps:

  • Heat oven to 375°F. Spray 13×9-inch baking dish with cooking spray. Spread 1/4 cup of the enchilada sauce in bottom of baking dish.
  • In medium bowl, mix chicken, 1 cup of the Cheddar cheese, the cream cheese and seasoning mix with spoon, breaking apart cream cheese cubes. Spoon slightly less than 1/2 cup filling onto each tortilla. Roll up each tortilla tightly place seam side down in baking dish. Drizzle with remaining enchilada sauce. Sprinkle with remaining 1/2 cup Cheddar cheese.
  • Cover with foil bake 15 minutes. Uncover and bake 15 minutes longer or until bubbly and lightly browned.

In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese reserve remaining soup mixture. 3 c cheddar cheese, shredded
3 c monterey jack cheese shredded
4 c chicken cooked and chopped
2 c sour cream
1 can cream of chicken soup
2 can green chiles chopped
1/2 c onion diced
salt and pepper to taste
10 flour tortillas

Steps:

  • 1. In large bowl add 2 cups cheddar cheese, 2 cups monterey jack cheese, cooked chicken, sour cream,soup, chilies,onion,and salt and pepper. Mix well. Spoon about 1/2 cup of mixture off center of each tortilla, roll up and place seam side down in a greased 13×9 baking dish. I place what wouldn’t fit in the tortilla’s down the center of pan and then sprinkle the reaming cheese on top. Cover and bake at 350 for 20 minutes uncover and bake for another 10-15 minutes longer.
  • 2. let stand 10 or so minutes before serving if they can wait that long… Enjoy!!

My daughter gave me this recipe and if you are a cheese lover these are the type for you!

1 can tomatoes and chilies, diced
1 can fiesta nacho cheese soup
1 can cream of chicken soup
12 medium flour tortillas
2 c mexican blend shredded cheese

Steps:

  • 1. Rape your rotisserie chicken of it’s skin and bones. Break up your white and dark meat into bite size pieces in a large bowl.
  • 2. Add the soups, and diced tomatoes to your chicken and stir thoroughly.
  • 3. Lay out 10-15 corn or flour tortilla on your clean counter top and place an ice cream scoop size of mixture onto each.
  • 4. Roll up and place seam side down in sprayed cake pan.
  • 5. I make 12-15 of these placing 6 or 7 in each of two smaller rectangular cake pans. You can load of a larger cake pan with all, if you prefer.
  • 6. There will be enough leftover mixture to put some on top of each pan of tortillas. If not, you could also cover each with some enchilada sauce. I then sprinkle with shredded cheese using whatever I have, but shredded mexican mixture tastes best!
  • 7. Cover with foil and bake in a 350 oven for about 45 minutes. Serve warm with chips, salsa, guacamole and sour cream if you like.

If youre using fresh chicken breasts, youll first cook your chicken. I highly recommend this air fryer chicken breast recipe to make this step in the recipe go by quickly. Then, take two forks and shred the chicken up by poking and pulling apart the chicken breasts. Voila! Shredded chicken!

If you prefer the boil method, simply add 4 chicken breasts to a pot with 4 cups of chicken broth. Boil for 10 minutes or until center of each breast reaches 165*F. Then remove chicken from broth and shred.

You could also use a rotisserie chicken or canned chicken to cut down on your prep time. If you do this, still shred the chicken with the fork method until youve got bite size pieces of chicken to roll into your Creamy Chicken Enchiladas.
