Price and packaging The Nongshim Soon Noodle Soup comes in a light green cup. A 67 gram cup is priced at Rs 99/-. There is no disposable cutlery inside the pack. Apart from the noodles and dehydrated vegetables, the soup powder is packed in a separate sachet.

Upon opening the pack When we opened the pack, we could see a lot of dried vegetables like Chinese cabbage, green choy and carrots. The noodles did not have any other masala or powder on top. The soup powder is packed in a sachet separately. We got a distinct pungent cabbage and shitake mushroom aroma that is synonymous with Korean food.

How we made it We made the noodle soup according to the instructions given on the pack. We sprinkled the soup powder on top of the noodles and dried veggies. After adding hot water till the marked water line, we mixed it with a spoon and closed the lid.

After cooking Once we opened the lid, we noticed that the broth to noodle ratio was appropriate. The broth tastes and looks very delicate. The consistency of the soup is very thin, yet it coats the noodles very well. The vegetables and noodles rehydrate well and maintain a bite. The noodles do not become squidgy and sticky at all. The noodles are thinner and flatter in comparison to the usual desi instant noodle soups we get in India.

Verdict: Nongshims Soon Veggie Noodle Soup tastes super similar to your traditional instant ramen. Despite that, its incredible that this is a fully vegan product! The noodles taste good. The soup tastes like it was made from meat flavoring but isnt.

Theres a decent amount of vegetables but I wish there were more. This veggie noodle soup isnt spicy at all so dont worry about that. Although plain, this is a really good ramen for vegans and non-vegans alike!

  • Instant ramen noodles: you can buy them everywhere, make sure its vegan – just read the label.
  • Vegetable stock : I use better than bouillon vegetarian soup base no beef or no chicken flavour. This is a must for that Umami
  • Spices: garlic and onion powder
  • Chili garlic sauce: gives a bit of heat and depth of flavour to the dish, my go to sauce for spice!
  • Sesame oil: adds distinctive asian flare
  • Tamari: adds perfect saltiness can sub soya sauce , regular or lite or Braggs Liquid aminos
  • Green onions: for topping soup- important element!
  • Optional veggies and protein: mushrooms, Bok Choy, tofu, broccoli, etc

How To Make Easy Vegan Ramen:

  • Cook noodles according to package instructions with the 2 cups of water. Dont overcook 2-3 minutes is usually good. The noodles will continue to cook in the bowl.
  • While ramen is cooking add seasonings to your soup bowl: bouillon, chili garlic sauce, sesame oil and spices.

    How To Make Quick And Easy Vegetarian Ramen

  • Prepare the soup base. Heat the sesame oil in a large pot over medium heat. Add the garlic and ginger and cook for a couple minutes until soft and fragrant. Stir in the soy sauce and mirin and cook for another minute. Add the stock and bring to a simmer. Simmer for 5 minutes. Add the mushrooms and simmer for another 10 minutes.
  • Prepare the perfect soft-boiled eggs. Bring a small pot of water to a boil. Add the eggs and cook for exactly 7 minutes for a slightly runny yoke or 8 minutes for a soft yolk. Remove eggs from the pot and place in a bowl of ice water to stop the cooking process. After a few minutes, peel the shells off carefully and slice the eggs in half, lengthwise. Set aside.
  • Cook the spinach. Bring another pot of water to a boil. Add the spinach and cook for about a minute, until just wilted. Remove from pot and run under cold water to stop the cooking process. Drain and set aside.
  • Add noodles. Add ramen noodles to the soup base and cook for 2-3 minutes or according to package instructions. Then, add hot sauce, to taste .
  • Serve. Divide the soup into 2 large bowls. Top with an egg, spinach, carrots and green onions. Sprinkle with sesame seeds and serve immediately.

    Put down that cup of instant noodles. Seriously. Why settle for mediocre when you have the real deal… from scratch? Fine, there is an extra 15-20 minutes that will go to preparing the real deal, but in my books that is the definition of quick and easy. The extra time investment is soo worth the result. Freshly made, quick and easy vegetarian ramen is packed with fresh vegetables, noodles, and authentic flavours, and it’s ready in just 15 minutes. Get in my belly, now!

    I always have a few packs of dry ramen noodles in my pantry for emergency lazy meals like this one. You know, sometimes you are just too tired to cook. I have been there and, in fact, I am there on a regular basis…. The answer is quick and easy vegetarian ramen.

    And let’s set things straight. Lazy meals do not mean unhealthy meals. For some reason, ramen noodles seem to have racked up a bad reputation. I guess it’s largely due to the instant cup noodles kind. I mean, of course dinner out of a styrofoam cup is not going to be healthy. Leave the cup noodles to the college kids. Real ramen is healthy and full of fresh ingredients, not dried carrots and peas that come to life when you add water… yikes. Put that stuff away and use real ingredients!

    Ingredients In Vegetarian Ramen

    The best thing about ramen is that it is pretty much fully customizable. The important thing is the soup base. That, you don’t want to change. But the protein and vegetables can be switched up for whatever you have on hand.

    • Broth and seasonings – vegetable stock, ginger, garlic, sesame oil, soy sauce, mirin or rice wine vinegar
    • Noodles – dried ramen noodles
    • Vegetables – fresh shiitake mushrooms and baby spinach
    • Protein – eggs. You can add whatever protein you want. Tofu goes really well in this ramen. If you are not vegetarian, then shredded rotisserie chicken, beef, prawns are also great options.
    • Toppings – green onions or scallions, shredded carrots, sesame seeds

    There are two ways to cook this veggie noodle soup. The first method using the microwave :

  • Completely remove lid.
  • Pour room temperature water up to the inside line.
  • Microwave for 3 minutes .
  • Stir well and serve.
  • Caution: Product is very hot after heating. Never microwave without water!

    Nongshim Soon Veggie Cup Noodle Soup

    The cup contains the noodle block with loose vegetable garnish and a single sachet of seasoning powder.

    To prepare, empty the seasoning powder into the cup and pour in boiling water. Let the noodles cook for 3 minutes before serving. We topped off the noodles with some sauteed mushrooms and some steamed Chinese leafy greens.

    Verdict

    The wheat flour noodle is a classic Nongshim Korean ramyun. It is thicker and chewier than regular wheat flour instant noodles. The broth is a light kimchi-based broth that has a pleasantly lightly sour and spicy flavor. The pieces of vegetable in the loose garnish tasted slightly sweet after rehydrating and this provided a nice contrast to the overall spicy and sour flavor profile.

    In conclusion, we give the Nongshim Soon Veggie Cup Noodle Soup a rating of 2 chilis and 2.5 stars.

    Its an incredibly simple soup to prepare and the vegan ramen broth tastes fantastic, perfectly seasoned with a spicy kick!

    You boil noodles add to bowl with the sauce, mix it up and devour as is or add optional veggies, tofu or whatever floats your boat and voila- lunch is ready! Try this vegan ramen recipe once and you’ll be hooked!

    The first time I made this ramen soup back in January I wrote down the recipe and then got so busy I haven’t posted it until now but have made it numerous times since then! about 5 haha!

    My daughter just made it last night and added some dried shiitake mushrooms, baby corn, used up some leftover roasted sweet potato from the fridge, stirred in a wee bit of soy milk for creaminess and topped with toasted sesame seeds – uh YUM! She says my grandson loved it

    She actually had a favourite ramen restaurant close by where she used to live, so she has great ideas for recipes!
