  • 60ml olive oil

  • 1 brown onion, halved, chopped

  • 1 garlic clove, crushed

  • 3 medium local potatoes, peeled and cut into 2cm cubes

  • 2 medium local parsnips, peeled and cut into 2cm cubes

  • 1 local corn, finely diced

  • ½ bunch local kale, finely diced

  • 2 local leeks, thinly sliced

  • 1.25L Vegetable or Chicken Stock

  • 3 thick slices day-old sourdough or ciabatta bread, cut into 2cm cubes

  • 125ml thickened cream or natural yogurt

  • Pinch of salt to taste

  • 2 tablespoons finely chopped fresh chives or Spring Onion tops to taste


Soup tip my secret ingredient is to add a small finely diced anchovy fillet or a slice of nice prosciutto prior to blendingadds a great flavour to your soup. Add a bit of chilli too if you like, especially good in the meatier soups.

Add the cauliflower, potato and celery, along with 600ml water. Bring to the boil, add a little salt, turn down the heat, cover and simmer for 20-30 minutes until the cauliflower is perfectly tender. Peel and dice the onion. Melt the butter in a large saucepan over a medium-low heat and cook the onion for 10 minutes, or until soft. Cut the potatoes, skin and all, into chunks.

Directions. Preheat oven to 450 degrees F. Combine coriander, cumin, cinnamon, turmeric, salt, pepper and cayenne in a small bowl. Toss cauliflower with 1 tablespoon oil in a large bowl, sprinkle with 1 tablespoon of the spice mixture and toss again. Spread in a single layer on a rimmed baking sheet.

Instructions Checklist. Step 1. Melt butter in a large Dutch oven over medium. Add onion, thyme, salt, and garlic. Cover and cook, stirring occasionally, until onion is very soft and slightly caramelized, 10 to 12 minutes. Add flour to Dutch oven, and cook, stirring constantly, 1 minute. Add stock and potato.

Add heavy cream and simmer an additional 8-10 minutes or until thickened. Season with salt & pepper to taste.

4 large potatoes , 3 peeled and cubed, 1 left whole with skin on
1 tbsp cold pressed rapeseed oil
15g butter
5 leeks , washed and sliced into half moons
2 garlic cloves , sliced
1 ½l vegetable stock
200g kale
2 tbsp half-fat crème fraîche


  • Heat oven to 220C/200C fan/ gas 7 and line a baking tray with parchment. Cut the whole potato into matchsticks using a julienne peeler, or shave thin slices using a vegetable peeler, then cut into matchsticks. Pat dry using kitchen paper, then toss with the oil and some seasoning. Spread out on the tray and roast for 15-18 mins.
  • Melt the butter in a large saucepan. Add the leeks, chopped potatoes and a pinch of salt, then cook gently for 10 mins until the leeks have softened. Stir in the garlic and cook for 1 min more, then pour in the stock. Simmer for 10-12 mins until the potatoes are soft, then add the kale and cook for 2-3 mins to wilt.
  • Stir in the crème fraîche, then blitz with a hand blender and season to taste. Divide the soup between bowls and top with the shoestring fries.

Potato-Leek Soup with Boursin was on the menu, mainly because I work for a food distribution company and had an opportunity to buy some cases of near-date Garlic & Herb Boursin. I took a basic Potato-Leek Soup recipe and stirred in the Boursin at the end–topping the bowl with an extra scoop of Boursin and some chopped parsley for garnish.

Potato Soup Adjustments. To keep this leaner, omit the bacon and use olive oil instead. To make this soup vegetarian, omit the bacon and use veggie broth instead of chicken broth. Use an immersion blender to puree the soup if you are able, or use a blender or food processor and puree the potatoes until you get the desired consistency.

Instructions. Add the potatoes, leeks, bacon, onion, sea salt, thyme, parsley, pepper and chicken stock to your slow cooker. Stir well to combine, add the lid and turn the slow cooker to the ‘high’ setting. Cook on high for about 6 hours. After 6 hours have passed, whisk together the milk and flour until well combined and no lumps remain.

Melt the butter in a large pot over medium heat. Cook the leeks in butter with salt and pepper to taste, stirring frequently, until tender, about 15 minutes.

Add the potatoes and the broth. Bring to a boil, then reduce the heat and simmer for 15 to 20 minutes, or until the potatoes are tender. Stir in the artichokes. Let cool slightly, then transfer half of the soup to a blender, along with the cashews, mustard, capers, and 1 tablespoon of the lemon juice.
