How To Make Chicken Noodle Soup

Add the olive oil to a Dutch oven. Stir in chopped carrot, onion, and celery.

Cook until softened, about 5 minutes.

Add the garlic and spices and cook, stirring regularly, for about 1 minute. Stir in the diced chicken breast and let it cook until it begins to brown. Add chicken stock and bay leaves.

Cook until the chicken is cooked through. Stir in the noodles and cook the noodles to al dente. Remove the bay leaves before serving.

Storing Reheating And Freezing Tips

When storing soup, make sure it is cooled down to not warm up your fridge. Place the cooled soup in an airtight storage container in the refrigerator for up to 4-5 days.

You can reheat soup in a covered saucepan on the stove over medium-low heat until hot. But who has time for that? Just heat the chicken noodle soup in a microwave-safe bowl in the microwave for about two minutes. Stir halfway through the time. You may need to add a little more broth or water as the noodles will have continued to soak up the broth when stored.

If you freeze the soup it is best to portion it into serving size airtight freezer containers. You wont have to thaw a big block of soup unless you plan on that for later. Store for up to 3 months and then let thaw overnight in the refrigerator before reheating.

The HH has been making this soup for close to 30 years now and let me tell you Bob, it is pretty much the best thing ever on a chilly afternoon or when youre feeling under the weather.

In years past hes made his chicken noodle soup with a Costco rotisserie chicken, chicken from a bbq or even shredded chicken that was left over from taco night. These days though, he uses a can of Costco chicken breast.

Not only does this recipe save time because weve always got a can of chicken breast in our pantry, but it also saves money and the hassle of running to the store at the last minute since all the ingredients in this recipe are things we always have on hand.

Quick, hearty and satisfying what more could you ask for in a chicken noodle soup.

Is It Mirepoix Or Battuto

As with most soups, a base is required. For chicken noodle soup, a mirepoix is needed.

Weve discussed this base before. Mirepoix is an essential flavor base that the French make for their soups and stews. Its created by sauteing carrots, celery, and onions in olive oil or butter.

For Italians, this base is known as battuto and its usually made of 50% onion, 25% carrots and 25% celery. You can add fresh herbs, like rosemary and thyme, if you want, or simply add shallots, which taste like a combination of onion and garlic.

I suggest keeping a batch of this soup in the freezer that way, if you are in need of some healthy comfort food, you can pull it out, add noodles, and have a nourishing meal ready to eat.

Tips For Making Chicken Noodle Soup

  • Ingredients: Since chicken noodle soup is made with only a few simple ingredients, it’s important to use quality ingredients for the best results.
  • Spices: Feel free to adjust the spices according to your tastes. You can use Italian seasoning, add parsley, or even add red pepper flakes if you want to add a little heat. If using fresh herbs, use 1 tablespoon chopped herbs each.
  • Chicken stock: I like to use chicken stock because it has good flavor. If you prefer, you can use chicken broth.
  • Noodles: I use a store-bought “homemade” egg noodle in this soup but any type of egg noodle should work. You can also use kluski noodles.
  • Chicken: You can use boneless skinless thighs in place of the chicken breast if you prefer. You can also use leftover cooked chicken and add it along with the noodles.
  • Time-saving tips: To make this soup even faster, you can purchase pre-chopped fresh veggies and use leftover roast chicken.

Whats The Right Size When Cutting Your Vegetables

It may sound nitpicky to recommend a size when cutting or chopping your vegetables. Most often, mirepoix vegetables are finely chopped.

Heres a general guideline for beginners and not-so beginners in cooking:

  • For sauteed recipes, cut your veggies into small pieces .
  • For soups and stews, cut them into medium-sized pieces, which may be around ½ inch to 1 inch.
  • For stock, broth, or blended soups, cut them in large pieces .

Finally, its important that you cut everything approximately the same size so that your vegetables will cook evenly.

If youre making homemade broth, then it would take you 2 to 3 hours more. Its best that you cook the broth in advance and in a large quantity. Store in jars or thick air-tight plastic bags in the fridge for 3 to 4 days or you can keep it in the freezer for several months.

Unfortunately, this chicken noodle soup with pastina will not store well. Pasta tends to bulk up, absorbing more of the broth, and turns to mush. Make sure you cook just enough soup for the people who will be eating at your dining table. Once you serve the soup, it has to be consumed straight away and dont leave leftovers.

Do I Have To Use Boneless Skinless Chicken Breast

You don’t. I like to use Perdue Farms boneless skinless chicken breast because it’s 100% veggie fed with no animal-by-products. I love that Perdue Farms really cares about how their chickens are raised and that the family farmers who raise the chickens take such pride and care in how they raise the chickens.

If you prefer, you can use bonless, skinless chicken thighs or even turn yesterday’s roast chicken into today’s soup.

If I were asked to choose between making broth for soups from scratch and using a commercially available broth, Id choose the former. Its more flavorful compared to commercial brands. I also find its quite economical because I dont have to buy fresh ingredients to make it. I can always use vegetable scraps and leftover meat and bones instead.

Making the broth typically takes a couple of hours of slow cooking, which isnt ideal for a busy mom like me. You may never buy the canned stuff again after I show you how to make chicken noodle soup from scratch. So easy and delicious! Ive included instructions for making it in your Instant Pot or on the stovetop.

Oh, cold and flu seasonyou are already upon us. My family has already caught our first couple cold viruses of the season. It seems like as soon as the kids start back to school, ALL the germs start popping back up. And after all the holiday get-togethers, germs seem to crop up as well.

So during cold season I make chicken noodle soup. Like, a lot.

Because nothing hits the spot when you are sick quite like some chicken noodle soup from scratch. Amiright?!

You can use your own homemade chicken stock to make this , which is what I used for this recipe. Or you can totally use the boxed stuff from the store. Or even water, plus Better than Bullion chicken base. I have personally used all of those, and it turns out great any of those ways.

But you are not going to believe how simple it is to make this! The most work you will exert will be a little chopping.

Side note: I used to remove celery leaves from things. I dont do that any more. You can see a few poking out in the above photo. I find that the celery leaves add more flavor.

Im intentionally sharing chicken noodle soup as my first post of the year because more than any other dish, this soup represents hope and healing. And Im hopeful this year will be a healing one.

After the year weve had, Im convinced that we could all use a bowl of soup right about now. And not just any soup, but a substantial soup made with chicken, noodles, vegetables, and broth. A restorative soup thats soul-soothing, heart-warming, and nostalgia-inducing.

This recipe has all the ingredients youd expect to find in a classic chicken noodle soup, plus a few additions that really should belong in every recipe, like garlic, ginger, turmeric, and a bit of cayenne too.

This winter, Ive been making chicken noodle soup more frequently than in years past. This soup has been in our regular dinner rotation. It makes quite a bit, so I pack extra soup to send to work with my husband . I also keep some in the freezer just in case.

Everyone who has tried this chicken soup really likes it my young kids, my husband, our friends, and neighbors. For this reason, I feel pretty good about stating that this might just be one of the best chicken noodle soup recipes out there.

Heart Healthy Chicken Noodle Soup

Prep time: 15 minutesServes: 8

2 tbsp. olive oil3 sprigs fresh thyme or parsley1 bay leaf2 qt. reduced-sodium chicken broth2 lb. boneless, skinless chicken breasts or thighs8 oz. wide egg noodlesSalt/Pepper to taste

Directions:Heat oil in pot over medium heat. Add onion, carrots, celery, thyme/parsley and bay leaf. Cook, stirring occasionally, until vegetables are softened . Stir in broth and 4 cups water. Bring to a boil.

Add chicken and bring to a simmer. Cook chicken approx. 15 minutes, or until done. Shred chicken.

Add noodles and shredded chicken to pot and simmer until noodles are tender. Discard bay leaf and season soup to taste with salt and pepper. Serve.

Helps Break Up Congestion

In one 1978 research study in the journal Chest, 15 research subjects were provided with either cold water, hot water or hot chicken soup. The researchers then measured nasal mucus velocity and found the soup was superior to either the hot or cold water in increasing the movement of nasal mucus. That means the hot chicken soup can help clear your airways and easing congestion.
