- Saute garlic in a large pot or Dutch oven. It takes about 45-60 seconds, until fragrant.
- Add chicken broth, heavy cream, and chopped broccoli. Simmer until the broccoli is tender, about 10-20 minutes.
TIP: The simmer time will vary depending on the size of your florets. Smaller florets = faster simmer time.

Another reason this time of year seems like the perfect time to make homemade soup, especially a low carb tomato soup recipe, is because this is usually the time of year when I have the most tomatoes on hand.
This wasnt exactly the case this year at my house because of the land hurricane that hit Iowa, also known as the Derecho Storm. It completely destroyed my garden and its especially hard to accept because this was by far the best tomato garden I have ever had.
Instead of giving up on low carb recipes that are made with tomatoes, broccoli, and some of the other recently deceased items that were taken suddenly from my garden, I decided to just buy them.
This way I still get to enjoy vegetable-based soups and it seems like most vegetables are pretty cheap at the grocery store right now anyway.
How To Make It In The Instant Pot
If you want to speed things up and cook this stove top tomato soup, I recommend pulling out your instant pot! To make it in the instant pot, simply place all the ingredients into the instant pot and cook on manual high pressure for 10 minutes. Let the steam release naturally, then stir in the cream to finish it off!

I have a texture snob in my house so I am very aware of this controversy. I personally love a thick, chunky soup. but this one can easily be pureed. If you plan to puree it, I recommend leaving some of the broccoli in bigger pieces. Youll remove the bigger pieces before blending and save for garnish. The remaining will be pureed with the cooked soup,

Besides salt & pepper, this recipe includes the following ingredients:
- Roasted Tomatoes: Im using canned roasted tomatoes with all of their liquid to keep things simple. You can use fresh roasted tomatoes if you wish.
- Italian Seasoning
- Xanthan Gum: this is being used as a soup thickener. If you dont have Xanthan Gum, you can leave it out or swap 1/2 tsp of Xanthan Gum with 1 tbsp of unflavored collagen powder.
Variations For This Recipe
The beauty of this simple soup is that it gives you a great base. From there, youre welcome to modify however you like.
Since we use coconut cream, the only dairy in the recipe comes from the optional feta topping. To keep your dish dairy-free and vegan, simply skip the feta. You can top with your favorite vegan cheese if you prefer!
On the other hand, if you dont like or dont have coconut cream, you can easily use heavy whipping cream instead. Just note that this will change the nutritional information slightly, although it shouldnt alter the net carbs.
Want to use different toppings? Play around with different cheeses, add a dollop of sour cream, or try some pumpkin seeds for a little crunch. Go ahead and have some fun with it!

Stay with me here because sugar free marinara sauce isnt just for dipping keto mozzarella sticks. As a matter of fact, the sauce that I use has the ingredients tomatoes, olive oil, onions, salt, garlic, basil, black pepper, and dried oregano. All of the flavors of a good tomato soup!
