Tips For Making The Best Gluten
- Make sure your broth is gluten-free. Not all broths are gluten-free. I like to make my own by using Orrington Farms Chicken Flavored Broth Base. I but it at Walmart.
- The recipe for Cream of Mushroom Soup makes 18o-ounces , so if you want to use the same amount in a store-bought can remove Â¾ cup from the prepared recipe. I just usually use 1 cup of the soup in recipes.;
- To make a garnish for your soup, sautee mushrooms in a small pan with olive oil or butter until golden brown.
For The Cream Of Mushroom Soup:
Saute 4oz minced mushrooms plus;1 Tablespoon minced shallot in 1 Tablespoon extra virgin olive oil;in a small saucepan over medium-high heat;until the mushrooms release their liquid. Continue to saute until the liquid cooks off and the mushrooms are tender, 5-7 minutes. Scoop the mushroom mixture into a bowl then set aside.
Lower the heat to medium then melt 2 Tablespoons butter or vegan butter,;sprinkle in 2-1/2 Tablespoons;gluten-free flour, and whisk for 1 minute. Slowly stream in 3/4 cup chicken or vegetable broth while whisking to create a smooth sauce then add 1/2 cup milk plus 1/2 teaspoon salt, 1/4 teaspoon garlic powder,;and 1/8 teaspoon pepper. Simmer until thickened then stir the mushrooms back into the soup.

Melt butter in a 3-quart saucepan over medium heat until fragrant and bubbly. Saute the mushrooms with peppers and onions, and cook, stirring occasionally until tender, about 5 minutes.
Stir in gluten free flour and cook for 1 minute. Cooking the flour keeps your soup from tasting like raw flour.;
Turn off the flame and whisk the milk in. Turn the flame back on and cook, whisking, until the soup comes to a boil and is thickened, about 10 minutes.
The mixture will thicken as it heats. Just keep stirring over medium low heat. Make sure to scrape the bottom of the pot so the flour doesnt stick.
Add parsley, and season with salt and pepper.
And thats it. A fresh, homemade cream of mushroom soup.
Serve garnished with parsley and shredded cheese if you like. Or save in your fridge to use in a casserole as I do in my popular tuna noodle casserole.;

How To Make Condensed Gluten Free Cream Of Mushroom Soup
Cream of mushroom soup is a thickened cream-based mushroom soup made with a roux, made with flour and fat . You begin by cooking the vegetables until theyre soft and fragrant.
Remove some cooked mushrooms. Well add those back into the soup when its nearly done, and smooth.
Then, make the roux by melting butter and cooking it for about 1 minute with superfine white rice flour, freshly ground black pepper, and some salt. It will clump up, so keep whisking.
Add the liquids: vegetable stock, and evaporated milk. The roux will thicken them as it cooks.
Keep cooking the mixture so some water evaporates. This will concentrate the flavor and thicken the soup even more.
Then, puree all the soup until super smooth. I like to use an immersion blender since the liquid is hot, so a standing blender will spurt and splatter the soup if you use it with hot liquid.
Then, add back in the reserved mushrooms, and serve hot!

Step 1: Take a pan, now add olive oil, chopped garlic and onion.;
Step 2: Start to heat the pot, cook well until they get soft.
Step 3: Now add all the mushrooms and chopped parsley and cook again for two more minutes.;
Step 4: Add chicken base and chicken stock. Now stir.;
Step 5: Bring it to boil for about 20- 25 minutes.
Step 6: Now, take a hand blender and blend it until the mixture gets smooth. Ensure the blender is fully submerged into the mixture, or else it will ruin all your surroundings.
Step 7: Now cook the mixture for another 10 minutes on low heat.
Step 8: Add heavy cream and butter and stir well, so the items mix well with the mixture.;
Step 9: Now, let it cook for a few more minutes but make sure it doesnt start to boil. Then turn the stove off.
Step 10: Add salt and pepper to season it.
Now serve it with a sliced Baguette, with a few drops of extra virgin olive oil on the top. Your dish is ready to go!

We are also avoiding soy, as my mother has breast cancer and has reduced her soy consumption.;

This is such an easy comfort food to make that I rarely make it ahead of time. I just whip it up right before I have to use it.;

- You can substitute fresh mushrooms for dehydrated mushrooms;
- Use more heavy cream, milk, or other liquid to make a thinner soup
- This recipe can easily be adapted to whatever amount of soup you need, just increase the ingredients as desired.
- For a smooth soup, puree with an immersion blender.
- The soup will keep in the refrigerator for a week to ten days. I store mine in a glass jar.

If you want to enjoy your soup on its own, I suggest adding more milk or broth until it is your preferred consistency.
How To Make The Best Gluten Free Mushroom Soup
I used chestnut mushrooms, but you can choose any other variety if you like. The chicken stock really worked wonders, but feel free to use vegetable one if youd rather have a vegetarian meal.
My take on this classic cream of mushroom soup is gluten free, as I replaced the regular wheat flour with corn flour .
Just mix a teaspoon of corn flour with 2 tablespoons of cold water, and add it to the soup just before you take it off the heat, that makes the soup thicker.
You can use double cream or heavy cream, which I usually go for, or you can use just milk, its entirely up to you. The cream adds a bit more richness though, hence why I prefer it.
This is just the old fashioned mushroom soup, nothing spectacular, nothing complicated, but the taste is out of this world. You gotta try this!
