Baked chicken with cream of chicken soup is a simple and tasty meal. But the canned soup used to create the creamy flavor is high in calories, fat and sodium. According to the USDA database, one can of condensed cream of chicken soup has 274 calories, 18 grams of total fat and 2,140 milligrams of sodium.

The Dietary Guidelines for Americans recommends limiting daily sodium intake to 2,300 milligrams a day. That one can of soup contains almost your entire daily limit, so you’d get a quarter of your daily sodium in just one serving of the chicken dish. Getting too much sodium in your diet increases your risk of high blood pressure and stroke. Cream of mushroom soup has slightly less sodium, with 1,834 milligrams per can, but it’s still excessive.

Instead of a cream of chicken soup recipe with chicken breast, create a healthy mushroom gravy by sauteeing sliced button mushrooms in oil over medium heat until soft, then add low-sodium chicken broth, chopped green onions, salt and pepper and bring to a boil and remove from heat. Pour your mushroom gravy over your chicken after it’s been in the oven for 15 minutes, then bake for another 15 minutes or until your chicken has reached 165 degrees Fahrenheit.

Since we are all at home cooking out of our pantry, I thought I would share some of my favorite recipes that are made with Cream of Chicken Soup. Cream of Chicken Soup is a staple in our house. I always have a few cans on hand to be able to whip up a quick casserole or soup.

Today I am sharing 15 of our favorite recipes made with a can of Cream of Chicken Soup. Ive got pork, beef, and chicken recipes. All of the recipes are super easy to make and use everyday ingredients. Im sure you have most, if not all, of them all in the house now.

How To Make This Creamy Chicken And Rice Soup:

  • Cook onions, celery and carrots until the onions are translucent and softened.;
  • Add in garlic, flour, rosemary, thyme, salt, and black pepper. Cook until flour is dissolved;
  • Add in chicken stock and wild rice. Bring mixture to a boil. Once boiling, reduce the heat to medium low for a strong simmer.
  • Simmer mixture for 10 minutes, stirring occasionally.;
  • Add in the chicken and cook for 10 minutes or until the chicken and the rice are cooked through.;
  • Add in heavy whipping cream and stir soup together until combined.
  • Check soup for seasoning and add in kosher salt and cracked black pepper to taste.
  • If soup becomes too thick as it sits, add in 1 cup of stock a time. Best served immediately as the rice will soak up the soup liquid quickly.;
  • Can You Freeze Chicken And Rice Soup

    Typically the cream part of chicken and rice soup is a milk base. When milk is frozen it tends to separate and the resulting thawed soup turns out not so great.

    Because this recipe calls for evaporated milk you should be able to freeze this and not get the separation. So this recipe can be frozen in an airtight container for up to 2 months.

    With that being said, we are also dealing with rice which may turn to mush in your freezer. For best results, if you plan on freezing I recommend making the entire soup ahead of time but omit the rice.

    After the soup is thawed add the same amount of cooked rice to your recipe and itll taste great!

    If instead you just want to eat it a few days later, it will taste great reheated directly from your fridge.;

    • Cornstarch

    Tasty chicken and rice soup is flavorful and creamy. Packed with tender, sauteed vegetables and wild rice, this soup is filling and delicious. Seasonings simmer together to create wonderful flavor, yet its not slow to cook. You could, of course, make this soup in a crockpot though.

    This recipe is a great way to use leftover chicken from another meal. Simmer the chicken carcass in the soup to add flavor. Whether you prefer white or dark meat, either will taste great.

    • Garlic: You can add more if preferred.
    • Chicken broth: I like to use low-sodium. Regular will work fine just add less salt to the soup.
    • Thyme, marjoram, sage and rosemary: You can use dried or fresh herbs.
    • Salt and pepper: Season to taste.
    • Chicken breasts: Thighs will work too just cook a little longer as needed.
    • Flour: This helps thicken the soup dont omit. If needed you could try a gluten-free option below.
    • Milk: I recommend using anything but skim milk.
    • Cream: Half and half could be substituted.

    How To Make Creamy Chicken And Rice Soup

    Step 1: Combine celery, onions, rice, bouillon, broth, and water in a large pot and bring to a boil. Reduce heat and simmer for 30 to 45 minutes.Step 2: Melt butter in a saucepan and slowly whisk in flour. Add milk, stirring constantly. Add this and the chicken to the rice mixture.Step 3: Add more milk and season to taste. Allow to simmer at least 30 minutes and add more milk if necessary.

    And there you have it! Though this creamy chicken soup takes a bit of time, it doesn’t take a lot of effort or a crazy-long list of ingredients. Yay!

    Can I Freeze Chicken Rice Soup

    Homemade Chicken Rice Soup freezes perfectly if you follow a few important steps.

    Low-fat milk does not freeze well and will separate. Regular evaporated milk would fare better over low fat or skim evaporated milk in this creamy chicken rice soup recipe. If you know you plan to freeze, for an even better result, I recommend using whole milk or even cream as the higher fat content does better when frozen and thawed.

    Cool to room temperature, then place in a large freezer bag, seal completely, and lay flat to freeze in a thin layer. This will help the soup to thaw quickly when you need it for dinner!

    To thaw, you can submerge the bag in lukewarm water until thawed, then reheat to the desired temperature in the microwave or on the stovetop.

    If you’re searching for a chicken recipe that feels more like a complete meal, then the cream of mushroom chicken casserole may be the way to go. This casserole dish combines chicken, rice and the cream of mushroom soup to create this one-dish meal. All you have to add are the veggies.

    This recipe is also inspired by a cream of mushroom chicken and rice recipe featured on Campbell’s Kitchen and takes about an hour from prep to table.

    Ingredients:

    • 1 can condensed cream of mushroom soup
    • 1 cup water
    • 3/4 cup uncooked long-grain rice
    • 1/4 teaspoon of pepper
    • 1 1/4 pounds of skinless, boneless chicken breasts

    Directions:

  • Preheat oven to 375 degrees Fahrenheit.
  • Combine the soup, water, rice and pepper in a 11x8x2-inch baking dish.

    When I think of my favorite comfort foods, one of the first things that comes to my mind is a bowl of creamy, hearty soup! This Slow Cooker Creamy Chicken Wild Rice Soup screams comfort food to me. Its chock full of tender chunks of chicken, loaded with hearty veggies and its made oh-so-creamy with Organic Valley Half & Half. This is a recipe Ive been making since college and have tweaked it over the years by adding different veggies, omitting the flour, omitting the cream of mushroom soup, etc. Its truly a classic Minnesota dish and the version Im sharing today evolved from a recipe I found on the popular Taste of Home website years back.     This classic soup doesn’t have to be an all day process. A bonus for all of the busy parents in the world, it can be made rather quickly on busy weekdays.

    • You know my love of Costco chickens so, I use the shortcut of diced rotisserie chicken for this soup. That being said, you could poach your own chicken, and in doing so, you’d be making your own chicken broth as well.
    • To save time, dice the vegetables and chicken in advance and have them in plastic storage bags in the fridge ready to go.
    • You may thicken this soup to your personal liking. If you prefer a thin broth, you may omit the cornstarch but, the cream should still be used as called for in the recipe.
    • You can also use a long grain and wild rice combination for this soup.

    For this recipe you add the rice in uncooked and it cooks with the rest of the veggies. This helps the rice to absorb all the yummy flavor of the soup and taste delicious! However, if you have leftover rice in your fridge you can still use it in this recipe.;

    Cook the entire recipe as is, omitting the rice. Then at the end when you are adding your chicken, toss in your leftover rice too. Cook both until heated through.

    Can This Soup Recipe Be Made Ahead Does It Do Well As A Leftover

    Soups with starchy ingredients do make good leftovers if stored in the fridge and eaten within the next 24-48 hours.

    However, the rice will continue to absorb the broth and make the mixture more of a thick stew rather than a creamy soup. You can add additional broth to loosen the soup when rewarming.

    How To Make It

    In a large pot, heat olive oil over medium-high heat. Add the carrots, onions, and celery and cook them for four to five minutes. Add the garlic and dried herbs and cook them with the veggies for one minute.

    Add the salt, pepper, broth, chicken breasts, and rice. Give it a stir and bring the pot to boil. Lower the heat to maintain a simmer and cook the soup for 18 to 20 minutes. The soup is done when the rice is tender and the meat is cooked through.

    Take the chicken out of the pot and shred it. Add it back to the pot along with the evaporated milk. Stir and serve!
