What To Serve With This Soup
Healthier Baked Chicken Dish
Baked chicken with cream of chicken soup is a simple and tasty meal. But the canned soup used to create the creamy flavor is high in calories, fat and sodium. According to the USDA database, one can of condensed cream of chicken soup has 274 calories, 18 grams of total fat and 2,140 milligrams of sodium.
The Dietary Guidelines for Americans recommends limiting daily sodium intake to 2,300 milligrams a day. That one can of soup contains almost your entire daily limit, so you’d get a quarter of your daily sodium in just one serving of the chicken dish. Getting too much sodium in your diet increases your risk of high blood pressure and stroke. Cream of mushroom soup has slightly less sodium, with 1,834 milligrams per can, but it’s still excessive.
Instead of a cream of chicken soup recipe with chicken breast, create a healthy mushroom gravy by sauteeing sliced button mushrooms in oil over medium heat until soft, then add low-sodium chicken broth, chopped green onions, salt and pepper and bring to a boil and remove from heat. Pour your mushroom gravy over your chicken after it’s been in the oven for 15 minutes, then bake for another 15 minutes or until your chicken has reached 165 degrees Fahrenheit.

What Type Of Rice Is Best For Soup
Honestly, any type of rice can be used in soups! Long grain, medium grain, short grain, white, brown, wild, and even risotto rice.
Panera uses a blend of brown and wild rice in their famous chicken and wild rice soup.
For my version, I like to use Carolina® Rices;blend of jasmine, red and wild rice. The complex texture of long grain aromatic rice combined with chewy red and wild rice come together to create the most satisfying, flavorsome blend that truly elevates this soup!
The red and wild rice also add color and character to the soup, making it extra hearty.

How To Make This Creamy Chicken And Rice Soup:
Can You Freeze Chicken And Rice Soup
Typically the cream part of chicken and rice soup is a milk base. When milk is frozen it tends to separate and the resulting thawed soup turns out not so great.
Because this recipe calls for evaporated milk you should be able to freeze this and not get the separation. So this recipe can be frozen in an airtight container for up to 2 months.
With that being said, we are also dealing with rice which may turn to mush in your freezer. For best results, if you plan on freezing I recommend making the entire soup ahead of time but omit the rice.
After the soup is thawed add the same amount of cooked rice to your recipe and itll taste great!
If instead you just want to eat it a few days later, it will taste great reheated directly from your fridge.;

Chicken And Wild Rice Soup Ingredients
- Wild rice blend: I like to use Lundbergs blend.
- Onion, carrots and celery: These are used to make the mirepoix which really flavor the soup.

Can I Freeze Chicken Rice Soup
Homemade Chicken Rice Soup freezes perfectly if you follow a few important steps.
Low-fat milk does not freeze well and will separate. Regular evaporated milk would fare better over low fat or skim evaporated milk in this creamy chicken rice soup recipe. If you know you plan to freeze, for an even better result, I recommend using whole milk or even cream as the higher fat content does better when frozen and thawed.
Cool to room temperature, then place in a large freezer bag, seal completely, and lay flat to freeze in a thin layer. This will help the soup to thaw quickly when you need it for dinner!
To thaw, you can submerge the bag in lukewarm water until thawed, then reheat to the desired temperature in the microwave or on the stovetop.

Easy Creamy Chicken Rice Soup
I think comfort food takes on different faces for different people. It typically depends on the part of the country that you live in, as well as the type of food you were raised eating. For me, I have been a lifelong soup lover, and in fact, packed it every single day of grade school in a thermos. Whether it was vegetable beef soup, tomato soup or chicken noodle soup every spoonful was filled with homespun comfort.

Tips For Making Chicken And Rice Soup
This classic soup doesn’t have to be an all day process. A bonus for all of the busy parents in the world, it can be made rather quickly on busy weekdays.
- All rice isn’t created equal. This soup does best with a whole grain rice such as Uncle Ben’s or your favorite brand of long grain rice. You may enjoy this article about 13 Types of Rice on Plated.
- You know my love of Costco chickens so, I use the shortcut of diced rotisserie chicken for this soup. That being said, you could poach your own chicken, and in doing so, you’d be making your own chicken broth as well.
- To save time, dice the vegetables and chicken in advance and have them in plastic storage bags in the fridge ready to go.
- You may thicken this soup to your personal liking. If you prefer a thin broth, you may omit the cornstarch but, the cream should still be used as called for in the recipe.
- You can also use a long grain and wild rice combination for this soup.

Can I Add Cooked Rice To Chicken And Rice Soup
For this recipe you add the rice in uncooked and it cooks with the rest of the veggies. This helps the rice to absorb all the yummy flavor of the soup and taste delicious! However, if you have leftover rice in your fridge you can still use it in this recipe.;
Cook the entire recipe as is, omitting the rice. Then at the end when you are adding your chicken, toss in your leftover rice too. Cook both until heated through.
Can This Soup Recipe Be Made Ahead Does It Do Well As A Leftover
Soups with starchy ingredients do make good leftovers if stored in the fridge and eaten within the next 24-48 hours.
However, the rice will continue to absorb the broth and make the mixture more of a thick stew rather than a creamy soup. You can add additional broth to loosen the soup when rewarming.

How To Make It
In a large pot, heat olive oil over medium-high heat. Add the carrots, onions, and celery and cook them for four to five minutes. Add the garlic and dried herbs and cook them with the veggies for one minute.
Add the salt, pepper, broth, chicken breasts, and rice. Give it a stir and bring the pot to boil. Lower the heat to maintain a simmer and cook the soup for 18 to 20 minutes. The soup is done when the rice is tender and the meat is cooked through.
Take the chicken out of the pot and shred it. Add it back to the pot along with the evaporated milk. Stir and serve!
A Flexible Soup That Works With Whatever Rice You Have
White rice is a classic choice for chicken and rice soup, but any kind of leftover rice will work here. Brown rice lends an extra toothsome bite, jasmine rice will give your pot of soup a subtle floral undertone, and hearty wild rice will add an earthy aroma. No matter what variety of rice you use, wait until the last few minutes of cooking to stir it in. Since the rice is already cooked, it just needs to be warmed through.
