How To Keep A Pot Pie Crust From Getting Soggy:

The ULTIMATE CHICKEN POT PIE SOUP – One Pot Comfort Food

I get this question ALL of the time. Why is the bottom of my pie crust soggy? How can I fix this?? Follow a few of the tips below to help prevent your crust from being soft and mushy in the center:

  • Pre-bake the crust, or blind bake. Blind baking is when you bake the crust before adding filling. This is the best way to prevent soggy middles and bottoms of pie crusts. I suggest only baking partially, adding filling, and continuing to bake from there.
  • Brush with an egg wash. My best friend swears by this method. She says brushing the bottom of your unbaked crust with an egg wash before filling creates a barrier between the two.

    • Leave out the half and half if you plan to freeze, then it will freeze and thaw without becoming grainy. Once thawed, add the half and half mixed with cornstarch to the thawed soup and simmer until thickened.
    • Regular evaporated milk, or heavy cream freeze much better than half and half. The higher the fat content, the better it freezes. If you think you might freeze this chicken pot pie soup, then plan on using either of these alternatives.
    • If freezing with half and half, reheat the thawed soup very gently over low heat to help incorporate the cream back into the soup.
    • If freezing with half and half, add some fresh cream or softened cream cheese to improve the grainy texture.

What To Serve With Chicken Pot Pie

I know I said that chicken pot pie is by itself a complete meal, but why not transform this simple dinner into a lip-smackingly good feast. There are many flavors that go well with this dish, you will never run out of things to pair it with. Here are some of my favorite options:

    • Cranberry sauce gives this meal a Thanksgiving feel anytime of year. But Im not talking about that dreadful stuff from the can. You can whip up fresh, homemade cranberry sauce in no time.

Combine 1 cup orange juice, 1/2 cup white sugar, and 1/2 cup brown sugar in a saucepan over medium heat. Stir until sugar is fully dissolved. Add in the cranberries and cook until the cranberries start to pop. Generally takes about 10 minutes.

Remove from heat and pour the cranberry sauce in a bowl. Will thicken as it cools. Add a few pinches of cinnamon for an extra tasty combo.

    • A light salad is a nice way to counter-balance the richness of the pie. Your choice of leafy greens topped with citrus oranges and berries, rich cheese, crunchy nuts, and drizzled with tangy balsamic vinaigrette makes a spectacular side to your chicken pot pie.
    • Roasted broccoli is another side that will lighten up your heavy main dish. Give these veggies some extra flavor by coating it with olive oil and Parmesan cheese.
    • Sweet potatoes give a nice contrast to your savory dinner. Flavor it with cinnamon, butter, and your choice of seasonings and bake. Simple and delicious.
