Potato soup is;my favorite comfort food and my first choice of soup! Growing up my mom made potato soup and homemade bread. I remember stuffing myself with the warm, hot bread and soup until I had a tummy ache. It was that good!

I am always on the hunt for the next best potato soup recipe. I’ll try them all. But no matterwhat I always come back to this recipe because it’s so simple to make and tastes amazing.;

This slow cooker creamy potato soup is my favorite because it literally takes 5 minutes to prepare and then it cooks away all day in the crock pot.

As a huge added bonus, there is NO peeling and chopping potatoes! That’s always the most time consuming thing about potato soup is all the peeling and chopping. This soup uses frozen hash brown potato cubes and it makes things so much easier to prepare.

Crock Pot Potato Soup Tips

Some of you are confused about how I ended up with 6 points in the recipe builder. Here is exactly what I entered in to get the 6 points per serving for the recipe.

32 oz Ore Ida Country style hash browns 42 oz Fat Free chicken broth 10 oz can of 98% fat-free reduced cream of chicken soup Uncooked onion 8 oz of low fat cream cheese

Cheddar and bacon are extra points but those are optional.

Divide that into 8 equal servings and you get 6 points for 1 1/2 cups.

Can this soup be frozen? Yes. Let it cool completely before storing it in airtight containers.

Since Ive already professed my love for Olive Garden soups, lets talk about my affection for Panera soups.; I love their chicken and wild rice soup, their chicken noodle soup, and their baked potato soup.

Because, lets be honestthere is not much in this world that is more comforting than a hearty bowl of hot soup in a bread bowl or with a baguette.

So, naturally, in my quest to make more of our meals at home, I began learning how to make homemade versions of many of my favorite soups.; First, I started making stove top or slow cooker versions of these yummy soups.

Later, when I bought my Instant Pot, I began converting many of those recipes to be made in the pressure cooker.; It was a lot faster that way, and more hands-off .

Potato soup was one soup I hadnt yet converteduntil now.

For years, I made a different potato soup recipe, which we really liked.; But more recently, I found this slow cooker potato soup recipe from Julie at Back to My Southern Roots.

Not that making soup in the slow cooker is difficult, but it requires more time .;With the Instant Pot, this soup cooked up in minutes, and it is amazing!

My Tips For Making This Recipe

Use the full-salt chicken broth. Please! You need the flavor for the potato soup. I don’t find it salty at all with the chicken broth + 1 teaspoon of salt. As it cooks all day, the slow cooker tends to mute the seasonings over the cook time. So you need lots at the beginning.;

All crock pots seem to cook at different temperatures. My soup is done at 6 1/2 hours. After the cook time, I add the milk/flour mixture and the cream cheese and then put it on the warm setting for 1-2 hours until it’s dinner time.;

If you’re eating it right away, add the milk/flour mixture and the cream cheese, cover with the lid and let it cook an additional 30 minutes to melt the cream cheese so everything is combined.;

It’s best to use the half & half. Any milk lower than that will be too thin and result in a thinner soup.;

If you choose to mash the potatoes at the end of the cook time for no potato chunks, please be careful to not over mash them. Doing so will release too much starch which results in a gummy potato soup. I never mash the potatoes and it’s still so creamy with tender chunks of potato. As you stir in the milk and cream cheese, the potatoes will naturally break down to create a creamy soup with some potato chunks.;

What Type Of Hashbrowns Are The Best For Potato Soup

Frozen Hashbrown Creamy Potato Soup

I typically use frozen, shredded potatoes for this recipe, but you could absolutely make this soup with the shredded potatoes that you find in the refrigerated section of the grocery store. You could even shred fresh potatoes if you wanted to.

Use a kitchen scale to measure 20 ounces – or just eyeball it. Theres nothing wrong with adding a little extra potatoes into this recipe.

Ive been ready for fall for a few weeks now. I just need Mother Nature to get it together! Our high was nearly 90 degrees today, and Im over it!

One of the nice things about Hawaii, was that the temperature typically hovered between 75 and 85 year-round! There was maybe a week or two at the end of summer where it was unbearable to go outside. I feel like its been like that for the last three months in Kentucky!

Anyway, Ive been patiently waiting since spring to share this instant pot potato soup recipe since spring! Its definitely a hearty recipe geared toward cooler weather, but I eat it all year! I started making this soup back in Hawaii in the crock pot. When we moved to Kentucky and spent a month and a half living in a hotel, I adjusted the recipe to be able to quickly make it from our hotel room.

Although our hotel room on Fort Knox had a small kitchenette, there werent any cooking utensils or pots/pans, etc. I didnt want to buy any of that stuff, since we have plenty in our household goods. I didnt have an Instant Pot yet though, and since it had been sitting in my Amazon cart, it only made sense to click order.

Oh, and shout out to the IP geniuses who included cooking utensils in the box!

How To Make Baked Potato Soup

  • In a large pot, melt butter. Saute onion and carrot until they start to become tender. Sprinkle flour over top veggies and stir to create a paste.
  • Whisk in chicken stock and bring to boil. Add in frozen hash browns and seasonings.;
  • Cook covered until carrots are completely tender and potatoes have thawed and become soft.
  • Stir in milk, sour cream, and dried chives and reduce heat. Cook until soup is hot, but not boiling. Ladle into bowls and top with cheese and bacon. Serve hot!

    What Kind Of Potatoes To Use

    For this recipe, I recommend using frozen cubed hash brown potatoes, like Ore-Ida Diced Hash Brown Potatoes . You are welcome to use fresh or frozen potatoes for this recipe. Keep in mind that frozen potatoes will take a minute or two longer to cook than fresh potatoes.

    I recommend keeping an eye on your soup and testing your potatoes by piercing one through with a fork. If the fork pierces through easily, your potatoes are done cooking.

    If you’d like to dice up your own potatoes, I recommend yukon gold, red, or russet potatoes. Any of these will do well in a creamy potato soup. Keep in mind that the larger you dice your potatoes, the longer they’ll take to cook.

    The short answer to this question is YES, but Ill warn you that I havent tried it myself yet. Everything will cook very quickly in the instant pot though – I bet it would take about 10-20 minutes under pressure to finish. How awesome would it be if you could have cheesy potato soup in 10 minutes? Ill put this on my list to test out for you.

    One of the tricky things about the Instant Pot is that its hard to cook foods with dairy under pressure, because the dairy will often curdle and leave you with a gross, clumpy mess.

    We solve that problem here by adding the cream cheese after the pressure cooking is complete, so it melts in nicely and we avoid curdling!

    How To Make Cheesy Potato Soup In The Slow Cooker

    To make this Slow Cooker Cheesy Potato Soup, simply:

    STEP 1: In the slow cooker, combine frozen hash browns, chicken broth, chicken soup, ham, corn, onion, garlic salt,;and pepper.

    STEP 2: Cover and cook on HIGH for 4 hours or LOW for 6-8 hour.

    Not for this easy slow-cooker potato soup! Since this recipe uses;frozen shredded hash brown potatoes, theres no need to peel. If you would like to use fresh potatoes, however, we recommend peeling and shredding them before continuing with the recipe.

    Can you use canned potatoes in soup?

    Sure! Just drain, rinse and, if using whole canned potatoes, roughly chop them before adding to the soup.

    • 1 package frozen hash brown potatoes, thawed

    • 1 can condensed cream of chicken soup

    • 1 package cream cheese, softened
    • cup shredded Cheddar cheese, or to taste
