How To Make Pastina Soup With Tiny Meatballs

Add chicken broth to a sauce pan and bring to a simmer. Meanwhile prepare the meatballs.

Place ground meat breadcrumbs grated combined Parmigiano and Pecorino Romano cheese egg freshly chopped parsley olive oil salt and pepper in a bowl.

Use your hands to combine all ingredients well.

Roll into small balls. Place on a plate or tray.

When the meatballs are ready, there are 2 options as to how to cook them.Add directly to the simmering chicken broth. However, if like my mother, you are not crazy about the small particles released into the broth by the raw meatballs you can also boil them in water for 5 minutes, as shown below. then drain and add to the chicken broth to continue cooking.

Once added to the chicken broth, simmer the meatballs on medium-high heat for about 30 minutes.

Add pastina to the broth and meatballs and cook until al dente. Correct the seasoning if necessary. Serve hot with lots of freshly grated Parmigiano or Romano cheese at the table.

I may have high cholesterol, but I cant help but forget it when I visit my nonna.

My grandmother, whom I call my nonna, doesnt just have a knack for stirring up the tastiest recipes. She also reminds me where my culture stems from a rich Italian background that embraces life despite a history of war and hardship.

My nonna stands four foot and eleven inches with grey hair and purple veins on her arms like racetracks. She was undernourished from the Second World War and has a grade two education, and although she is older now with little knowledge of the English language, her spirit is spry and active. She also understands the immense sacrifice it takes to care for her family.

Growing up, I would race to my Nonnas house after school knowing that a plate of chicken cutlets was waiting for me at the kitchen table. Even if I was not hungry I would consume every bit of food because if anyone knows nonna, they know that cleaning off your plate is one of the best ways to her heart.

I have had the joy of growing up with some staple Italian dishes. Each of these meals that I have listed are comforting and delicious dishes that I never get tired of eating, except maybe the salad. Hopefully they will give you some inspiration for your next dinner.

What Kind Of Chicken Is Used To Make Pastina Soup

So for this recipe, I used what I had on hand, and it was chicken wings. As soon as the temperature cools down, I am making this chicken soup once a week. I used up all the broth I had on hand so I had to make something fast and the chicken wings worked perfectly.

If you use rotisserie chicken, an option is to use store bought chicken broth or you could make a broth with a good quality bouillon. Once the broth is cooked up with the vegetables, add the chicken shredded up at the end. If you bought a seasoned chicken, be sure to check the seasoning and not over salt the broth.

Basically, any parts of chicken will work. You could use a whole chicken, chicken legs, or even chicken breasts. Rotisserie chicken can also work. But its really easy to make this broth with the wings and cooks up so fast.

  • 1tbspextra virgin olive oil
  • 1cupof thinly sliced celery
  • 2-3cupsof thinly sliced carrots
  • 1/2of a large white onionroughly chopped
  • 1/3cupof chopped fresh parsley
  • 4cupschopped rotisserie chicken
  • 1cupfreshly grated Parmesan cheeseplus extra for garnishing
  • salt and pepperto taste
  • 1lbacini di pepe

Homemade Broth With A Chicken Or Turkey Carcass:

  • When roasting a chicken or turkey, reserve the carcass. Place in your largest stock pot along with a couple of quartered onions 2-3 carrots 2-3 celery stalks a few sprigs of fresh parsley peppercorns and bay leaves. Cover with cold water to cover by at least a couple of inches. Bring to a boil, then lower to a simmer and cook for about 3 hours until it reduces and turns into liquid gold!
  • My mother also adds a whole fresh tomato to her broth to for color.
  • When ready, remove the bones and vegetables. Strain the broth through a fine mesh sieve into a large bowl. Let cool and freeze in plastic containers that are freezer-safe for up to 3 months.

This homemade Italian style chicken soup is not a recipe for a heavy, vegetable and noodle laden pot of soup, but a light, brothy and deliciously simple chicken soup. I cannot stress the word simple enough.

It used to be that one could buy an older chicken, which was really much better for making soup, but that is not the case anymore, so I just buy a whole organic chicken.

You dont have to add pastina to the soup, if youd like to make it gluten-free, but my favorite type of pastina is called acini de pepe which translates to peppercorns in English.

    Absolutely! I make a huge pot of this monthly and freeze it in smaller containers. Just ladle into your freezer-safe containers leaving a 1 gap at the top. Once cooled completely, place the lid and put it in the freezer.

    This makes great dishes to drop off with your family and friends! Just drop off a container of soup , a loaf of crusty bread and reheating instructions. This would put a smile on anyones face!

    Let me tell you a little bit about pastina, my secret weapon, my loyal friend. It is quick, it is nourishing, it is guaranteed to delight even the pickiest eater and, most importantly, really, it is delicious.

    Well, of course it is. It’s just pasta, in adorable little shapes , cooked in a little bit of barely-salted water, then served in a puddle of cooking water, with a drizzle of olive oil and a scattering of grated Parmesan cheese on top.

    I started feeding Hugo this base recipe for pastina when he was 6 or 7 months old and oh, how he’d open his mouth wide, tilting his head back, blinking desperately at me for more and more! It was something else.

    Now that he’s a little older, I add a few quartered cherry tomatoes to the water along with the pasta and then pull the skins off with my fingers before serving the dish to Hugo for dinner. He gobbles up those cooked, sweet tomatoes with gusto.

    When we were in Italy, our friend Maria gave us a few freshly laid eggs from her chickens. Back home, at dinnertime, my aunt Laura told me to stir one of the eggs into Hugo’s pot of pastina, just after the pasta finished cooking and the flame was already turned off.

    What resulted was a stewier, creamier version of egg drop soup. Not only did Hugo practically inhale it, but I even found myself sneaking a bite or three when he wasn’t looking.

    If you cant find it you could use orzo, stellini, ditalini or tubetti pasta. Couscous doesnt quite work and tends to turn gummy.

    I know someone will ask so I might as well put it out there. Yes, you can use cooked rice but make sure you cook it in stock!.

    How To Make Italian Wedding Soup

    To make the actual soup is easy. Where Id say youll spend the majority of your time is making the mini meatballs and chopping the vegetables. This is something that would be great to get the kids involved! Have one mix the meatballs and the other scoop/roll them out.

  • Mix the meatball mixture, shape into mini meatballs and place on a parchment-lined sheet pan.
  • In a dutch oven or stockpot, sauté up your carrots, onions, and celery. Once they are translucent, add in the stock and bring to a boil.
  • When the veggies are sauteing, chop up the escarole. When the stock is boiling, add in the escarole, mini meatballs, and the Acini de Pepe. Stir to combine.
  • While the meatballs, pasta, and escarole are cooking, whisk together the eggs and parmesan cheese.
  • When the meatballs are cooked through, slowly stir in the egg parmesan mixture to form thin strands of egg. Cook for about a minute and season to taste.
