Fast And Easy Slow Cooker Pot Roast Meal

No browning, no fussing, just put the roast in the crock pot in the morning, add a few cans of soup and vegetables, and you have a delicious meal in 8 to 10 hours.
Chuck roast for pot roast is good, but rump roast, bottom round, or a beef brisket can work as well.
1 boneless pot roast
2pounds small white potatoes, scrubbed
4largecarrots, cut into 3-inch sticks
1 cancondensed golden mushroom soup
1 cancondensed beef broth
1dashfreshly ground black pepper
How To Make Pot Roast:
Sear meat: Heat a large large skillet over medium-high heat. Season roast with salt and pepper, generously, on all sides. Add oil to the pot and once hot, add the meat, Sear, cooking the meat until browned on the bottom, then rotating it every few minutes until browned on all sides. Place meat in the bottom of a lightly greased slow cooker .
Add sauce: Stir together the cream of soup mixture and dry onion soup seasoning in a bowl. Pour mixture over the meat in the slow cooker.;
Cook covered on LOW for 8-10 hours. If adding veggies, add them 1.5 2 hours before the timer is up.

How To Make Beef Roast With Onion Soup Mix
While our roast is going to pick up plenty of flavors during its long roast time in the oven, a little salt and pepper will go a long way! Give your roast a quick hit of salt and pepper- make sure you pat it in real well.

1. Heat oil in large nonstick skillet over medium-high heat and brown roast.

3. Combine Lipton® Recipe Secrets® Onion Soup Mix with water in glass measuring cup. Add to skillet, scraping up any brown bits from bottom of pan. Add soup mixture to slow cooker. Cook covered on Low 8 to 10 hours or HIGH 4 to 6 hours. Remove roast and vegetables to serving platter.
4. Thicken gravy, if desired, by combining additional 1/4 cup water with 2 tablespoons all-purpose flour. Cook on HIGH 15 minutes or until thickened.

Heat up a large skillet on high. Add oil to hot skillet. You want it really hot here to brown or “sear” the beef quickly. Note: I have one of those nifty new Ninja slow cookers that has a “stovetop” option, which means I can brown the meat all right in my crock pot and not dirty up any other dishes. However, if you are in a rush, just skip the browning step altogether.
Take a paper towel and make sure you dry both sides of the pot roast Then season with a little bit of salt and pepper. Once the skillet is nice and hot, add the roast.;Allow the roast to cook for about 2-3 minutes until it is golden brown. The browning of the outside of the meat just adds flavor. Using tongs, flip the meat over and sear the other side of the roast for another 2-3 minutes.

Note: This butter is a Kerrygold garlic & herb butter. The sticks were on sale at Kroger so I had picked up a bunch. That was the first time I had ever seen the butter in sticks. I absolutely LOVE Kerrygold butter. Irish butter just can’t be beat in terms of flavor. Must be that yummy Irish grass. But a regular ole stick of salted butter will still work perfectly in this. Cover and cook on low for 8 hours. You don’t add any other liquid to this. The meat will create it’s own juices at it cooks. Just cover and let it do its’ thing.
