What Else Do You Put In Chicken Coconut Curry Soup

A few other key ingredients that really flavor this soup are lemongrass and lime. The lemongrass has a pretty thick outer stalk, so be sure to remove that and just use the inner, softer stalk for the recipe. Also, be sure to really chop it up well, you want it to form almost a paste. For the lime, you can add more or less to adjust the flavor to your liking.

Another Version Of A Favorite

This Keto Thai Chicken Soup with zucchini noodles is the low carb ultimate comfort food. Its so easy to make and only takes 30 minutes from start to finish. Dairy-free and Paleo too.

I first created this delicious and easy Thai Chicken Soup back in 2015 and its been a favorite ever since. It got really chilly here in Portland this past weekend so I made it yet again. Id almost forgotten how good it is!

I really do love soup of all kinds. Rich and hearty soups like my Chile Relleno Chicken Soup, or vegetable soups like the Keto Cream of Mushroom. And dont even get my started on chili, which may be the ultimate comfort food. Have you tried my Keto Short Rib Chili yet?

But this Thai Chicken Soup was the first soup I ever added zucchini noodles to, and I was blown away by the flavor and consistency of the soup itself. And the zoodles were utterly perfect. I have the ideal way for allowing them to cook without being too soggy in a soup like this.

Keto Thai Chicken Soup With Coconut Milk

My green curry coconut fish soup is a take on the Thai dish Tom Ka Plah It is a rich, creamy, tangy sweet and sour soup made with coconut milk and fish, among other flavorful ingredients.

Tom Ka Pla is low in carbohydrates, which makes it perfect for you if you are following a low-sugar, low-carb, keto, or even Trim Healthy Mama diet plans. It’s also very rich, so you will feel satiated after eating it. With the sweet, sour, and spicy combo of this delicious dish from Thailand, you will be making this soup on a weekly basis.

So what does Tom Ka Pla actually mean in Thai? Well, tom means to boil, Kha is a type of ginger, and plah or pla is fish. Simple, right?

Whitefish is a healthy source of protein, that while lower in omega-3s than fatty fish like salmon, it contains less mercury than other popular fish such as tuna. Cod is also a good source of B vitamins. Coldwater fish like cod is shown to be beneficial for people with atherosclerosis and diabetic heart disease. Regular consumption lowers the risk of heart disease.

You will enjoy using cod as it is a firm fish that can be used for baking, broiling, frying, boiling, and many other methods of preparation.

Keto Thai Coconut Soup

With a few substitutions here and there, its very easy to eat delicious Thai food thats low carb at the same time.

My first experiences with Thai food were definitely memorable. I was a sophomore or junior in college, and a group of friends decided to check out a fairly new local Thai restaurant. In the middle of Texas.

I loved and still love trying new flavors and experiencing other cultures and was super-excited to give Thai food a go. Unfortunately, my Texas Thai food experience was not a pleasant one. In fact, it made me sick for the next two days.

Regrettably, this disaster of a meal put my love of Thai food on hold for a number of years. Do you have a similar food memory you cant shake? For years afterward, the smell of spicy coconut milk took me back to that experience, and not in a good way.

How To Make Keto Thai Coconut Curry Soup

You’ll start by poaching 2 chicken breasts in chicken stock until tender.

Continue by shredding the cooked chicken breasts.

You can certainly use shredded rotisserie chicken instead, if you’d like.

When selecting rotisserie chicken, be sure and look at the label for added sugar or other ingredients that aren’t recommended for those on Keto or low carb diets.

Take the piece of lemongrass and hit it a few times with the back of your knife. This will release the flavor into the soup, which really adds so much!

Heat a large pot to medium, add in the butter and oil and sauté the mushrooms and red pepper for a few minutes.

Add in the ginger and garlic, sauté for about 20 seconds, then stir in the curry paste and allow to toast for 10 seconds.

Deglaze the pan with the chicken stock . Add in the coconut milk, chicken, lime juice/zest, fish sauce, lemongrass and scallions. Simmer for 15 minutes, uncovered.

Add in the zucchini and allow to cook 5 more minutes or until tender.

Discard the lemongrass, garnish with fresh cilantro and serve with a squeeze of lime!

Store leftovers in the fridge for a few days.

How To Make Easy Thai Chicken Soup

But you dont want to just plop them into the soup the way you would with regular noodles. So bear with me here and I will give you my little trick for making them absolutely perfect and not the least bit soggy.

The soup itself is insanely easy to make. Simply sauté the onions in coconut oil, and add in the aromatics like jalapeño, Thai curry paste, and garlic. I love the green Thai curry paste for this but you could use red as well. And if you dont like things as spicy as I do, skip the jalapeno and cut back on the curry paste.

Once you add the broth, you bring the soup to a boil and add the red pepper, sliced chicken, and fish sauce. The chicken is thinly sliced so it cooks quickly in the broth itself, and only takes about 5 minutes. A little chopped cilantro adds great flavor too.

Only now do you get to add the zucchini noodles. Except you dont add them to the pot with the soup. You place them at the bottom of the soup bowl and pour the hot soup over top of each individual serving. The heat of the soup cooks the noodles perfectly, without making them soggy.

This Thai Chicken Soup is the perfect comfort food. One of my friends swears it cured her of the flu!

What To Eat With Thai Chicken Soup

Low Carb Keto Thai Coconut Soup

If you are going to eat this for lunch, eat it with a low-carb grilled cheese. Its a light and easy lunch that is incredibly satisfying!

This also makes a perfect starter for a Thai dinner. Serve it with keto chicken pad Thai. Thats one of my favorite Thai dishes. For those of you that like lots of spice, make some spicy Thai noodleswith this soup.

Know The Staple Dishes

Familiarize yourself with the staple dishes in a Thai restaurant. Many of the dishes are built onto these:

  • Tom Yam Goong – This is a sour and hot soup that contains vegetables and shrimp.
  • Som Tam – This is a spicy salad with noodles, vegetables, and shredded papaya .
  • Pad Thai – This is a stir fry rice, vegetables, and/or meats.
  • Massaman Curry – This is a curry with garlic and shrimp, along with cinnamon, cloves, cardamom, cumin, anise star, nutmeg, and chili peppers.
  • Thai Fried Rice – This is stir-fried Jasmine rice with eggs, onion, and meat.
  • Green Curry – This curry is made with green chilis and coconut milk.
  • Neua Nam Tok – A rice-based dish with meat and chili fruits.

These are not all keto-friendly, but it gives you an idea of what’s on the menu.

How To Make Keto Thai Coconut Soup

KETO/LOW CARB Thai Coconut Chicken Soup. Green Chef #2

First, take out a large soup pot or dutch oven and melt the coconut oil over medium-high heat. You can also use avocado oil instead if you dont have coconut oil.

Second, add the shrimp and stir it occasionally for 2-3 minutes until it turns pink. Sprinkle on salt to taste and then remove it to a bowl. Set it aside for now.

Then, back to the pot, add the onion, bell pepper, garlic, and zucchini. Stir it all occasionally until the vegetables become tender .

A note on the zucchini

I prefer to slice the zucchini and cut the rounds into fourths for my soup. However, you can cut them any size you want or even use a spiralizer to create noodles for your meal. Ive done both and admit its just easier for me to slice instead of spiralize.

Next, add in the ginger and lemongrass and cook another minute.

Instead of actual lemongrass I often use 5 drops of quality lemongrass essential oil. If you do choose to use lemongrass essential oil, add it at the end instead of at this point. It cuts down on the carbs and is easy to keep in the cabinet!

Now, whisk in the curry paste, coconut milk, bone broth, and pepper.

Slowly, bring it all to a boil and then reduce the heat and simmer until the soup thickens slightly. This can be for about 10 minutes or longer to allow the flavors to combine. I often like the soup the second day better because the flavors have more time to blend.

How To Make Tom Kha Gai:

Heat the avocado oil in a large pot or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until the edges begin to brown, about 5 to 8 minutes.

Add the garlic and mushrooms and continue sauteing another 3 minutes, until mushrooms begin to sweat.

Add the remaining ingredients, stir well, cover the pot, and bring to a full boil. Reduce the heat to a simmer and cook 20 to 30 minutes, until the soup is very aromatic and the chicken is cooked through.

Serve soup in big bowls with lime wedges and cilantro.
