How To Make French Onion Soup

How To Caramelize Onions:

The first step is to melt a stick of butter in a pan.

Add the onions and sauté 5 minutes until the onions become soft.

Add coconut sugar and spices. I normally wouldn’t add sugar to a soup recipe, but the sugar helps the onions caramelize. Cover and allow the onions to cook for 20 minutes, or until they are caramelized like the next picture.

Add the caramelized onions to a soup pot.

Pour in the beef broth. Add two bay leaves and thyme. Cover and allow to simmer for one hour.

Use a ladle to fill bowls with the gluten free French onion soup.

This is my favorite part. Grab a bag of Milton’s Gluten Free Sea Salt Crackers. Take about 4 or 5 crackers and place them on top of the onion soup.

Top with a thick slice of gruyere cheese. Place the soup bowls in a baking dish and place under a broiler until the cheese gets all melty.

I love soup. It is a quick, warm, yummy way to pack a lot of nutritious veggies into one satisfying meal. When I went gluten free I quickly realized that most canned soups were off limits to me. The few brands that were gluten free were wildly expensive or did not have many flavor choices. Canned soups also pack in way too much sodium and other unnecessary additives. So I went on an adventure through the produce department and was off on a quest to make my own homemade soups. One of my favorite soups has always been french onion. The rich broth and soft veggies with garlicy croutons and creamy white cheese make my mouth very happy. I had no idea where I was going to find a good garlic crouton to finish off this dish until I won a from Glutino. In the gift basket was a box of Glutino garlic and parmesan bagel chips. They worked perfectly! If you have been craving a simple gluten free french onion soup, this should hit the spot.   • 8 to 12 oz white wine
  • 12 oz button mushrooms sliced
  • 2 small onions sliced thin

    I used to love the idea of french onion soup – but all those onions sent a chill up my spine. The broth is just so flavorful and delicious, the toasted baguette on top is just…well, it’s bread. I’m DOWN for bread. Top anything with cheese and I’ll try my best to love it. But onions? It took me a long time to really appreciate the texture of cooked onions.

    Now though, I’m totally down for the onions. Especially rich caramelized onions. Oh, lord. They are the secret to making the best french onion soup!

    It Takes Time To Make French Onion Soup

    French Onion Soup with Parmesan Croutons

    First, you add butter, olive oil, garlic, onions and some water to a large soup pot. Cover and cook for a few minutes until the onions soften. By now, the water would have evaporated. Now starts the process of slowly getting to caramelize the onions. To do this, the heat is at low temperature, and you must stir the onions frequently. Trust me on this, it is well worth the time. Whenever I made the French onion soup, I also do some baking, this way, I am in the kitchen anyway to keep my eye on the onions. Once the onions turn into a golden colour, we add the seasoning. Some brandy, bay leaf, thyme, beef broth, salt and pepper. Now all you have to do is, simmer the soup for an additional 15 minutes, infusing the broth with the flavours of caramelized onions, brandy and spices. Nex is the easy part, ladle soups into oven-proof bowls, top with a round slice of toasted gluten-free French bread and plenty of Gruyere cheese or cheese of choice. Place bowls on a baking sheet and broil until the cheese has melted and is bubbling. Thats it! Not complicated, but it takes time. And, as I said before, it is well worth it, because the soup is outstanding. I find the soup is so hearty that it can replace the main dish.

    What Is The Best Onion To Use For This Soup

    My favorite onion to use is a large sweet onion. Some stores have Hawaiian sweet onions. Their mellow sweetness adds to the caramelized flavor of this soup. You can also use red onion, which adds a deeper onion flavor.

    Yellow onions are just okay…they give off an initial bitter taste, which my son didn’t like as much.

    Tips For The Best French Onion Soup

    There are three essential components to good French Onion Soup:

    • Stock: this soup is traditionally made with beef stock. If youve got scraps from a leftover roast and time to make beef stock from scratch, do it! I never have time for that, so I opt for store-bought. But instead of buying it canned, I actually get it from the butcher. Either way, make sure its the best quality. Its the base of this soup and can make or break it.
    • Onions: properly caramelizing the onions is critical. A quick sauté or even golden is not good enough for French onion soup. Those onions need to be fully caramelized for the deepest color and flavor. Its a non-negotiable.
    • Time: time and patience is required for this soup. But the pay off is worth it, I promise! Properly caramelized onions takes time, about 40 minutes. Then those simmer in the broth for a long time. Skimping on either will get you less than stellar results. The good news is, a lot of the time is hands-off, so at least youre not laboring away at the stove the entire time.

    • Caramelizing onions is a chemical thing. It happens when the natural sugar in the onions reaches a certain temperature. This takes a while, which is why you need to be patient and stir occasionally, not constantly, or they wont brown. While the sugar in the beginning is optional , the salt is a must. Dont skip it.
    • You can make this vegetarian by replacing the beef and chicken stock with vegetable stock and use vegan Worcestershire.
    • The red wine not only deglazes the pan, but it cooks off and deepens the flavor of this soup. Having said that, if you are completely opposed to using it, you can skip it, but note that the soup will not be as tasty.
    • If you dont have oven-safe bowls , you can skip the broiling part, make cheese toasts on a baking sheet and top the soup with those, or even use croutons.
