This recipe is based off an authentic family seafood gumbo recipe, so if you dont believe tomatoes belong in gumbo, well, then take it up with the family! Just kidding, take it up with me, because youre so wrong, my friend! Really, though: typically we find tomatoes in okra gumbo and no tomatoes in non-okra gumbo. Since theres okra in this one, weve got the tomatoes, too.
Interestingly, the presence of tomatoes also makes this dish more Creole than Cajun.

Where To Find Okra
You may possibly find fresh okra in the produce department of your local grocery store from summer through early fall. However, here in Southern California I think I have seen it a grand total of 2 times in my lifetime. I have found the best way to purchase it is at the bigger grocery stores, in their freezer sections.
How To Make Healthy Authentic Seafood Gumbo:
Start by making your roux: heat 1/3 cup bacon drippings in a large Dutch oven over medium-low heat. Sprinkle the cassava flour over and whisk until smooth. Settle in: youll continue to cook this mixture over medium-low heat, stirring pretty constantly, for about 30 minutes, or until it turns a deep amber color. Keep a close eye on it so it doesnt burn but slooooowly becomes a darker and darker shade. Youll want it to look about like this, if not a smidge darker, when its ready:
You can prep the rest of your veggies whilst working on the roux but only for a minute or so at a time before checking back on the roux!
While the roux cooks, pulse your celery, onion, bell pepper, and garlic together in a food processor a few times until the mixture is chopped pretty fine and uniform.
When the roux is ready, stir this Holy Trinity mixture and the sliced sausage into the roux and stir to mix well. Stir in a cup of water and whisk to combine. Simmer this mixture over medium heat until the veggies are softened a bit, about 15 minutes. To keep the mixture from scorching on the bottom, add the 2nd cup of water during this process, if necessary.
If you have gumbo filé , add 1/2 teaspoon to the gumbo after 1 hour of simmering.
If you have gumbo filé, stir in 1 teaspoon.
Serve with a little steamed cauliflower rice. Stir it in to your gumbo or pack a 1/2 cup measuring cup full and invert it in the center of a serving bowl of gumbo. Garnish with chopped parsley.

How To Get A Dark Roux
You can make this gumbo recipe with a simple roux or if you prefer your gumbo to have that rich, dark color, you can make a dark roux. Keep in mind, that by making a dark roux you are adding another 35-40 minutes to your cook time. To make a dark roux, simply cook your roux longer until it gets to be a deep, golden brown color and this takes time. Keep a close eye on it and stir it constantly because you want it to be dark, but not burnt. Follow the rest of the recipe as indicated below.

Okay! Before anybody throws tomatoes at me, please hear me out! I understand completely that this is NOT gumbo. I do not claim for it to be. This is soup. My wife cannot have flour, so this is as close to eating gumbo as she can get. But I’m fully aware that the dark roux used to make gumbo is essential! So this is a substitute teacher – Instant Pot gumbo soup. But I will say this… it tastes quite a bit like it. The real difference comes with this… I only used some tomato sauce to help thicken it, along with the okra.

How To Make Gluten Free Gumbo
Step One: The first step is to brown the diced chicken thighs in a little avocado oil. While the chicken is browning, season it with a little salt and pepper.
Once the chicken is mostly browned, add in the smoked sausage and allow the chicken to continue cooking until it is done. Then, remove the chicken, sausage, and any remaining liquid from the pot.
Step Two: Next, its time to make the roux. Add the diced butter butter to the pot and let it melt. Once the butter is melted, youll whisk in the flour to create a thick paste.
Let the flour and butter mixture cook over medium heat, whisking frequently, for around 20 minutes until it becomes a dark rich color. As it cooks, the roux will become less like a paste and a bit more of a liquid consistency.
Step Three: Once the roux has reached the right color, the work is pretty much done! Next, youll just need to add the tomato paste, cajun spice seasoning, bell peppers, onion, garlic, and celery to the hot roux and allow everything to cook for a few minutes until the veggies start to become tender.
Next, add the herbs, diced tomatoes, okra, chicken stock, coconut aminos, hot sauce, and cooked chicken and sausage back to the pot. Give everything a good stir and bring to a boil. Once its boiling, reduce the heat to a simmer and cover. Let the gumbo simmer for an hour.
Step Four: After the gumbo has been simmering for around an hour, the final steps are to thicken it and add in the shrimp!

We are FINALLY beginning to experience fall like temperatures here in Charlotte which means its officially all things warm and cozy. This chicken and sausage gumbo is just the kind of dish I want to curl up with all season long. Its hearty and comforting with just enough spice to wake your taste buds up.
Unlike many of the recipes I post on here, this dish requires a bit more time and effort to assemble. Trust me when I say it will be well worth it in the end. Plus the recipe makes a healthy portion giving you plenty of leftovers for the week or to freeze and bring out at a later time. Personally, I think the leftovers are even better as the flavors have time to blossom together.
This gumbo is the perfect thing to make on the weekends as you have more time to spend in the kitchen. Pour yourself a glass of wine, turn on some music and get started chopping some veggies and making your roux. While everything is simmering you will have plenty of time to sit with loved ones or do things around the house. The aroma from the kitchen will add to the coziness of the afternoon. I would do it all again for those minutes of watching my Dad be so happy, so content, so nourished, and so at home. He was home!!! And at peace. And eating a gluten free gumbo that tastes just like the traditional wheat flour and oil gumbos that he holds in such high regard.

How To Make Instant Pot Gumbo Soup
Using sauté setting – once hot, add 1 tablespoon of oil and sliced sausage. Brown thoroughly on both sides. Remove and set aside.
Continuing on sauté setting – add 1 tablespoon of oil and chicken breasts . Brown on both sides , but do not cook completely. You just want to get some color on them. Remove and set aside.
Do not wipe or rinse out pot. There’s some GREAT flavor in there!
Add onions and celery to pot …
…and cook for about 5 minutes, until veggies soften a bit.
Add red bell peppers and garlic…
…and cook for another 3 minutes or so.
Return chicken breasts to pot, along with bay leaves…
…stewed tomatoes, tomato sauce…
…beef stock, creole seasoning…
…and okra. Mix well, lock lid and cook for 15 minutes at high pressure.
Once cook time is complete, allow pressure to release naturally for 10 minutes. Then quick-release remaining pressure. Remove lid, chicken breasts and bay leaves. In a separate bowl, using two forks, shred the chicken into bite-size pieces.
Add shrimp and mix well. Return lid and allow shrimp to cook in the residual heat for at least 5 minutes.
You can tell they’re done when they are opaque and pink.
Return sausage to pot…
…along with shredded chicken…
…green onions and parsley. Mix well and allow to sit for just a few minutes before serving. Serve with rice – for Whole30, we used cauliflower rice.
