Tips For A Gourmet Grilled Cheese
You can make any type of grilled cheese to go with this tomato soup. But our favorite is this gourmet grilled cheese! Just a few small tweaks take this classic sandwich from good to great. Heres what to know:
- Use sourdough bread or another type of artisan loaf or crusty bread. Great bread makes the sandwich!
- Combine shredded smoked gouda and cheddar cheese. The hint of smoky cheese makes this sandwich taste incredible! Shredded cheese is great for a grilled cheese, because it makes the gooiest, meltiest interior .
- Add a sweet element. Pairing sweet with the savory takes it to another level! Try tomato, fig or apricot jam, or a thinly sliced apple or pear.

Grate The Gouda Cheese
Start by choosing your cheese. It is a really important step in achieving a mouthing watering grilled cheese. You want to look for one that has a sharp flavor and is somewhat creamy so that it melts nicely.
In this recipe, I chose to use Gouda. It melts well and has a crowd-pleasing flavor. You can also use Monterey Jack, cheddar, or Havarti really there are so many choices! If you really wanted to you could go all American and do some American cheese, it does melt well.
Using the larger grating side of a box grater is the way to go so that you have bigger pieces that will melt easier than a slice of cheese.
Easy Grilled Cheese And Creamy Tomato Soup Recipe
When its cold outside and youre looking for something to make you feel warm and cozy, youre going to need this Easy Grilled Cheese and Creamy Tomato Soup Recipe in your life.
You will never believe what I am about to tell you. I am just now, in my mid-thirties, starting to fall in love with Grilled Cheese Sandwiches and Creamy Tomato Soup. I KNOW! Where have I been all my life, right? Well if youve been following my blog for some time you have, more than likely, read a blog post where I discuss my moms, not-so-great, cooking growing up. My mom was an okay cook, but as we got older she could careless and had nothing left to prove about her cooking abilities.
But when I was younger, I remember my mom making me and my younger brother BURNT Grilled Cheese Sandwiches and gross canned tomato soup. Now, before I get reported to the Campbells Soup police, there is nothing wrong with that or any brands canned creamed tomato soup, but I do believe you have to add a little salt and pepper in there. My mom added nothing. Just warned up the soup.

Everyones favorite tomato soup with the most perfect mini grilled cheese bites! So comforting, so cozy.
I hope you all are recovering from Thanksgiving. I obviously ate way too much than I could actually handle and then had a second round of Thanksgiving leftovers on Friday where we had the most amazing turkey ham sandwiches with cranberry sauce and gravy-drenched boxed stuffing. Yeah, you heard right, boxed stuffing. We all devoured the chestnut-pancetta stuffing that was made for Thursday so we had to resort to Mrs. Cubbisons classic dressing. And surprisingly enough, the boxed ones are actually pretty good!
I am so grateful to be spending Thanksgiving with such an amazing family and to be surrounded by such awesome food. Although it saddens me that there are still many Hurricane Sandy victims left homeless on this holiday. With $50 billion in damages, the deaths of over a 100 people and thousands left homeless or without power, todays #SundaySupper is to lend a helping hand to those affected in the Northeast.
We were told to cook from our hearts and with that in mind, I couldnt help but make a huge batch of creamy tomato soup. Tomato soup brings such comfort, especially when some grilled cheese croutons are thrown in there. It has that soothing effect and definitely serves as the ultimate feel-good meal!

How To Thicken Tomato Soup
Allowing the soup to simmer and reduce will thicken it but if you want a thicker end result, mix 1-2 teaspoons of corn starch with a few teaspoons of water and stir into the soup. Allow to simmer until thickened. Alternatively, you can add some cubed potatoes to the onions and allow to cook completely. The blended potatoes will thicken the soup without the need for any additional thickeners.

How I Created This Homemade Tomato Soup Recipe With Grilled Cheese Croutons
Kay I am obsessed with Tomato soup and grilled cheese it was a favorite meal growing up. My dad made us grilled cheese and tomato soup ever week but of course his version was with a canned soup. As Ive gotten older Ive of course elevated the meal a bit with this thick and creamy tomato soup!
Every time I go to a restaurant with soup as an option I always check for tomato basil soup if they have it I always try it. Id say 90% of the time Im disappointed.
One of the exceptions was this amazing tomato soup at this place in Dallas I used to go all the time and they even sold jars in the grocery store. But when I left Texas I left my favorite soup.
So the answer was I needed to create a soup that was similar I could easily make at home. And thats when this soup was born! But while I loved it my kids still seemed to prefer the thin canned tomato soup so I put this recipe aside and kinda forgot about it!
Then last year when we were at Disneyland we spend the week trying all the food and at the end of the week I asked my kids what their favorite Disney treat had been.
4 of the kids picked some kind of dessert/treat of course, but my 2nd child said the tomato soup Then he asked if we could make tomato soup from scratch instead of from the can
Boy after my own heart! I told him I had a from scratch tomato soup I just hadnt made it in like 10 years! The very first meal we made when we came home from our trip was this soup!

How To Make Homemade Tomato Soup: Some Tips
Every cook needs a great homemade tomato soup recipe, and this ones ours! It relies on a few simple ingredients to make big flavor. It takes just 25 minutes to make, and you can simmer it while you make the grilled cheese! Here are a few tips on assembling this simple soup:
- Fire-roasted tomatoes bring the best flavor. This type of canned tomato is roasted over a flame before canning, which makes it taste sweeter right out of the can. This means you can get away with less simmering time! Most mainstream grocery stores in the US now carry this type, but if you cant find them, just use the best quality tomatoes you can find.
- Give the soup a quick blend! You can use a standard blender or immersion blender, which makes a nice, creamy texture and helps emulsify the oil.
- Add fresh basil and a little butter. Fresh basil adds great flavor and an herby pop, but its not required! We like finishing the soup with butter to provide a rich, silky mouthfeel.

Tomato Grilled Cheese Soup
I have few distinct memories of those earliest days as a mother even just two years later, theyve all blended together into a smoky haze of early-early mornings, nursing and Scandal marathons at 2 a.m., sweet snuggles with a sleepy babe who fit perfectly into the crux of my arm and a veritable parade of generous friends and family wielding casseroles and salads and homemade bread in exchange for their own snuggles with baby .
One thing we never got much of was soup, and I suppose thats because we were heading into summertime and all that was on everyones minds was grilled meat and fresh vegetables and wedges of juicy watermelon . But I know that if I was having a newborn in the fall, in these comfy-cozy months, I would want soup with grilled cheese, of course.
Thats why I made this delightful bowl of yums for Cynthia of Two Red Bowls and our collective internet celebration of her baby bowl, a.k.a. B3, a.k.a. Luke, a.k.a. the cutest button of a baby you ever did see.
We were hoping to surprise her with this mega-list of foods in bowls before the babe was born, but it seems she beat us to it! No matter it gave me the chance to ooh and ahh over the photos of her baby while also enjoying this tomato grilled cheese soup. The best combination, if you ask me.
