  • 1 tablespoon Country Crock® Spread
  • 1 medium tomato, sliced
  • 4 ounces sliced Cheddar cheese

    Heat 12-inch nonstick skillet over medium heat. Spread Country Crock® Spread on one side of each bread slice.

How I Created This Homemade Tomato Soup Recipe With Grilled Cheese Croutons

Kay I am obsessed with Tomato soup and grilled cheese it was a favorite meal growing up. My dad made us grilled cheese and tomato soup ever week but of course his version was with a canned soup. As Ive gotten older Ive of course elevated the meal a bit with this thick and creamy tomato soup!

Every time I go to a restaurant with soup as an option I always check for tomato basil soup if they have it I always try it. Id say 90% of the time Im disappointed.

One of the exceptions was this amazing tomato soup at this place in Dallas I used to go all the time and they even sold jars in the grocery store. But when I left Texas I left my favorite soup.

So the answer was I needed to create a soup that was similar I could easily make at home. And thats when this soup was born! But while I loved it my kids still seemed to prefer the thin canned tomato soup so I put this recipe aside and kinda forgot about it!

Then last year when we were at Disneyland we spend the week trying all the food and at the end of the week I asked my kids what their favorite Disney treat had been.

4 of the kids picked some kind of dessert/treat of course, but my 2nd child said the tomato soup Then he asked if we could make tomato soup from scratch instead of from the can

Boy after my own heart! I told him I had a from scratch tomato soup I just hadnt made it in like 10 years! The very first meal we made when we came home from our trip was this soup!

How To Make Grilled Cheese And Tomato Soup

Lets start with the soup!!

Saute the garlic in a large pot over medium heat until fragrant. Add the tomatoes, basil, thyme and onion powder to the pot. . Stir and cook for 10 minutes.

Reduce the heat to medium-low and add the chicken broth and the tomato liquid. Stir and allow to cook, uncovered, for 35-40 minutes. Stir occasionally. Add garlic salt and pepper to taste. Working in small batches add the soup to a blender. Blend the chunky mixture until it is smooth and creamy. Pour into a large serving bowl. Repeat with the remaining soup until it has all been blended and added to a serving bowl.

Stir the heavy cream into the blended mixture. Mix until well combined. Taste, if needed, and add more garlic salt and pepper. Garnish with croutons, basil and Parmesan Cheese.

  • Roast the tomatoes: Roasting the tomatoes with aromatics before blending into the soup builds serious flavor. Its a quick and easy step that means your soup goes from good to great. If you dont have access to ripe, in-season tomatoes, using whole canned tomatoes are perfectly fine. Flavor the soup with ingredients that compliment tomatoes. Balsamic vinegar, basil and garlic are always a good idea where tomatoes are concerned. A little sugar tempers the acidity of the tomatoes but is completely optional.
  • Make the soup: Cook onions, garlic and basil in a little olive oil or butter until soft and translucent. Add the roasted tomatoes to this base along with stock. Cook until all the ingredients are soft then transfer to a blender and blend until smooth . Season to taste with salt and black pepper and add cream. Bring back up to a simmer then serve hot with bread of your choice or grilled cheese sandwiches.

    Tips For A Thick Tomato Soup

    Let the soup simmer and reduce the water to thicken, but if you want a thicker result, mix 1-2 teaspoons of cornstarch with a few teaspoons of water and stir into soup. Leave on low heat until thickened.

    Alternatively, you can add some cubed potatoes to the onions and let the onions cook completely. The mixed potatoes will thicken the soup without adding any thickeners.

    • Always freeze before adding ice cream. Let the mixed soup cool to room temperature. Transfer to a freezer-safe jar, box, or bag and seal. Freeze for up to 4 months. Thaw completely before adding cream and reheating.
