Deliciously Creamy & Super Satisfying
Youre going to want to start out by melting some butter in a large pot over a medium heat. As always, I strongly recommend using grass fed butter whenever possible due to its higher vitamin and antioxidant content. If thats not feasible for you, just make sure that youre always using real butter never margarine!
Once the butter has melted, add in the chopped onion. I usually combine mushrooms and onions when Im making a steak, but even without any beef, they make for an amazing combo that creates one truly tasty soup. Not only does the onion add a slightly spicy hint to the soup, but some of the compounds found in onions have also been found to help lower your risk of developing certain kinds of cancers, such as stomach cancer.
Mushrooms have also recently been found to possess certain anticancer benefits as well according to researchers. It turns out the pairing of mushrooms and onions doesnt just produce some incredibly good meals they also work together wonderfully when it comes to helping prevent cancer. After adding in your mushrooms with the onion, youll want to cook them until they are tender and lightly browned.
Keto Cream Of Mushroom Soup
Prep Time: 5 Minutes
- 2 Tablespoons Dried Minced Onion
- 1 Tablespoons Dried Parsley
- 2 Teaspoons Freshly Ground Pepper
Roughly chop your mushrooms into smaller chunks. They dont have to be perfect, just smaller.
In a medium sized saucepan, melt the butter and saute the garlic and minced onion for two minutes.
Add in the chopped mushrooms. Stir well and cook for another 4 minutes.
Add in the rest of the ingredients except the xanthan gum. Cook for about 10 minutes, bringing to a low boil, then reducing and simmering for the remainder of the time.
Add in the xanthan gum and stir well. Cook for about 4 minutes or until thickened.
Remove from the heat and enjoy!

What Kind Of Mushrooms Should I Use To Make Keto Cream Of Mushroom Soup
I love everyday white mushrooms in this recipe. They are big, plump, and have a subtle flavor that wont overtake the other flavors in this soup. However, you can also use cremini mushrooms and even shitake mushrooms. I would stay away from portobellos, though. They can discolor the soup if you dont remove the gills, and they have a much more aggressive flavor.

Mushroom soup is one of my favourites and as you saw in the video I waste no part of the shroom. I use to the stalks and cook them and blend them to add a thickness to the soup, to give it body. Step 1: Put the olive oil in a pot and heat it, then Slice the onions into rings and sauté them in olive oil.
Step 2: In a pot, add sliced mushrooms.
Step 3: In another pan, fry the bacon until crispy.
