What is so hard about this time of year though is that comfort food does not always go hand in hand with healthy food.
Fortunately this soup meets the criteria of comfort and health.
Yes, tomato soup is definitely healthy.
Unfortunately are a lot of soups out there that are loaded with unhealthy ingredients. However, this tomato soup is not one of those soups. No added sugars, preservatives, or other junk to make it less healthy.
Tomato soup is not only a healthy soup option, it is just a healthy option in general.
Loaded with vitamins, minerals, and antioxidants, tomato soup has so many health benefits.

Note:Most foods, even if healthy may have a less healthy element. Although tomato soup is filled with so many healthy goodies, it can be high in sodium. So if you are keeping to a low sodium diet, you may want to be mindful of this.

Be sure to use good quality canned tomatoes for this recipe since there arent a lot of other ingredients to mask the bitter or metallic flavor that you may get with low grade canned tomatoes. Homegrown, organic and/or San Marzano region tomatoes will typically give the best flavor. I use Cento brand when I can find them and Im never disappointed but any brand of tomatoes grown in and imported from Italy will likely yield delicious results.
Thats not to say this easy keto tomato basil soup wont still be tasty made with U.S. tomatoes, just maybe not quite as good as it could be.
Keto Tomato Soup In 15 Minutes
So how do we make this creamy low carb tomato soup in only 15 minutes? Well, we have to start with a secret shortcut ingredient. That would be a jar of sugar free marinara sauce!
Stay with me here because sugar free marinara sauce isnt just for dipping keto mozzarella sticks. As a matter of fact, the sauce that I use has the ingredients tomatoes, olive oil, onions, salt, garlic, basil, black pepper, and dried oregano. All of the flavors of a good tomato soup!
You could also make your own sauce with my recipe for keto marinara sauce.
Another reason I love to use a jar sugar free marinara for this low carb tomato soup is because tomatoes are in season in the Summer, I want this soup in the Winter when its cold outside!
Croutons To Top The Soup
If you noticed, I have some super crispy croutons on top of my soup. For those I use my recipe for 90 second keto bread, cut it into cubes, and brown them under the broiler. They make perfect gluten free croutons!

The store-bought tomato soup is not keto-friendly, so you have to make it yourself. It also depends on how you make it. While tomatoes are a low carb vegetable, the carbs do add up pretty quickly.
The serving on the soup is small to keep the carbs low, but if you eat two or more servings, you could use up all your carb allotment for the day.
Use Canned Tomatoes And Pre
Having said that, using these prepared ingredients is probably the easiest way to make this keto tomato soup, but I think it’s a little less flavorful.
However, if you’re short on time and want to throw together a low carb tomato soup quickly, this option is the best choice. By the way, if you choose this option, you’ll still probably need to mash the tomatoes down with a potato masher to get the perfect soup consistency.

Besides salt & pepper, this recipe includes the following ingredients:
- Roasted Tomatoes: Im using canned roasted tomatoes with all of their liquid to keep things simple. You can use fresh roasted tomatoes if you wish.
- Italian Seasoning
- Xanthan Gum: this is being used as a soup thickener. If you dont have Xanthan Gum, you can leave it out or swap 1/2 tsp of Xanthan Gum with 1 tbsp of unflavored collagen powder.
How Do You Make Tomato Soup Thicker Without Flour & Cornstarch
Typically, you would thicken tomato soup with flour or cornstarch. Since both of those options include carbs, Im including a zero carb sauce thickener called Xanthan Gum.
Id highly recommend adding Xanthan Gum to your keto kitchen pantry. Besides this recipe, you can use it to make Low Carb Berry Sauce, Keto Sweet Chili Sauce, and several of the sauces in these Low Carb Chinese Food Recipes.
As noted above, if you dont have Xanthan Gum, you can leave it out or swap 1/2 tsp with 1 tbsp of unflavored collagen powder.
