This recipe was actually created about 2-3 months ago when I came down with the most wicked of colds.

Low-grade fever, body aches, and a cough that lasted 3 weeks.

It.; Was.; Miserable.

Lets just say I spent a lot of time on the couch watching Christmas movies and cuddling with my dog, Tevah. < I didnt want to get Cohl sick!

It was a little too early into the cold and flu season to post this quick and easy chicken noodle soup recipe.; You know there is this thing called timeliness when it comes to food blogging and you want to post your recipe when it is most applicable to your audience.

Well, this week finally came, and there was that 30-Minute Easy Chicken Noodle Soup recipe on my Google calendar.

It felt like FOREVER ago that I was hit with that massive cold.; Would I remember what it felt like to drag myself into the kitchen and throw what ingredients I happened to have into a pot?

But little did I know it, here I am with my second cold of the season.

I think my body is telling me that I need to load up on antioxidants and limit my number of Paleo Chocolate Chip Cookies.

Whether you are coming down with a cold, caring for someone that has one, or just want a warm and cozy soup this easy chicken noodle soup recipe needs to happen.

How To Make Creamy Chicken Noodle Casserole:

Preheat the oven to 375 degrees Fahrenheit.;

Cook the noodles according to the instructions on the package. I typically cook noodles 2 minutes less than recommended so that they turn out al dente.

Add the avocado oil to a large skillet and add the onion, carrot, celery, garlic and mushrooms. Cook, stirring occasionally, until the vegetables begin to soften, about 5 to 8 minutes.

Add the chopped chicken breasts and continue cooking, stirring occasionally, until the chicken has browned.

Add the rest of the ingredients and stir well. Bring to a full boil and cook, stirring occasionally, until the sauce is thick, about 8 to 10 minutes.

Transfer the cooked noodles to a large casserole dish, along with the sauce.

Note: if youre adding cheese, you can either stir it in with everything or sprinkle it on top. Stir everything together and bake in the preheated oven for 20 to 30 minutes, until much of the sauce has been absorbed by the noodles.

My favorite onion to use is a large sweet onion. Some stores have Hawaiian sweet onions. Their mellow sweetness adds to the caramelized flavor of this soup. You can also use red onion, which adds a deeper onion flavor.

Yellow onions are just okaythey give off an initial bitter taste, which my son didnt like as much.

It Takes Time To Make French Onion Soup

First, you add butter, olive oil, garlic, onions and some water to a large soup pot. Cover and cook for a few minutes until the onions soften. By now, the water would have evaporated. Now starts the process of slowly getting to caramelize the onions. To do this, the heat is at low temperature, and you must stir the onions frequently. Trust me on this, it is well worth the time. Whenever I made the French onion soup, I also do some baking, this way, I am in the kitchen anyway to keep my eye on the onions. Once the onions turn into a golden colour, we add the seasoning. Some brandy, bay leaf, thyme, beef broth, salt and pepper. Now all you have to do is, simmer the soup for an additional 15 minutes, infusing the broth with the flavours of caramelized onions, brandy and spices. Nex is the easy part, ladle soups into oven-proof bowls, top with a round slice of toasted gluten-free French bread and plenty of Gruyere cheese or cheese of choice. Place bowls on a baking sheet and broil until the cheese has melted and is bubbling. Thats it! Not complicated, but it takes time. And, as I said before, it is well worth it, because the soup is outstanding. I find the soup is so hearty that it can replace the main dish.

French onion soup is great by itself, but you could serve it with a salad to round out your meal. Try the soup with my berry salad with goat cheese or arugula salad with fig and prosciutto. You could also serve the soup as a starter for any meal. It would be perfect paired with roast beef and roasted brussels sprouts.

How To Make Healthy Gluten Free Chicken Noodle Soup

Gluten-Free Homemade Chicken Noodle Soup

Step One: First, start by heating a large heavy-bottomed pot over medium heat. Once the pot is hot you can add in the oil. For this recipe I like to use a good tablespoon of olive oil but you could also use avocado or coconut oil. Whatever you have on hand will work just fine! Next, add the diced onion and garlic to the pot and saute for a few minutes.

Step Two: Once the onion begins to become translucent, add in the chopped celery and sliced carrots and give everything a good stir.

Step Three: Next, add in your herbs, spices, and bay leaves! Stir in the fresh thyme , dried bay leaves, turmeric powder, salt, and pepper.

Step Four: Ok, now its time to add your broth and cooked chicken. Pour in the chicken broth and give everything a good stir. Bring the soup to a simmer and then cover with a lid. Let the soup simmer for 10 to 15 minutes.

Step Five: Next, give the soup a taste and add in extra salt or pepper if you feel like the soup needs it. Ok, now add in your dry gluten free pasta and let it cook until tender. This could take anywhere between 8-12 minutes. It just depends on the type of pasta you use. It usually takes around ten minutes for me.

Step Six: Last, but certainly not least, its time to freshen things up a bit! Stir plenty of fresh fresh lemon juice and fresh dill into the soup and then give it taste. Add a little more lemon juice if you would like and then serve with extra fresh dill on top. Enjoy!
