Just follow the 5 simple steps below to make your own vegan green bean casserole.

  • Preheat the oven to 400°F.
  • Boil the green beans. Bring a large pot of salted water to boil on the stove. Add 1 pound of fresh, trimmed green beans, cut in half. Cook for 5 minutes, drain, then place the green beans in an ice water bath to stop the cooking. Wait 2-3 minutes, then drain the green beans from the ice bath and transfer them to a casserole dish.
  • Add the soup. Pour the cream of mushroom soup over the green beans.
  • Bake the casserole. Place in the oven and bake the casserole for 15 minutes.
  • Add the crispy onions. Top with 1 cup of crispy fried onions and place the casserole back in the oven for 5-10 minutes.

  • Season chicken on both sides with salt and pepper. Heat olive oil in a large pot over medium heat. Add chicken, skin-side-down, and let cook for 25 minutes, or until the internal temperature reaches 170°F, flipping halfway through. Transfer chicken to a plate and let cool.
  • Remove all but 3 tablespoons of fat from the pan. Add onion and sauté until softened, about 5 minutes. Sprinkle flour over and cook, stirring constantly for 2 minutes. Gradually whisk in milk and chicken stock. Bring to a boil and reduce heat to low. Add thyme and simmer for 10 minutes, uncovered.

    • 2 pints hot filtered water
    • 2 garlic cloves
    • 2 Tbsp fermented, aged, unpasteurized soy sauce
    • 1 tsp fish sauce
    • 2 tsp pine sprout salt
    • handful fresh or dried ramps
    • 1 cup heavy cream from pasture-raised cows

    Directions

  • Melt duck fat in cast iron pot. Add chopped onion, stir and brown gently.
  • Add chopped mushrooms.
  • When mushroom/onion mix gets some color, put half in the blender and blend with hot water. Add fermented or fresh garlic cloves and blend. This will thicken and flavor the soup. Pour it back into pot.
  • Add dried mushrooms, fish sauce, soy sauce, pine sprout salt, dried ramps and heavy cream.
  • Stir everything and let it come to gentle boil. Top with fresh ramps.
  • I served with homemade sourdough einkorn bread.
