How To Make Homemade Cream Of Mushroom Soup
To make a condensed cream of soup, simply saute garlic and onion in butter and olive oil mixture. Add mushrooms and cook until soft and fragrant. Add cornstarch and half and half mixture and cook until thick. Cool completely and transfer to a glass jar. Cover and store for up to 1 week. You can use it in casseroles, like a family favorite Green Bean Casserole, or turn into a mushroom sauce to pour over chicken or add chicken or vegetable stock and make a creamy mushroom soup.
I made sure that this homemade diy Condensed Cream of Mushroom Soup had a ton of flavor so I used 8 oz. of mushrooms . It is also accidentally gluten free since I didnt use flour but rather cornstarch. It is my secret ingredient to smooth and silky sauces. Flour can easily clump up and its quite impossible to get rid of them, even if you try to blend the mixture in your blender. Using cornstarch is so much better and easier.
The end result is creamy, thick and packed with flavor mixture that can be used in so many ways. Check out my links below for more DIY recipes.

Homemade Condensed Cream Of Mushroom Soup
I find it very hard to buy certain things pre-made. Like, it hurts. It feels wrong to purchase something thats full of strange, unpronounceable ingredients when it can so easily be made at home.
For many years I thought canned, condensed soup was one of those things that just had to be bought. Sometimes, foods are so processed that theyre very difficult to reproduce at home. And some are so labor-intensive that they arent worth it. But faced with using a can of soup that listed MSG as one of the ingredients, I decided to try making it myself.
You guys, its so easy! Granted, it will take more effort than pulling the lid off of a can, but theres just something satisfactory about making it yourself. Plus, you can control everything that goes into it.
Here are the simple ingredients youll need: mushrooms , garlic, onion, cream, chicken broth , flour, salt and pepper.
And I cant believe I almost left out butter!
First of all, chop up all your veggies. You want the mushrooms to be diced fairly small. Ive also chopped them using a food processor, but that makes them a little too fine for my taste.
Melt the butter in a skillet.
Add the mushrooms and onions. Sauté until tender, about 8 minutes.
Season to taste with salt and pepper.
Add the garlic and cook for 2 minutes.
Add the flour and cook for 2 more minutes.

As someone who often finds herself feeding an extra five or six people at dinnertime I appreciate anything that helps me stretch a meal. But if you look at the ingredients for most commercial soup you are most likely going to find that the soup is heavy on salt and fillers like modified food starch. Monosodium glutamate and soy protein concentrate just dont sound like food to me.
Points to RememberI love to grow mushrooms and I love to can so it only makes sense for me to make my own soup concentrate. Here are a few things to keep in mind.

Getting MushroomsYou can, of course, purchase your mushrooms from the market. I would wait until there is a good sale going on and stock up. You need two pounds of mushrooms for 7 pint jars of soup concentrate, and you process the pint jars in a pressure cooker/canner.
