What Herbs Are Used In Chicken Noodle Soup
In this soup Ive used dried rosemary and thyme, with some fresh minced parsley as a garnish. But some dried tarragon, or using fresh herbs would be great additions and substitutions as well. While not exactly herbs, weve also used the classic mirepoix or holy trinity of diced onions, carrots and celery. These vegetables are used very frequently to start off just about any soup by adding amazing flavor and aromas.
I also like to buy reduced sodium chicken broth, so I can control the amount of salt in the dish.
How To Make This Easy Homemade Chicken Noodle Soup
Heat oil in a large soup potor Dutch oven.
Add the diced carrots and celery and cook for about 3 or 4 minutes or until the vegetables begin to soften, stirring occasionally.
Stir in the salt and pepper.
Now stir in the noodles and cook for about 8 minutes.
One of the things that make this the best homemade chicken noodle soup is that I doubled the noodles for a more hearty meal.
Remove from the heat and allow the noodles to continue soaking up the liquid until the noodles are tender.

As you know, I LOVE SOUP! And what I love even more is soup that I can cook in the crockpot. Yes it takes longer, but Im a set-it and forget-it kinda gal.
After posting my 25 Comforting Crockpot Soups post, I had SEVERAL emails requesting a crockpot chicken noodle soup. Well, I listened, and here it is my friends!
What Can I Add To Soup For More Flavor
Our recipe sticks to classic ingredients and flavors, but that doesnt mean there arent things you can add to make it your own:
For a creamy chicken noodle soup, add 2 to 4 tablespoons of heavy cream, half-and-half or whole milk.
Add three to four lemon slices for a lemon chicken soup similar to this Lemony Chicken and Vegetable Soup.
Add three or four slices of lime, swap the parsley for fresh cilantro, and then add diced tomatoes and cubed avocado for Mexican-style chicken soup. You can even add diced corn tortillas as we do for this tortilla chicken soup.
Add a teaspoon of toasted sesame oil and a few dashes of fish sauce for an ultra-satisfying, umami-packed soup.
Swirl in fresh spinach or kale at the end of cooking for more of a vegetable-heavy soup.
Swap the noodles for potatoes, winter squash, rice, quinoa or grains. Add hearty veggies to the pot along with the onions and carrots. When it comes to rice and grains, add them already cooked.

If you already have chicken stock , you can make this chicken noodle soup in 30 minutes or less just start at step six.
Add chopped carrots and celery to the stock and bring to a simmer. Then add chopped chicken breast or thighs and bring to a simmer again. Then add dry noodles. When the noodles are done, add seasonings like parsley, salt, pepper, and thyme, and youre done!
Make Ahead And Freezing Instructions:
To make ahead: This soup is best made ahead of time when you are using homemade egg noodles, since they dont get soggy and overcooked like regular store bought noodles. If you wanted to use regular noodles, I recommend making the broth first, and then boiling it with the noodles, and adding the chicken, the day of serving.
To store: Store in an airtight container in the refrigerator for 4-5 days, depending on the freshness of the chicken used.
To freeze: Allow the soup to cool completely and store it in a freezer safe container for 2-3 months. Thaw overnight in the fridge, or over medium heat on the stove. If using store bought noodles I would suggest undercooking the noodles before freezing the soup, to avoid them getting soggy upon reheating.

How To Make This Good Old Fashioned Chicken Noodle Soup
Yes theres more steps than quick and easy chicken noodle soup recipes, but it is so worth it because this broth is something money cant buy!
Simmer a whole chicken with broth flavourings for 1.5 hours to 2 hours until the flesh is tender enough to shred without effort
Remove scum that floats to the surface once or twice
Remove the chicken and the carrot etc
Shred the chicken. Youll need just under half for this recipe, save the rest for other uses
Make it even healthier and the broth even clearer! Refrigerate the broth so the fat hardens on the surface, then scoop it off.
Sauté onion, garlic, carrot and celery slowly The slower, the better! The vegetables become sweeter with a more intense flavour
Add homemade broth and noodles. Once the noodles are almost cooked, toss the chicken back in just to heat up

NOTE: In the comments, you will see that a few people have reported their noodle disintegrating after adding them to the crockpot. I have no idea why this is happening, and have NEVER had that happen any of the times we have made this soup. BUT, I have only used No Yoke brand noodles. Other people have also reported success with No Yoke Noodles and Walmart Generic brand noodles. Weve made chicken soup for years and have tried it various ways. Weve even started from a whole chicken before.
Ill take a bowl of satisfying chicken soup any day, but this version is the one we circle back to. Its straight-forward and quick to make.
Its important to use good-quality chicken broth. While I wish we had homemade chicken broth in our freezer all the time, we dont. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since I know it usually has more of a backbone, I like to buy boxed bone broth .
In case you are wondering, we use Pacific Foods Bone Broth and also like the stock sold at Trader Joes.
Dont be afraid to season your soup. When it comes to soups, season early and check the seasoning often. Before we add the chicken thighs to the soup, we always check the seasoning level of the broth. If the flavor doesnt pop, add a bit more salt.
Another option is to use fish sauce. It may seem odd, but whenever were tasting something and its just missing that something something, a small dash of fish sauce fixes it. Fish sauce is a major ingredient in our Pho soup recipe.
