The most time consuming part about this recipe is the prep. Pulling rotisserie chicken, chopping vegetables, and grabbing spices. Once youve turned on the heat, it only takes 20 minutes to make. Its great for busy weeknights or those night where you dont feel like cooking but still want a homemade meal.

Can You Use Any Potatoes For Gnocchi
In my research, Ive found that most chefs and recipe creators call for using either Yukon Gold or Russet potatoes. The consensus seems to be that when you first start, you should use a Russet and then experiment from there. I do agree, that older, drier potatoes work the best because youre going to be boiling, kneading, cutting, and boiling again, so they need to be on the drier side to start with. Also the starch content is important, and Russets are very starchy potatoes.
New potatoes are already a more moist variety so Id say stay away from those and start with the Russet and go from there. If you go with a moist variety, youll have to add more flour when mixing the dough and more flour will make them dense like pasta instead of light and fluffy, which is what you want in a gnocchi.

What Kind Of Pre
For this recipe, I suggest you use boneless, skinless chicken thats already been cooked and diced because it makes this recipe come together more easily. To do this yourself, I recommend dicing the chicken before cooking it, as it will cook quicker that way. You can cook it in a little bit of olive oil until its just done. Add a little salt and pepper to it if you like.
Another option is to buy pre-shredded, cooked chicken at your grocery store. It tends to be more expensive, but can be worth it. The only drawbacks are that youre going to have shredded chicken instead of nice, little, bite-size cubes in your soup and sometimes I think that this kind of chicken tends to have a little bit of a chewier texture than when its been more recently cooked.

This creamy chicken gnocchi soup is thick and hearty. And the flavor is out of this world delicious.
The flour + milk mixture and the gnocchi help thicken the soup perfectly. It will continue to thicken as it cools, as well. Often, Ill make it, take it off the stove and let it cool for 10-15 minutes before we eat for maximum thick-creaminess.
It also keeps very well in a slow cooker if you need to make it ahead and keep it warm .

- Dice veggies small so theyll cook through in time.

This recipe is a copycat of Olive Garden’s famous chicken gnocchi soup. Not to brag, but this version might be even better. Gasp!
There’s a lot going on in this soup, but what makes it really special is the incredible flavor of the creamy broth. It’s seasoned with Italian seasoning and the chicken is cooked in it which gives it the best taste. We splurge and use real cream in this recipe, cause sometimes nothing else will do.
Swimming around in the tasty soup are a few veggies like carrots, onion, celery, and spinach. They add sweetness and a little fresh crunch.
And both the chicken and gnocchi are so tender eating them feels like a real treat.
Is Gnocchi A Pasta Or Potato
Gnocchi is a type of pasta, but instead of being made with flour, eggs, and water, its made with a dough from cooked, mashed potatoes, egg, and flour.
They term Gnocchi means lumps in Italian, and, well, they do look like lumps of pasta for sure. They only take a few minutes to cook, and when they do, they have a pillowy, light, fluffy texture. I can taste the potato in them just slightly, but Im maybe only because I know what they are made of.
Although they are not your typical pasta, they are lumped in together with the pastas both in the general cooking vernacular and in the grocery store. Though you can also find them in the refrigerated and frozen sections too, where youll find those types of premade pastas .
No matter which gnocchi you choose , I think youll agree nothing beats a good gnocchi in butter sauce, or gnocchi in cream sauce, or gnocchi in tomato sauceokay I think you get my point.

Recipe Tips And Notes
- Do NOT peak! Every time you remove the lid from your slow cooker, essential heat escapes, and youll need to add a few minutes to your overall cooking time to make up for it.
- Remember to only add the spinach and gnocchi for the final 30 minutes of cooking. Both ingredients will cook quicker than the rest of the soup.
- When it comes to the garlic, I always say that fresh is best. Skip the pre-minced stuff and make the most out of mincing fresh garlic cloves.
The best part is, this soup makes wonderful leftovers and actually reheats very well in the microwave!

Soften the vegetables and garlic in butter. Add the flour and cook for 2 minutes to remove the raw flour taste.
Add the chicken broth and half and half in splashes, stirring as you do so. Adding it too quickly can break the roux. Add the thyme and mustard powder.
Add the chicken and bring it to a gentle boil until cooked through, 10-15 minutes. Remove and dice, then add it back to the soup.
Let the soup simmer until desired consistency is obtained, it will continue to thicken. Add the gnocchi and simmer for about 5 minutes, .
Add spinach, red pepper flakes, and any salt/pepper to taste. Simmer until spinach is wilted, about 1 minute. Serve!

Ingredients To Make Gnocchi Soup:
This Olive Garden Copycat recipe has been on my list of soups to make for a few years now. I love all of Olive Gardens Soups but their Chicken Gnocchi soup is awesome. The best part is that it is so easy to make! It comes together in less than 20 minutes.
- Butter: Use the butter to make the roux.
- Olive oil: Add to the pan with the butter onion and celery and garlic.
- Onion: I keep frozen diced onion in my freezer so that I can easily add it to any dish.
- Celery: Diced celery gives this soup a great crunch and fresh flavor.
- Garlic cloves:Minced garlic adds a deep Italian flavor.
- All-purpose flour: The flour makes a roux which gives the soup its consistency.
- Half-and-half: The creaminess of this soup.
- Chicken broth: Add as much as you like depending on how thin you like your soup. For a thinner soup use more broth.
- Fresh thyme: Earthy and a little bit sweet, with a slightly minty
- Shredded carrots: I love the sweet flavor the carrots add!
- Spinach leaves: Chopped so that you dont have big pieces in your spoonful.
- Chicken breast: Diced and cooked chicken. Cut into pieces before cooking so it will cook quicker. Cook it in a little bit of olive oil until its just done. Add a little salt and pepper to it if you like.
- Potato gnocchi: Hint- find this on the pasta isle.
- Salt and pepper: To taste!
