Baked Chicken and Rice in Mushroom Soup ~ Easy Cooking

Here is what youll need! Youll be surprised how many ingredients you already have on hand.

  • Chicken: Chicken breasts or chicken thighs work. 2 boneless chicken breasts or ~4 small chicken thighs.
  • Olive oil: Used for sautéing the onion and browning the chicken.
  • Onion: Yellow or white preferred for this meal.
  • Mushrooms: White button mushrooms.
  • Cream of mushroom soup: I use a 10.5 oz. can you can also use cream of chicken.
  • Chicken broth: Chicken broth or vegetable broth. Ive tested it with both and its delicious either way!
  • Rice: Any long grain white rice Basmati or Jasmine. I have not tested with brown rice.
  • Seasonings: salt, pepper, thyme, garlic powder

How To Make One

Note: Youll need a large skillet or large frying pan for this recipe. Keep in mind it will need to hold all of the broth and rice so it needs to be deep, not shallow.

  • Cube thawed chicken breasts into small, bite-sized pieces.
  • Heat skillet on stove over medium-high heat. Add 1 Tbsp. olive oil and once hot, add in chicken pieces. Brown on each side, adding more olive oil if needed and stirring occasionally. Chicken wont cook all of the way, this is just to brown the chicken and get some nice color on each piece. Remove chicken from skillet and set aside on a plate.
  • Add remaining 1 Tbsp. olive oil in pan and sauté onions, mushrooms and garlic over medium heat. Season with salt, pepper, thyme and garlic powder. Stir and cook for ~5 minutes or until onions become translucent and mushrooms are cooked down.
  • Add the soup & browned chicken pieces in, stir. Add in rice, stir.
  • Lastly add in the broth and gently stir. Bring this to a simmer, then turn heat down to low, cover with a lid and cook for 30-40 minutes, or until rice is cooked and tender.
  • Serve with broccoli or a side salad yum! Easy chicken and rice casserole for the win.

    This dish is made with simple ingredients that are easy to find in any grocery store.

    • Chicken Pieces: I find this recipe works best with bone-in, skin-on chicken such as drumsticks and/or thighs. You can also use bone-in, skin-on chicken breasts. Boneless chicken does not work as well, as it may dry out before the rice is done cooking.
    • Rice: This recipe calls for long grain white rice. It will not set properly with minute rice. If you choose to use brown rice, youll need to add more water and possibly increase the cooking time.
    • Cream Soup: I use cream of chicken, cream of celery and cream of mushroom soups for maximum flavor. It is ok to use low sodium or light versions of the cream soups. You can also just use one or two types of soup if thats what you have on hand, so long as it still amounts to three cans.
    • Water: This ingredient is to hydrate the rice. I do not recommend substituting chicken broth because you could end up with an overly salty casserole.
    • Butter: I add butter to this dish to give it a little richness, it also helps to ensure the chicken will brown nicely.
    • Seasonings: The chicken is seasoned with a blend of salt, pepper and paprika.
    • Parsley: A little fresh chopped parsley adds extra flavor and a bright color to this dish.

    Helpful Products For Making Instant Pot Chicken Wild Rice Mushroom Soup

    Roasted Chicken, Mushroom and Wild Rice Soup Recipe  Homemaker
    • You can use skinless boneless chicken thighs in place of the boneless chicken breasts.
    • I used baby Portabellas mushrooms but you could, of course, use any sliced mushrooms.
    • I like to add cornstarch as a thickener for most of my soup recipes. It adds a little thickness to the soup broth. If you enjoy a clear soup broth you can skip that step.

    • Chicken if your chicken breasts are on the small side, leave them whole and use 4 of them. Chicken thighs would work if you prefer those.
    • Garlic powder I cant resist infusing a savory, garlicky taste
    • Italian seasoning its a blend of dried herbs like rosemary and sage that comes in a single jar in the spice aisle of your grocery store. So handy!
    • Pepper being generous with pepper really amps up the flavor
    • Condensed soup we chose mushroom for this bake. Cream of soups can be quite salty, so use a reduced-sodium variety if thats a consideration.
    • Mozzarella shredded mozza just pairs so well with baked chicken!

    How To Make The Chicken In The Instant Pot

  • In the Instant Pot add the canned soup, water, and chicken breasts. The Chicken can be thawed or frozen. The more frozen the chicken the longer the Instant Pot takes to get up to pressure. The cooking process does not start until it is at pressure and the lid can no longer move.
  • Put the lid on, set it to seal and set the timer for 15 minutes. Allow releasing of the pressure naturally, about another 10 minutes until the lid can be removed.
  • Next: Put the rice, water, salt & oil in a smaller pressure cooker set to the rice setting (or high pressure for 4 minutes. If you only have one Instant Pot no problem, just cook your rice on the stovetop like regular.
  • After the 10 minutes natural release, give the chicken a stir and serve over rice.

    But First You Should Roast Some Mushrooms

    Heres the thing about creamy soups, especially ones with rice, they lack texture. This is where the roasted mushrooms come in.

    I know this is an extra step, but I promise, its easy as can be and worth the extra effort. Roast the mushrooms with a good amount of butter, fresh rosemary, lemon, garlic, and a little salt. See simple as that.

    The butter browns in the oven and creates the most delicious, buttery, herby, slightly crisp mushroom. The perfect finishing touch to this creamy soup. I like to stir the mushrooms into the soups just before serving.

No. The recipe calls for cremini mushrooms because I like them and they are easy to get in my area. You can absolutely use a button mushroom, or anything that looks good at the store. No problem. Also, hot tip, if your grocery store has loose, bulk mushrooms, they are usually half the price per pound as their pre-packaged counterparts.

    How to Clean Mushrooms

    Dont submerge in or rinse mushrooms with water. They are little sponges and will get waterlogged. This will make them steam during cooking instead of browning. Instead, take a damp cloth or paper towel and wipe your mushrooms clean.

    Can You Freeze This Campbells Chicken And Rice

    This wont freeze very well due to texture issues with the rice. Its so fast to make and tastes so good fresh, theres no need to bother with freezing it!

    If you have a portion of leftovers that you want to freeze, allow this creamy chicken and rice to cool and put it in a well-sealed freezer container.
