Eat To Live (Day 22) – Dr. Fuhrman’s Famous Anti Cancer Soup

Serves 12

1 cup dried split peas

4 cups/1 L filtered water

4 large onions

4 large zucchinis or 8 small

3 medium leeks

leafy greens, broccoli or cauliflower

5 lbs./2.26 kg carrots

1 cup raw cashews

1 lb/454 g mushrooms

2 tsp granulated garlic powder

2 bay leaves

1- 1 1/2 tsp Herbamare or salt

Directions:

In a large 6 qt soup pot add 4 cups/1 L of water and the split peas and bring to a boil. Slice off the tops of the onions, shave off the roots and peel the outer skins and place them into the pot whole. Cover with a lid to start the steaming process. Once at a boil reduce heat to medium low.

Peel the zuchinnis, and place in the pot uncut. . Cut the bottom roots off the leeks and slice them up the side so each leaf can be thoroughly washed, because leeks have lots of dirt hidden inside. Cut off the top inch of the leeks and discard. Then place the entire leek into the pot and cover again.

How To Make Ahead And Freeze Cancer

This soup is perfect for making ahead and taking to a friend. If you want, just change the name to Immune-Boosting Soup if your friend has a cold. It has now been tested from fresh, reheated from the fridge as leftovers, and reheated after being frozen. It delicious and works great in all these situations!

If you want to deliver it to a friend as a fresh meal or freezer meal, you can deliver it in one of these freezer containers, including a freezer container with lid or mason jars . I love using mason jars, since the soup can be divided into single servings. Just be sure to leave at least 1 inch of headspace at the top if freezing.

The key to the complex flavor is to saute the aromatics to kick-start their flavor and then to season every step of the way.

Another tip is to chop all of the vegetables about the same size so they cook evenly and are bite-sized. Its actually a pet peeve of mine when vegetable soup contains pieces that are too big to enjoy in one bite. Its worth taking the time to chop them perfectly. Dr Fuhrman’s Famous Anti

Based on a recipe from Dr. Joel Fuhrman’s nutritarian handbook, Eat Right America. This is the updated version of another one posted on food.com I like this one better because it includes kale as well as adjustments to the other ingredients. Dr. Fuhrman says, “Juice carrots and celery in a juice extractor. Fresh juiced organic carrots are necessary to maximize the flavor of this soup”. I use both my Jack Lalanne juicer for the carrots and celery and my blender. The recipe says you can use a combo of peas/beans although I stick with the split peas because I love them so much. Since the resulting soup is not “pretty”, I garnished with a dollop of fat free plain yogurt and chopped parsley. Nutritional info per serving: calories 304 protein 14 g carbohydrate 52 g total fat 7 g saturated fat 1 g cholesterol 0 mg and sodium 135 mg.

This soup was Troy and Is introduction into Nutritarian plant-based eating back in 2011, and we couldnt believe how good it is! It has a depth of flavor from the fresh juices and multitude of vegetables, and its creamy, rich, and hearty. Its purposely designed to be foods to support the immune system , and this is just what many of us need, myself included. These are wonderfully immune-supporting foods all in one delicious, comforting bowl of soup. It takes some effort to make I like to make it on my day off and store it in small containers in the freezer, but its SO worth the effort.   • Add some garlic salt to your portion right before youre about to eat it, so as not to add too much sodium, but give you enough flavor that you will enjoy the soup

Fun Soup Freezing Tip

What I usually do is freeze soups in large, gallon-size freezer zipper plastic bags. Then I lay them flat on a cookie sheet and pop them in the freezer. Once theyre frozen, I remove the cookie sheet and pile them on top of each other for super easy freezer storage that takes up an efficient amount of space.

Or you can just save portions of this in the fridge and take it as you need it. I generally can get about a week of storage in the fridge with Nutritarian soups such as this one, because I dont have to worry about any animal products spoiling. Vegan ingredients tend to keep much longer.

“Secrets to Healthy Cooking” Dr. Fuhrman’s Anti-Cancer Soup

I finally made Dr. Fuhrmans Anticancer Soup this past weekend. I was expecting a difficult experience, but honestly, it just wasnt that hard.

Using bottled organic carrot juice makes it cheaper and easier than juicing 5 pounds of carrots, but I found out that juicing the celery was pretty darned quick and easy. I dont know why I am so scared of my juicer. I also like using frozen leeks from Trader Joes instead of dealing with washing and chopping fresh leeks .

On the recommendation of Tami from Nutmeg Notebook, I used all of the cashews that the recipe called for . I was glad I did, because in the end, I had 15 servings of the soup , not 10 servings like the recipe had indicated. I did use quite a bit more chopped mushroom than the recipe called for , which was perfect for this volume of soup.

I know that the soup looks kinda funny. But dont let that bother youthis stuff is magical. Its very, very similar to a soup that I have made countless times, which I call HGKs Energy Soup. Mine was inspired by soup recipes by Betheny Frankel from her book Naturally Thin and also by a soup from the PeerTrainer website. You can get my recipe here, its easier and faster and pretty comparable.

Dr Fuhrman Black Forest Cream Of Mushroom Soup Original Recipe Recipe

1/2 cup dried mixed mushrooms
2 pounds mixed fresh mushrooms , sliced 1/4″ thick
2 cloves garlic, minced or pressed
2 teaspoons herb de Provence
2 carrots, coarsely chopped
3 cups cauliflower florets, cut into small pieces
1 cup chopped organic celery
3 leeks, cut into 1/2 inch rounds
4 tablespoons Dr. Fuhrman’s VegiZest, or other no salt seasoning
5 cups carrot juice
1 tablespoon chopped fresh thyme
2 teaspoons chopped fresh rosemary
2 cans white beans, northern, navy, or cannellini
1 5-oz bag organic baby spinach
1/4 cup chopped fresh parsley

Steps:

  • If using dried mushrooms, soak them in hot water to cover for 30 minutes and cut in pieces. Heat 1/8 cup water in large saute pan. Water sauté the fresh and dried mushrooms, garlic and dried herbs until tender and fragrant. Set aside. In large soup pot, bring carrot juice, water, carrots, cauliflower, celery, leeks and VegiZest to a boil. Reduce heat and simmer until vegetables are tender, about 30 minutes. Puree 1/2 vegetable soup in high powered blender, adding cashews, lemon juice, and fresh herbs. Blend until smooth and creamy. Add pureed soup back to soup pot along with mushrooms, beans, and spinach. Heat until spinach is wilted. Serve garnished with fresh chopped parsley.

Black Forest Cream Of Mushroom Soup

Dr Fuhrman Anti Cancer Soup Recipe
2 pounds mixed fresh mushrooms sliced 1/4 ” thick
2 cloves garlic, minced or pressed
2 teaspoons herbes de Provence
5 cups carrot juice
3 cups unsweetened hemp, soy or almond milk, divided
2 carrots, coarsely chopped
3/4 cup fresh or frozen corn kernels
1 cup chopped celery
3 leeks, cut in 1/2-inch-thick rounds
1/4 cup Dr. Fuhrman’s VegiZest or other no-salt seasoning
1/4 cup raw cashews
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh thyme
2 teaspoons chopped fresh rosemary
3 cups cooked white beans or 2 cans no salt added or low sodium, rinsed and drained
5 ounces baby spinach
1/4 cup chopped fresh parsley, for garnish

Steps:

  • Heat the water in a large saute pan. Water saute the mushrooms, garlic and herbes de Provence for about 5 minutes, or until tender, adding more water if necessary to prevent from sticking. Set aside. In a large soup pot, bring the carrot juice, 2 1/2 cups of the milk, carrots, onion, corn, celery, leeks and VegiZest to a boil. Reduce the heat and simmer until the vegetables are tender, about 30 minutes. In a food processor or high powered blender, puree the cashews and remaining 1/2 cup milk. Add half of the soup liquid and vegetables, the lemon juice, thyme, and rosemary. Blend until smooth and creamy. Return the pureed soup mixture to the pot. Add the beans, spinach, and sauteed mushrooms. Heat until the spinach is wilted. Garnish with parsley.
