This week Im making another one of our favorite winter time foods: SOUP! The perfect meal in a bowl, this one has plenty of vegetables and fresh, whole-food ingredients. Loaded Baked Potato Soup is one of my favorite soups for a crowd. Its easy to make in a big batch and potatoes are a crowd-pleaser in just about any form. Who can refuse rustic comfort food like a loaded baked potato? Im taking all the ingredients and flavors of a loaded baked potato and making a rich, creamy soup perfect for serving your gang for the Big Game festivities coming up. Soup for the bowl on February 5th! I think thats a perfect theme for game day. No matter who youre rooting for, this soup will be a winner!

When Im serving soup for a crowd I like to use smaller portions. These little cups are a great size to have a taste or two and not feel like youre over doing it. Lets be honest, most of us are trying to eat wisely. When the portions are small, tasting everything seems less damaging.

You can spend a lot of time making a traditional tortilla soup, but why would you when this quick and easy version tastes so good? There are chunks of chicken in there to make it hearty and the chips soften and thicken the soup with another layer of corny flavor. For me its all about the garnishes of avocado, cheese and sour cream. Its a party in a bowl.

Its that easy: Fire roasted tomatoes really add extra oomph to this dish so if you can find them dont hesitate to buy a few extra cans and try them out in other recipes that call for diced tomatoes as well.

  • Salt and pepper

Instructions

  • Bring a large pot of water to a rolling boil. Add 1 tsp. salt and the potatoes. Cook until fork tender.
  • Drain potatoes in a colander and return to the pot. Mash until smooth.
  • Add half & half and 6 tablespoons of butter. Season with salt and pepper. Set aside and keep warm.
  • Add sliced cabbage and kale to a large skillet with olive oil. Sauté until wilted.
  • Mix the potato, cabbage and kale together. Stir in the scallions. Season with salt and pepper.
  • To serve, scoop potatoes into a serving bowl and make a well in the center. Add the remaining butter and garnish with a few pieces of chopped scallion.

  • Dont forget the staples. Always have onions, carrots, celery, garlic, lemon, lime, stock or broth, canned beans, canned tomatoes, dried pasta and a fresh herb like parsley on hand and you can always make soup.
  • Think about ingredients that you can sub out and into soups. There are very few rules and as long as you think about how long it will take to make a vegetable tender, go for it and try something you have on hand or that looks really good at the store. Its easy to turn potato soup into broccoli soup or to add different types of canned beans or meats. If you can boil it, chances are it will be good in soup.
  • Soup can go from good to sublime with the addition of salt, pepper, nutmeg, cayenne, acid and fat.
  • Taste frequently. Soup changes as it cooks, so add a little salt at the beginning to get things going and then taste every now and then to adjust. When the soup is done, taste it critically and adjust with more salt, pepper, acid, spice or fat
