Slow Cooker Bone Broth
Bone broth is a staple of my familys diet. As with healthy fats, heirloom vegetables, grass-fed meats and a good old-fashioned cod liver oil, we consume a lot of bone broths usually aiming for one quart per person per day, at the recommendation of our nutritionist. Broth, you see, is a nutritional powerhouse. It is extraordinarily rich in easy-to-assimilate minerals, amino acids and goodies like glucosamine chondroitin. Its gelatin helps to heal the gut, which is why it plays such an integral role in the GAPS diet, and it provides powerful medicine particularly in combating colds and flus.
And, you did read that right: we do aim for one quart per adult per day . Thats a lot of broth. Let me do the math for you. Thats between two and three quarts per day, averaging to about four and a half gallons of broth each week for our family. Yes, as you might imagine, soups and stews are a big part of our day, more so in the winter than in the summer. When I serve breakfast, I serve it with a mug of broth and another mug of broth sits at my desk as I work.
Its a beautiful thing, really, and I credit good broth, cod liver oil and of fermented foods with the resilient immunity my family enjoys each flu season.

Dont throw the bones away after making the first batch of broth. Use them again to make another batch. The broth will be even milkier the second time around. I usually stop after the third batch.
Its common to use aromatic vegetables, such as onion, garlic, and the white parts of large scallions. However, only using the bones will give you a stronger beefy flavor. Its a matter of personal taste. Try both ways, and decide which way you like better.

Learning how to make and preserving bone broth is a skill every homesteader should have. Homemade bone broth is super easy and frugal. It can be made easily in a crockpot from any type of meat bone such as beef, chicken, ham, etc. Homemade broth also results in a more nutritious and mineral-rich end result with a deep rich flavor.

So How Do We Make Enough Broth
So if youre wondering just how I manage working at home full time, homeschooling our 6-year old with making four and a half gallons of bone broth each week, Ill tell you. I slow cook it. I call it perpetual soup. You see, my six-quart slowcooker is my cauldron. That is, it is always on bubbling away and ready to nourish my family with the bounty of the bones that stew away every hours of every day.
Once a week, I place the frame of a roast chicken into the slow cooker, cover it with filtered water , toss in a few bay leaves, black peppercorns and vegetable scraps, turn it on and call it good. As I pull broth from the slow cooker, I filter it through a reusable coffee filter which helps to strain out any floating herbs, chicken skin or pieces of bone and results in a beautiful clear broth. As I remove broth, I add water and continue the process throughout the week ensuring that by the end of the week every bit of goodness has been pulled from that chicken frame.
And, in case youre worried about the cost of keeping your slow cooker on twenty-four hours a day, every day of the week, the estimated cost of running your slow cooker is about $0.01 to $0.03 per hour for a total cost of $1.68 to $5.04 for the week. Bone Broth And Gelatin
Bone broth gels because collagen, a structural protein found in connective tissue on meaty and gristly bones, breaks down with prolonged cooking, dissolving into the cooking medium. When the resulting broth cools, the proteins realign themselves and produce a fine, bouncy gelatin.
A good gel is a sign of a good broth, because it signifies that the broth is particularly rich in protein and because that gel, when it reliquifies with heat, gives broth body and an appealing mouthfeel.

Roast For The Best Flavor
Roasting adds an extra depth of flavor and richness to the soup, plus it makes a beautiful dark-colored broth. Also, a broth made with a lot of bare bones, without much meat, can sometimes have a bit of a metallic or sour flavor, and roasting the bones helps prevent this flavor.
I usually do this in the oven, rather than on the stovetop, so I can do the entire batch at once. If there are a lot of caramelized bits on the pan after roasting, I deglaze it with a splash of water on the stovetop and pour the brown bits in with the cooking liquid.
Ways To Preserve Bone Broth And Stock
- Refrigerator In the fridge for up to six months by Diana at My Humble Kitchen I love this method because it doesn’t require any canning or freezing. But you have to make sure your broth has enough of a certain thing to make this safe and to work.
- Dehydrating It’s a liquid, so this seems a little weird, but you can totally dehydrate it at home for a bone broth powder.
- Homemade Bouillon Yes, this is a kind of genius and I don’t know why I didn’t think of it on my own. You cook down your stock to make bouillon and you can also freeze it in cubes, making it much quicker to thaw. Here’s how to make your own homemade bouillon cubes.
- Freezing You can freeze your broth, but I’m not always the best at planning ahead and sometimes forget I need to thaw it out until the moment I need it. That’s really inconvenient so I prefer the fridge or pressure canning, but if you’re a bit better at planning than me, the freezer works as well. Just remember, it’s a liquid and though Mason jars are fine to freeze, the stock will expand and sometimes jars crack when thawing.
- Pressure Canning Canning broth and stock is something you must do in a pressure canner to be safe. You also need to make sure you skim off the fat before canning. The fat is thick and the heat can’t penetrate through it as well to make sure it’s heated high enough to be safe. Remove the insert and allow the broth to cool enough so that you can taste it without burning your tongue. Add sea salt to taste or leave it unsalted for use in recipes and as a cooking liquid for potatoes, vegetables, or rice.
Strain the broth into a large bowl with a pouring spout to separate the liquid from the solids. Transfer broth to glass jars with lids leaving the lids off until the broth has cooled enough to be refrigerated usually 1 1/2 2 hours depending on the temperature of your kitchen.

Bone Broths Should Simmer Long Enough But Not Too Long
To make deeply flavorful broth thats also rich in protein and other nutrients, you should simmer broths over low heat for an extended period of time. Traditionally, this is a long and slow process, although pressure cooking also creates a flavorful, protein-rich bone broth.
This long and slow process allows for the bones and connective tissue to fully release their nutrients, giving you a lusciously rich bone broth thats full of collagen – a matrix of proteins that supports bone, joint, gut and skin health while while also supporting optimal blood sugar regulation.
Since collagen is best extracted by long, slow cooking, look for brands that replicate the process of making a traditional home-cooked bone broth. The bone broth brands that do prepare their broths the traditional way, though long slow cooking, will usually list how long they simmer bones on their website or on their packaging.
Bone broths should cook long enough to release plenty of protein, but not so long that they begin to taste dull and overcooked. Simmering bone broths too long can also break down their gelatin, and dramatically increase its glutamine content. Glutamine is the third most abundant amino acid in bone broth. It helps your body build new proteins, and it also supports gut and brain health however, if youre particularly sensitive to MSG , foods that are very rich in glutamine might exacerbate your symptoms.

Bone broth has been the darling of the health and wellness world for a few years now, with gurus touting the multiple benefits of expensive designer bone broths, like detox, gut healing, relieves arthritis, youthful skin, energy boosting, sleep better, immune support, improve your memory, blah, blah, blah. Its like every Dr. Oz health claim combined into one.
In reality, no one food is a cure-all, and all of these claims certainly are not true. Why? Because science. There is no scientific evidence that bone broth can do most of these things. BUT! Broth is a highly useful ingredient in the kitchen and adds tons of flavor to anything you cook, so I always keep some around. But I’m not about the fancy, expensive options that line store shelves, so I make my own, and you can too!

How To Make It
Preheat oven to 400°F. Place chicken and beef bones, carrots, onions, and garlic in a single layer on a large rimmed baking sheet. Bake in preheated oven until browned, about 1 hour.
Transfer bone mixture and pan juices to a 6-quart programmable electric pressure cooker. Add water, celery, tomatoes, peppercorns, thyme sprigs, lemon peel pieces, and bay leaf. Close and lock lid of cooker turn pressure release valve to sealing position. Program cooker to cook on Manual on High Pressure for 1 hour. Turn pressure valve to the venting position to quickly release pressure from cooker until float valve drops. Carefully remove lid.
Pour broth through a fine wire-mesh strainer into a bowl discard solids. Using a ladle, skim fat from top of broth discard. Stir in salt, if desired, and serve hot.
