Newks Express Cafe Debuts Fall Soup Schedule
Jackson, MS Fall is in the air at Newks Express Café, which launched its new seasonal soup schedule Oct. 1. The new schedule includes the following soup options: Broccoli Cheese, Chicken Noodle, Tomato Basil, White Bean Chicken Chili, Lobster Bisque, Loaded Potato, Newks Signature Chili, Lobster Crab Bisque, Mushroom Bisque and Ultimate Crab.
Monday and Wednesday feature Broccoli Cheese, Chicken Noodle and White Bean Chicken Chili while there is also Tomato Basil on Monday and Ultimate Crab on Wednesday. Tuesday and Thursday offerings are Loaded Potato, Newks Signature Chili and Mushroom Bisque. There is also Lobster Bisque on Tuesday and Chicken Tortilla on Thursday. Friday features Lobster Crab Bisque, Tomato Basil, Broccoli Cheese and White Bean Chicken Chili. Loaded Potato, Ultimate Crab, Newks Signature Chili and Chicken Noodle are the Saturday options, and the Sunday soups are Lobster Bisque, Tomato Basil, Chicken Tortilla and Mushroom Bisque.
The soups at Newks are all made from scratch and have acquired quite a loyal fan base over the years, said Chris Newcomb, founder, president and CEO of Newks. We like to switch the schedule and offerings as the seasons change. This fall we have brought back some fan favorites for the cooler weather.

Cityeats: Introducing Newks Eatery
Newks Eatery is one of the latest eateries to hit Fayetteville, and their business is already off the charts. They are located on the outside of Cross Creek Mall, near Belk and LOFT, and the latest renovations are beautiful. Newks Eatery is a fast, casual dining experience with many choices, all made with the freshest ingredients, daily. You might have heard of em our store is the 62nd store to open, and there are already a hot spot for office and birthday parties. A few were taking place at the larger community style tables in the bright, spacious dining area, the day I visited.
Southern hospitality is at its finest at Newks. That is not surprising since they hail from the south. In fact, many of their daily soup specialties are tested and created in test kitchens in Jackson, Mississippi. Today I learned that soup is best served at its optimal temperature between 165 and 170 degrees.
The Director of Operations, Dustin Oehler, proudly shared the ins and outs of what goes on behind the scenes. Taking the tour of their kitchen, where all the magic happens by a team of 65 employees, was amazing. Fresh fruit, veggies and salad were being chopped and divided up for the daily portions. Racks of fresh grilled chicken breasts, steak and portobello mushrooms were cooling and waiting to be chopped and sliced for fresh salads or oven toasted sandwiches.

Whos In The Newks Kitchen
Luke McFarland, catering team lead, has been with the company for a little over five years. While working his way up in the company, his favorite part of the job has been meeting a variety of people within and out of the company. When working catering orders, his typical scenery within a day consists of doctors offices, athletic and university events. Every year he caters the scholarship section for Auburn University basketball games. General manager, Tyler Nelms, tells FetchMe he believes Auburn University is what makes this location stand out.
During an interview Nelms says, We do a lot with the university. We are more uniform for what the university or city is doing. With a location close to campus, college pride fuels both business and productivity. Typical clientele consists of college students and families, with both dine-in and to go orders. While being with the company for a year and a half, his favorite part of the job is the people he works with. The environment made with good coworkers is what made him stay with Newks.

This chicken tortilla soup is as good as any I’ve had in a restaurant. I get so many compliments when I serve it: you will, too. -Laura Black Johnson, Largo, Florida

| 1 can chopped green chilies |
| 2 garlic cloves, minced |
| 1 jalapeno pepper, seeded and chopped |
| 1 teaspoon ground cumin |
| 1 can tomato sauce |
| 1 can diced tomatoes with garlic and onion, undrained |
| 5 cups reduced-sodium chicken broth |
| 1 rotisserie chicken, shredded, skin removed |
| 1/4 cup minced fresh cilantro |
| 2 teaspoons lime juice |
| Shredded Monterey Jack or cheddar cheese |
Steps:
- In a Dutch oven, heat oil over medium heat saute onion until tender, about 5 minutes. Add chilies, garlic, jalapeno and cumin cook 1 minute. Stir in tomato sauce, tomatoes and broth. Bring to a boil reduce heat. Stir in chicken., Simmer, uncovered, 10 minutes. Add cilantro, lime juice, salt and pepper. Top servings with chips and cheese., Freeze option: Before adding chips and cheese, cool soup freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a large saucepan over medium-low heat, stirring occasionally and adding a little broth or water if necessary. Add chips and cheese before serving.

This is the closest I have managed to copying the Tomato Basil soup at La Madeline. This is the best soup for cold winter nights, and I have yet to meet anyone who did not like it.

| 4 cups whole canned tomatoes |
| 4 cups tomato juice, & broth mix of |
| 8 basil leaves, chopped finely or 1 tablespoon dried basil |
| 1 cup cream |
| 8 tablespoons sweet unsalted butter |
| 1/4 teaspoon salt |
Steps:
- Combine tomatoes, tomato juice and broth in a saucepan and simmer for 30 minutes.
- Puree with basil in the blender. Make sure that this is smooth – I always strain it.
- Return to saucepan. Add cream and butter while stirring over low heat.
- Serve and enjoy!

The Scoop Behind The Counter
Game Day Delivery
As catering team leader, McFarland will begin his day by checking the order status. When there are orders he will put together the meals before the store opens, then open his assigned station in the kitchen. Depending on the time of the order, he will continue to work in his station or go deliver a catering order. One of his most memorable delivery days was when he had to deliver to Auburn Universitys press box area on a game day. Early in the afternoon, he was forgotten about! Him and his 600 boxes of food were sitting outside the stadium because they were missing one crucial piece of information, the pass to get into the press box. Once they gain access, it took the catering team nearly an hour to carry the order up to the press box.
Newks catering team thought they were done for the day, and when trying to leave Tiger Walk starts. Tiger walk is a game day tradition where the team walks from the Athletics complex to the Jordan-Hare stadium. Just to get out of the parking deck took another hour! Very quickly this thirty minute delivery tacked on two hours, talk about travel time. Nonetheless, the thrill of being apart of game day and witnessing the Auburn tradition made this delivery stand out.
