How To Make Butternut Squash Sausage Soup
In a large pot, brown the sausage with the onion in butter, breaking it up as it cooks. Once browned, add the garlic and fennel seeds and cook for 1 minute, until fragrant.
Scoop out the butternut squash pulp and add it to the pot, along with chicken broth, salt and pepper. Stir and use a masher to break up bigger pieces of squash. If the squash wasnt super tender, it may take some time cooking in the broth to break down more.
Simmer over medium-low heat for about 30 minutes. Dont boil it, just simmer. You dont want to evaporate all of the broth. Cover it if you like. A lot of flavor will develop as its cooking, so dont skimp on time. It needs the full 30 minutes.
If you like a creamy soup, add the cream just before serving. I dont think the soup needs the cream, so I often leave it out. Its up to you. You can also add a dollop of sour cream before serving.

How To Make Butternut Squash Vegan
If youre wanting to make butternut squash soup vegan, the good news it its very easy to do. This bisque recipe is practically vegan, except for the cream that I add at the end.
Instead, to make it vegan, simply replace the cream with unsweetened almond milk or full fat coconut milk. The almond milk will not make it quite as thick as the coconut milk, but both are good options.

What Is Butternut Squash Bisque
First things first: what the heck is a bisque, anyways? Am I right? Well, for the most part, a bisque usually means its a rich, creamy soup that typically is made with shellfish, most commonly lobster < YUM.
So, is there lobster in this roasted butternut squash recipe?? No, sorry. I use the title of bisque to indicate that its much thicker than your typical soup, meaning there isnt a broth to the soup, its a thickwell.bisque-like texture. Feel me?
What really makes this soup a bisque is adding in a cream at the end to finish it and make it even creamier. Hopefully, that all makes sense.
How To Prepare Butternut Squash
Some people think that cooking butternut squash takes forever. But trust me, it’s really not true.
Preparing butternut squash is not difficult as it seems. I like to use a vegetable peeler to peel off the skin, and using a sharp knife, cut it into chunks .
Butternut squash skin is quite tough and can be difficult to peel off, so you can pop it in the microwave for 2-3 minutes to help it soften, then proceed by peeling it off and cutting it into chunks.
My tip for cooking quick butternut squash is to cube it into little chunks, so it won’t take more than 15 minutes to soften.
If you have a little more time, baking butternut squash in the oven for a roasted butternut squash soup version, it’s also a super tasty option.
Roasted squash has deeply sweet flavour and a lovely caramelized note, definitely delicious!

Can This Butternut Squash Bisque Be Frozen
If youre wanting to freeze this soup to enjoy at a later time, the good news is it freezes very well. Hooray! Here are some tips for how to freeze it like a pro:
- Cool It Down First: Putting hot soup right into the freezer can thaw your already-frozen food by bringing up the temperature. Make sure to allow your soup to come closer to room temperature before placing into the freezer. You can do this by placing it in the fridge or dividing it into smaller portions which will cool down quicker.
- Portion It Out Before Freezing: Yes, soup is made in a large batch, but it doesnt have to be frozen that way. Turn your soup into convenient grab-and-go meals by freezing it in individual servings. I use these quart-size freezer bags or freezer-safe glass containers to freeze soups. Keep in mind the soup will expand as it freezes so allow for space when freezing.
- Hold the Dairy: Dairy tends to separate and become grainy when frozen and reheated. If you can leave it out of the soup ahead of time, its best. To remember how much to add when its time to reheat, you can write on the bag ahead of time. You can easily follow all the steps of this recipe and then add the dairy once its time to reheat.
- Freeze Flat First: If using a freezer bag to store your soup, freeze flat on a sheet pan and then stack the frozen, flat soups to save space.

Butternut squash soup will alternatively keep in the refrigerator for up to 5 days. This is a good preservation option for anyone that only needs to keep the soup for a few days. Regardless of which preservation method you choose freezing or refrigeration you must be careful not to leave your butternut squash soup sitting out at room temperature for too long.
Because it is a perishable food, butternut squash soup can only sit out at room temperature for 2 hours. After 2 hours, the soup will have to be thrown away. The reason for this is that bacteria growth is rapid at room temperature.
